CHOP SUEY
This is the fast and easy chop suey recipe that my mother always made, and we love it 'as is', but you could substitute a can of Chinese mixed vegetables for the bean sprouts if you like more color and texture. Serve over hot rice, topped with chow mein noodles and soy sauce, if desired.

Steps:
- Heat shortening in a large, deep skillet. Sear pork until it turns white, then add onion and saute for 5 minutes. Add celery, hot water, salt and pepper. Cover skillet and simmer for 5 minutes. Add sprouts and heat to boiling.
- In a small bowl combine the cold water, cornstarch, soy sauce and sugar. Mix together and add to skillet mixture. Cook for 5 minutes, or until thickened to taste.

MOM'S CHOP SUEY
Another one of our mother's favorite recipes. Don't know where she got it, but it dates back probably beyond the 1950s. I also don't know whether this is technically chop suey or chow mein--never could figure out the difference. But we love it, regardless. 02-09-16

Steps:
- 1. Chop onions and celery fairly small and set aside.
- 2. In a large Dutch oven, brown the meat in oil with salt and pepper to taste.
- 3. Add celery and onion. Cover with about half the bottle of soy sauce and add water to cover mixture. Bring to a boil and then lower heat. Simmer, covered, for 1 hour.
- 4. Add bean sprouts and water chestnuts, and a little more soy sauce and water if needed (not too much if you want it to be thick). Let this cook for about 20 minutes.
- 5. In a small saucepan, mix together the brown gravy sauce, the corn starch and water.
- 6. Cook over medium heat, stirring constantly until it gets so thick you can't stir any longer.
- 7. Immediately remove from heat and stir into the large pot, until very well mixed. Should be semi-thick at this point and ready to serve.
- 8. I like to serve this over hot white rice and sprinkle with crisp chow mein noodles. And, of course, egg rolls on the side--I cheat and buy frozen ones.
AMERICAN CHOP SUEY CASSEROLE WITH CHEESE TOPPING
Steps:
- Heat the oven to 350 F/180 C/Gas 4.
- Lightly butter a 2 1/2- to 3-quart baking dish or spray it with nonstick cooking spray .
- Bring a large saucepan of salted water to a boil over high heat. Add the macaroni and cook following the package directions. Drain well and set aside.
- Heat the olive oil in a large skillet over medium heat. When the oil is hot add the ground beef, onion, and bell pepper. Cook until the onion is tender and the beef is no longer pink, stirring frequently.
- Add the tomatoes, tomato sauce, garlic powder , sugar, paprika, and bay leaf. Taste and add kosher salt and freshly ground black pepper, as needed. Bring the sauce to a simmer. Reduce the heat and simmer for about 15 to 20 minutes.
- Remove the bay leaf and combine the sauce with the drained macaroni. Mix thoroughly.
- Transfer the American chop suey mixture to the prepared baking dish .
- Sprinkle the shredded cheese over the casserole.
- Bake for 20 to 25 minutes, or until the casserole is hot and cheese has melted.
- Serve and enjoy!

AMERICAN CHOP SUEY
Steps:
- Gather the ingredients.
- Cook the pasta in boiling salted water following the package directions.
- Drain in a colander and rinse under hot water. Set aside.
- In a large, deep skillet or saucepan, heat the vegetable oil and butter over medium heat. Add the onion and bell pepper, if using. Cook, stirring until onion is softened and edges are lightly browned.
- Add the ground beef and cook, stirring and breaking up, until the beef is cooked through and no longer pink.
- Add the garlic and garlic powder and cook, stirring for 1 to 2 minutes longer.
- Stir in the crushed tomatoes, diced tomatoes, tomato sauce, tomato paste, sugar, and pepper. Cook, stirring, until the sauce mixture begins to boil. Taste and add salt, as needed. Simmer for 5 to 10 minutes.
- Add the drained macaroni to the sauce, mix well, and heat through. Serve and enjoy.

CHOW MEIN NOODLE CASSEROLE
This is a very tasty dish that even my kids love! It can easily be cut in half. It uses soy sauce and chow mein noodles to give it an Asian flair.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium high heat, saute the ground beef for 5 minutes. Add the onion and celery and saute for 5 more minutes.
- In a separate medium bowl, combine the almonds, rice, soup, water and soy sauce. Mix together well and add to the beef mixture. Place this into a lightly greased 9x13 inch baking dish. Top with chow mein noodles.
- Bake at 350 degrees F (175 degrees C) for 20 minutes.

MOM'S FAMOUS CHOP SUEY AND NOODLES
Steps:
- Boil noodles in water until tender. Drain and convert to large bowl. Add seasoning, soy, brown sugar, oil, oyster sauce and blend well. Spray large metal broiler pan with cooking spray and spread 1/4 of the noodles onto the pan evenly. Bake at 350 degrees, turning noodles every 10 minutes for 30 minutes total, or until dry. Repeat with remaining noodles, baking 1/4 of the batch at a time. Marinate meat separately. Then, set meat aside in separate marinades while preparing vegetables.
- Clean, wash, and julienne the vegetables. Set each vegetable aside in separate piles. Bring big pot of water to boil. Partially boil each vegetable group separately dipping them in the hot water for 1 minute or less. Do not par-boil the mushrooms or green onions. Saute the mushrooms in butter until cooked. Once the vegetables are all par-boiled or cooked, you can mix them together in a large bowl, along with the green onions.
- Add 1 tablespoon of oil to a hot stir-fry pan. Remove garlic pieces and ginger from the meat marinade. Divide pork and ginger from meat marinade. Divide pork and chicken into 3 batches a piece. Stir fry each batch very quickly until cooked through and mix meats. Set aside.
- Add 1 tablespoon of oil to the hot pan. Stir fry 2 to 3 handfuls of mixed vegetable for half a minute. Stir in small portion of meat mixture. Add 2 tablespoons of oyster sauce while stir frying. Toss together and serve on a bed of noodles. Repeat with the remaining ingredients. Be sure to keep the amount of vegetable you are stir frying in small batches until all has been cooked and blended together.
MOM'S CHOP SUEY CASSEROLE
Great dish for a cold day ... one of my Mom's favorite recipes for an easy and filling meal. I like to sprinkle a little extra soy sauce on top.

- Brown hamburger with onion in a skillet.
- Add all other ingredients except noodles and mix well.
- Place in a greased 3 qt casserole.
- Bake, uncovered, at 350 for 1 hour.
- Stir 3/4 of noodles into casserole and place the rest on top.
- Bake an additional 15 minutes.
