Steps:
- Preheat oven to 200ðC/400ðF/Gas 6. Lightly dust a flat baking tray with flour.
- Sieve the flour, baking powder and salt into a mixing bowl. Add the sugar and mix well.
- Rub the margarine or butter into the dry ingredients until mixture resembles breadcrumbs. Add the sultanas or raisins and mix through.
- Finally, add the egg and sufficient milk to make a soft dough, not too wet or sticky! Turn onto a lightly floured board and gently knead, just enough to bring the dough together.
- Transfer to the prepared baking tray and shape into a round 1 1/2â deep. Cut a cross on top and bake for about 40 minutes until golden brown.

- Preheat the oven to 325 degrees. In a medium bowl, sift together the flour, baking powder, and salt. Set aside. Butter a 9-by-5-inch loaf pan; set aside.
- In a small saucepan, heat the cream over medium heat. Stir in molasses. In a medium bowl, cream the butter until light and fluffy. Gradually add the sugar. Beat in the eggs, one at a time, beating to combine after each addition. Stir in the cream mixture, then the currants. Add the dry ingredients and beat to combine.
- Pour into prepared pan, and bake until a knife inserted in the center comes out clean, about 1 hour 15 minutes.
MOM'S POUND CAKE
A sweet, dense pound cake with a nice orange flavor. Ice with your favorite chocolate or cream cheese icing.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan.
- In a large bowl, cream together the butter and confectioners' sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the orange juice, vanilla and salt. Beat in the flour. Pour batter into prepared pan.
- Bake in the preheated oven for 70 to 80 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

CURRANT TEA CAKES
Came across these while looking for a tea biscuit recipe in all of my cookbooks. Not exactly what I was looking for, but very good and easy.

Steps:
- Cream butter, lemon peel and lemon juice until light.
- Add sugar and cream until light and fluffy.
- Add eggs and blend well.
- In another bowl, mix flour and salt; gradually add to creamed mixture, beating well until blended.
- Stir in currants.
- Drop by teaspoonsful onto greased and floured baking sheet.
- Bake at 350* for 10 minutes or until set.
- Remove to a wire rack to cool.

- Grease and flour a 9 x 5-inch loaf pan. Set aside.
- Preheat oven to 325 degrees F.
- In a large bowl, cream together the butter and sugar. Add the eggs, one at a time, beating well after each addition. Add the lemon zest and orange zest. Mix well.
- Sift together 2 cups of flour, baking powder, cinnamon and salt. Gradually add the flour mixture to the egg mixture.
- Toss the currants with the remaining 1 tablespoon of flour. Fold the currants into the batter.
- Transfer the batter to the prepared loaf pan. Bake for 1 hour, 20 minutes - 1 hour, 30 minutes or until a toothpick inserted in the center comes out clean. Tent with foil during the final 30 minutes if the top of the cake starts to get too brown while it's baking.
- Cool in the pan for 10 minutes, and then transfer to a wire rack to finish cooling. Slice thinly and serve!

MOM'S FRUITCAKE
This is the fruitcake my mother made from the time I was a little girl. It isn't full of the citrus fruits, and I've never met anyone who didn't like it. Originally submitted to CakeRecipe.com. You can use fruit juice instead of the brandy, if you prefer.

- Pour boiling water over raisins and currants to cover. Let steam for 5 minutes, then drain. In a very large bowl combine currants, raisins, gum drops, candied cherries, pitted dates, jelly, spices, and brandy wine or fruit juice. Stir to blend. Cover and let stand overnight.
- Preheat oven to 275 degrees F (135 degrees C). Grease three 8x4 inch loaf pans.
- Cream the butter and the sugar together until light and creamy. Add the eggs one at a time, mixing well after each one. Stir in the vanilla.
- Sift the flour and baking soda together.
- Add the flour mixture alternately with the fruit mixture to the creamed mixture. Pour evenly into three loaf pans.
- Bake at 275 degrees F (135 degrees C) for 2-1/4 to 3 hours or until a toothpick inserted in the center of the loaves comes out clean.

MY MOM'S LIGHT CHRISTMAS CAKE
I don't think I ever saws my Mom make a cake from a mix; she was a superb baker and all around cook, but lovingly remembered for her wonderful Christmas creations (let alone Easter!) amongst which is this rich and lovely Christmas Cake, that I can share with you. In attempting this one, you need remember that it was "always on a budget", so the cherries, peel, etc are not the ones packed in expensive syrupy fluid, but rather the cheaper "candied" ones, often bought in today's "Bulk Barn"... Mom never advocated drinking, but using white rum or brandy in place of the pineapple juice was not unusual, I just can't imagine her writing that out for dissemination in the family reunion cookbook I'm pulling this up from... Where "fruit" is mentioned as an ingredient, most often this meant currants, in semi-dried form, but I'll go out on a limb and suggest chopped dried apricots would work well, too...(remember, this is a "heritage" recipe, Mom was into her 20's in the Dirty Thirties, when you worked from the cheapest ingredients, and there weren't a lot of choices!)

- Grease two 9 inch loaf pans with butter and set aside. In a blender or food processor, combine raisins, prunes, currants, cherries, and wine. Blend until just combined; the mixture should be just a little lumpy. Set aside to let soak for at least an hour.
- Once the fruits have soaked for at least an hour, preheat the oven to 350 degrees Fahrenheit. Add flour, breadcrumbs, baking powder, and spices to a medium-sized mixing bowl. Whisk until combined; set aside.
- In a large mixing bowl, beat softened butter, salt, and sugar on medium low speed until light and fluffy. Add eggs in one at a time, beating on low speed until each egg is fully incorporated into the mixture. Beat in the vanilla extract and browning. Pour in the fruit-wine mixture and mix until completely combined. The batter should be a dark maroon-brown color.
- Add about a 1/3 cup of the flour-breadcrumb mixture to the batter at a time, folding gently with a spatula until just combined. Once all the dry ingredients have been added, give it one final big stir to ensure that everything is incorporated well enough. Be careful not to overmix. The cake batter will be slightly thick and very lumpy.
