EASY BLUEBERRY COBBLER
This is the recipe my Grandma used to make her blueberry cobbler. Hope you enjoy it as much as I do. Serve with ice cream!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Place butter in an 8-inch square baking dish.
- Melt butter in the preheating oven, about 5 minutes. Remove from oven.
- Mix flour, sugar, and milk in a bowl until combined; pour batter over melted butter. Scatter blueberries over batter.
- Bake in preheated oven until a toothpick inserted into the center comes out clean, about 1 hour.

MOM CANTEY'S FRUIT COBBLER
This is the winner for Emerl's "comfort for the coast" contest. I'm posting it so I know where to find it when I decide to try it.

Steps:
- Directions for Filling:.
- Prepare fruit. Put prepared fruit into 8" x 8" baking dish. Combine sugar and cornstarch. Sprinkle over fruit.
- Directions for Crust:.
- In a medium bowl, mix butter and sugar. In a seperate small bowl, crack the egg into it and beat it slightly. Stir the egg into the butter and sugar mixture. Gradually add flour and mix well. The mixture will have a consistency between that of heavy cake batter and light biscuit dough. Drop spoonfuls on top of fruit. The topping will spread out as it cooks. Bake at 325 degrees until light brown and the topping doesn't shake - usually 45-50 minutes. Test the same as you would a cake. Straw should come out clean. When doubled this recipe works well in a 9x13 baking dish. It will take 1 1/2 to 2 hours to bake. Test at 1 hour and 45 minutes.
EASY BATTER FRUIT COBBLER
Short of serving store-bought ice cream, you won't find a simpler, more delicious dessert than this fruit cobbler. Use any juicy summer fruit: peaches, nectarines, blueberries, blackberries, strawberries, raspberries. And if you use frozen berries, this dessert can be assembled in less than 10 minutes.

- Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
- Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.
- Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add milk; whisk to form a smooth batter. Pour batter into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tb. of sugar.
- Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with a dollop of whipped cream or a small scoop of vanilla ice cream, if desired.

EASIEST EVER FRUIT COBBLER
This is the quickest, easiest and best ever cobbler versatile enough for any canned fruit. We like it best with peaches. Serve warm. Best topped with vanilla ice cream!

- Preheat oven to 400 degrees F (200 degrees C). Grease a 2-quart baking dish.
- Stir together peaches and juice with melted butter. Pour into prepared pan. In a small bowl mix flour, sugar and salt. Stir in milk. Pour mixture over peaches.
- Bake on bottom rack of preheated oven 15 minutes, or until lightly browned, then move to top rack for 20 minutes more. Serve warm.

MAMA'S FRUIT COBBLER
Fast and easy. Very unusual topping made with bread- but you can't tell! Use whatever fruit you would like. My family says this is THE best cobbler EVER! I like it bc it is made with things that I always have on hand and can be thrown together in minutes yet it looks pretty enough to serve company.

Steps:
- Mix first 4 ingredients together and set aside.
- Place drained fruit in a buttered 8x8 pan and top with bread strips.
- Pour sugar mixture over bread and fruit and sprinkle with cinnamon if desired.
- Bake at 350 degrees for 35-45 minutes or until golden brown.
- Great topped with ice cream or whipped cream on top.
- Note: I dont usually measure the fruit, I just fill the bottom of the pan. Frozen fruit that has been partially defrosted works great as does soft fresh fruit- harder fruits such as apples or pears should be precooked until softened for best results. Drained canned fruit works great for this too. One large can (29 oz) is a perfect amount.

MOM'S EASY PEACH COBBLER
This is a cobbler with a quick batter baked on top. As a kid I loved this dessert, especially with ice cream.

- 1. Mix 1 cup sugar, cinnamon, and peaches. Set aside. Melt butter in a 2 quart baking dish. In a medium bowl combine remaining ingredients and mix well to make a runny batter. Pour over butter in baking dish. Using a slotted spoon to drain peaches, top baking dish ingredients evenly with peaches. Bake 50-55 minutes at 350 degrees. Serve warm with ice cream or cold with whipped topping.
