MOM'S CHOCOLATE CAKE

Over the years, Mother has become known for wonderful homemade desserts like this old-fashioned chocolate cake. It was difficult, but my brothers and I always managed to save room for dessert. -Linda McGinty, Parma, Ohio

2 ounces unsweetened chocolate, broken into pieces
1/2 cup boiling water
1/2 cup shortening
2 cups packed brown sugar
2 large eggs, separated
2 cups sifted cake flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1/2 cup water
1/2 cup chopped walnuts
1 teaspoon vanilla extract
COCOA FROSTING:
6 tablespoons butter, softened
3-1/2 cups confectioners' sugar
1/2 cup baking cocoa
1-1/2 teaspoons vanilla extract
Pinch salt
4 to 6 tablespoons whole milk

Steps:

  • In a small bowl, stir chocolate in boiling water until melted; cool for 10 minutes. , In a bowl, cream shortening and brown sugar. Beat in egg yolks and chocolate mixture. Combine flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk. Gradually beat in water, nuts and vanilla. , In a small bowl, beat egg whites until soft peaks form; fold into batter. Pour into a greased 13x9-in. baking pan. Bake at 350° for 35-40 minutes or until toothpick inserted in the center comes out clean. Cool on wire rack., In a bowl, cream butter. Combine sugar and cocoa; gradually add to butter with vanilla, salt and enough milk to achieve desired spreading consistency. Frost cake.

My kids and all my nieces and nephews are crazy about this cake. It's a pound cake with a chocolate circle in the middle of each slice.

1 cup butter
2 cups sugar
3 eggs
3 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 1/2 teaspoons vanilla
3/4 cup chocolate syrup
1/4 teaspoon baking soda
1 1/2 cups sugar
1 cup cocoa
1 cup hot water
1 dash salt
2 teaspoons vanilla

Steps:

  • I think you could use store-bought chocolate syrup in this recipe, but the syrup made in the original recipe is not as thick, so store-bought might change the outcome of the cake.
  • Place the ingredients for the chocolate syrup in a saucepan on the stove and cook over medium high until it reaches a syrupy consistency. Pour into a chilled bowl and place in fridge to cool quickly.
  • Preheat oven to 350 degrees. Grease and flour a tube pan with removable bottom. Mine has a fairly large center hole of about 4 inches.
  • Cream butter and sugar. Add eggs, one at a time, beating after each.
  • Sift together flour, baking powder and salt. Pour milk into the measuring cup and add vanilla.
  • Add the dry ingredients and the milk to the cake a little at a time, alternating between the two.
  • Stir the baking soda into the chocolate syrup.
  • Pour 2/3 of the batter into the prepared tube pan, smoothing out the top.
  • Mix the syrup into the remaining batter and spread this batter on top of the other batter, again smoothing the top.
  • Bake for 45 minutes. Then place aluminum foil over the pan and bake an additional 20-25 more minutes or until done.
  • We usually serve this cake without frosting, but for birthdays, I would add my Italian Chocolate Frosting.
  • When sliced, the chocolate should have moved down to form a circle in the middle of the cake that the kids say looks like a person's head and shoulders. They get a kick out of the slightly different shape each time the cake is baked.

3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup butter, softened
2 cups sugar
3 eggs
1 cup milk
2 teaspoons vanilla
3/4 cup chocolate syrup
1/4 teaspoon baking soda
1 (15 ounce) can of prepared dark chocolate frosting (or your favorite chocolate frosting recipe)

Steps:

  • Preheat oven to 350 degrees.
  • Combine flour, powder and salt and set aside.
  • Cream butter, gradually adding sugar, until light and fluffy.
  • Blend in one egg at a time, beating well after each addition.
  • Combine milk and vanilla and add alternately with dry ingredients, ending with dry ingredients.
  • Blend well after each addition.
  • Turn two thirds of the batter into well greased and floured tube pan.
  • Add to remaining batter the chocolate syrup and baking soda and mix well.
  • Spoon chocolate batter over white batter.
  • DO NOT MIX!
  • Bake for 65 minutes or until cake tests done.
  • Cool for about 15 minutes on rack and remove from pan.
  • Cool completely and then frost.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
  • In a large saucepan, melt together the shortening and cocoa. Remove from heat and stir in sugar and egg. Mix buttermilk with baking soda, salt and vanilla, then blend into chocolate mixture. Beat in flour. Stir in hot water. Pour into prepared pan.
  • Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

1 cup (2 sticks) unsalted butter, plus more for greasing the pan
2 cups all-purpose flour
2 cups sugar
11/2 teaspoons baking soda
4 tablespoons unsweetened cocoa powder
1/2 cup buttermilk
2 eggs
1 teaspoons vanilla extract
1/2 cup (1 stick) unsalted butter
3/4 cup buttermilk
4 tablespoons unsweetened cocoa powder
1 pound confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • For the cake: Lightly grease a 9-by-13-inch cake pan with butter. Combine the flour, sugar and baking soda in the bowl of a stand mixer or mixing bowl. Combine the butter, cocoa and 1 cup water in a medium saucepan and bring to a boil while mixing. Add the cocoa mixture to the flour mixture, along with the buttermilk eggs and vanilla, and beat for 3 minutes. Pour into the prepared cake pan and bake until firm to the touch and a toothpick inserted in the center comes out clean, 30 to 40 minutes. Let cool 10 minutes in the pan before turning out on a rack to cool completely.
  • For the frosting: Make the frosting as soon as the cake is out of the oven. Combine the butter, buttermilk and cocoa in a small saucepan and bring to a boil while mixing. Combine with the confectioners' sugar in the bowl of a stand mixer and beat until smooth. Spread the frosting evenly on the cake.

2 c all-purpose flour
2 c granulated sugar
1 stick butter or margarine (1/2 cup)
1/2 c shortening
1 c water
1/4 c cocoa, unsweetened
1/2 c buttermilk
2 large eggs, slightly beaten
1 tsp baking soda
1 tsp vanilla extract
1 tsp cinnamon
MOM'S DREAMY CHOCOLATE FROSTING
1 stick butter or margarine (1/2 cup)
3 1/2 Tbsp cocoa, unsweetened
1/3 c milk
1 lb powdered sugar (1 box)
1 tsp vanilla extract
2/3 c pecans, chopped

Steps:

  • 1. Preheat oven to 400 degrees F.
  • 2. Prepare a 9x13x2-inch pan or for sheet cake a 16x11x1-inch, pan with 'Baker's Joy' non-stick cooking spray (my suggestion) or grease and flour pans the old-fashioned way.
  • 3. Sift flour and sugar in a large mixing bowl and blend well. In a saucepan, combine butter, shortening, water, and cocoa. Bring to a rapid boil. Pour over flour/sugar mixture and mix well.
  • 4. Combine remaining ingredients and add ALL AT ONCE to the batter, mixing well.
  • 5. Pour into the prepared pan.
  • 6. Bake at 400 degrees F for 35 to 40 minutes (9x13x2-inch pan). For a sheet cake (16x11x1-inch), bake for 20 minutes or until tests done. Let cool 15-20 minutes while preparing the frosting.
  • 7. FROSTING: Combine butter, cocoa, and milk in a saucepan. Heat slowly and bring to boil.
  • 8. Add remaining ingredients; beat well.
  • 9. Spread over warm cake.
  • 10. Leave in pan until ready to serve. Cut in squares and enjoy!
