SIMPLY DELICIOUS CHICKEN AND DUMPLINGS

Simply Delicious Chicken and Dumplings image

These simply delicious chicken and dumplings have thousands of fans - this family-favorite dinner is my most popular recipe on Pinterest. The chicken stew takes help from a rotisserie chicken, but the dumplings are made from-scratch and practically fool-proof!

Provided by Foodtastic Mom

Categories     Main Course

Time 1h5m

Number Of Ingredients 17

1 rotisserie chicken (white and dark meat shredded and skin removed)
6 small carrots (peeled and diced)
3 ribs celery (diced (about 1 cup))
1 sweet onion (diced)
1/2 cup fresh parsley (finely chopped)
2 tbsp unsalted butter
1 tsp salt
1/2 tsp smoked paprika
1/2 tsp dried thyme
1/2 tsp black pepper
4 cups chicken stock
1 can cream of onion soup (you can also use cream of chicken or cream of celery)
2 cups all-purpose flour
4 tsp baking powder
1 tsp salt
3/4 cup milk
4 tbsp unsalted butter (melted)

Steps:

  • In a large stock pot over medium heat, melt the two tablespoons of butter and add the carrots, celery, onion, parsley and all the seasonings, salt through pepper. Cook until the vegetables are starting to soften, about 5 - 8 minutes.
  • Add the cream of onion soup, chicken stock and shredded rotisserie chicken. Stir well. Bring to a low boil and reduce heat to a gentle simmer.
  • To make the dumplings, whisk together the flour, baking powder and salt. Whisk together the milk and melted butter. Pour the milk mixture into the flour mixture and stir together with a spatula until a smooth ball of dough forms.
  • Using a 1.5 tablespoon capacity cookie scoop, drop the dumpling batter balls into the simmering stew one at a time until all the dough has been used. The dough should make 15 dumplings.
  • Cover the pot and allow to cook (without uncovering) on a low simmer for 25 minutes.
  • Serve immediately.

Country Chicken and Biscuits image

Country Chicken and Biscuits is a classic down-home comfort food dinner!

Provided by Blair Lonergan

Categories     Dinner

Time 57m

Number Of Ingredients 17

2 cups chicken broth
1 cup half-and-half
⅓ cup butter
1 cup chopped onion
1 cup peeled and chopped carrots
1 cup chopped celery
½ cup flour
1 teaspoon salt
¼ teaspoon pepper
4 cups cooked, diced or shredded chicken
½ cup frozen peas (not thawed)
2 cups Bisquick
⅔-¾ cup cold buttermilk (or sub with regular milk)
½ cup grated cheddar cheese
¼ teaspoon dried parsley
2 tablespoons butter, melted
⅛ teaspoon garlic powder

Steps:

  • Preheat oven to 425 degrees F. Spray a 2 ½ - 3-quart casserole dish with cooking spray and set aside.
  • In a separate bowl, whisk together chicken broth and half-and-half. Set aside.
  • Melt butter in a large skillet over medium-high heat. Add onion, carrot and celery; sauté for 10 minutes. Add flour and continue cooking and stirring for 1 more minute. Reduce heat to medium and gradually stir in the chicken broth mixture.
  • Continue cooking over medium heat, stirring regularly, until thick and bubbly (about 5-6 minutes). Make sure that the mixture doesn't boil. Stir in the salt and pepper. Add chicken and frozen peas.
  • Transfer the mixture to the prepared baking dish. Cover with foil and bake for about 10 minutes while you prepare the biscuit dough.
  • Use a fork to stir together the Bisquick mix, buttermilk, cheese and parsley until a soft dough forms.
  • Remove the chicken mixture from the oven, take off the cover, and give the filling a stir. Use a large scoop to drop about ¼-cup of the biscuit dough at a time onto the hot chicken mixture. You should have about 8 biscuits on top of the dish.
  • Return dish to the oven and bake, uncovered, for about 12 minutes, or until golden brown and a toothpick inserted in a biscuit comes out clean.
  • Stir together melted butter and garlic powder; brush over warm biscuits and serve.

MOM'S CHICKEN SCRATCH

Mom's Chicken Scratch image

We used the four-cheese Rice-A-Roni as Whitney suggests, and it added a ton of flavor to this casserole. The buttery, crunchy bread topping is delicious and adds flavor too. A tasty, easy dinner recipe to have in your back pocket on a busy day.

Provided by Whitney Froehlich

Categories     Chicken

Time 1h5m

Number Of Ingredients 10

3-4 large chicken breasts, boneless and skinless
1 box four cheese flavored Rice-a-Roni rice (or any kind of rice you desire)
1 1/2-2 c chicken broth
1 can(s) cream of mushroom soup (10.5 oz)
1 c all-purpose flour
2 tsp baking powder
1 c milk
1 tsp salt
1 stick butter (melted)
1/2 tsp pepper

Steps:

  • 1. Rinse chicken and season to your taste. You can bake or grill the chicken however you like. Cut into bite-size pieces and set aside.
  • 2. Grease a 9x13 baking pan. Set aside. Prepare rice according to directions. Dump the rice into the bottom of the dish and smooth over.
  • 3. Pour the chicken on top of the rice so it's completely covered. Set aside. Preheat oven to 425 degrees.
  • 4. In a medium-sized mixing bowl, stir and mix together the cream of mushroom soup and chicken broth (use more or less of the broth depending on how "soupy" you would like it - no more than 2 cups). Pour the soup mixture evenly over the chicken. Set aside.
  • 5. To make the breading, in another medium-sized mixing bowl, mix together the flour, baking powder, salt, and pepper. Melt butter in a separate bowl and then add to the flour mixture.
  • 6. Add the milk and stir until smooth and creamy (should have the same consistency as pancake batter).
  • 7. Pour the breading mixture on top of the soup mixture. Bake in the oven 35-40 mins.
  • 8. Enjoy!!

  • Wash the chicken and remove the bag of gizzards from the inside. Place the chicken in a big soup pot, you'll need at least a 5 qt pot, and add enough water to cover the chicken. Add the whole onion, whole carrots and celery sticks to the pot. Make sure there's enough water to cover the vegetables. Bring to a boil over medium-high heat.
  • Once it comes to a boil, you will notice a dirty foam floating around the top of the pot, use a skimmer to skim that out. This will ensure that you get a clear soup. Keep skimming the foam until there's no more left. Reduce the heat to medium-low, cover with a lid and cook for about 1 hour, the carrots should be fork tender and the chicken cooked through, and almost falling off the bone.
  • Carefully remove the chicken from the soup pot and let it cool for a few minutes until it's cool enough so that you can pull the meat from it. Remove the carrots, celery and onion from the soup pot as well.
  • If you have too much broth in the pot you can now ladle some out to a jar or airtight container for later use and store it in the fridge.

  • Remove chicken from the buttermilk. Add one piece of the damp chicken to the paper bag. Hold the bag closed and shake it so that the chicken is thoroughly coated. Transfer the chicken to a wire rack; repeat with remaining pieces of chicken. Allow the chicken to dry for at least 30 minutes or up to 1 hour.
