This Sheet Pan Barbecue Bacon Chicken Fajitas is zesty, smoky and oh-so-welcome on a busy weeknight. Plus, it is happily mess-free.

4 boneless skinless chicken breasts (, sliced into 1/2-inch thick strips)
4 - 6 Signature Farms® bacon slices (, cut into 1/4-inch pieces)
1 red (, green and yellow bell peppers, sliced into strips (one of each, 3 total))
1 yellow onion, (sliced)
3 tablespoons Signature SELECT Sweet & Smoky BBQ Rub (, or more to taste)
2 tablespoons olive oil
8 - 10 corn (or flour warm tortillas)
Lime wedges
2 tablespoons fresh cilantro, (chopped)
Sour cream
Cheddar cheese, (shredded)
Avocado, (sliced)

Steps:

  • Preheat oven to 400º F. Spray a large rimmed baking sheet with non-stick cooking spray.
  • Place chicken, bacon, bell peppers, and onion on the sheet. Add Signature SELECT Sweet & Smoky BBQ Rub. Gently toss to combine.
  • Roast in preheated oven, tossing once halfway through cooking until chicken and veggies are cooked through and tender, about 20 - 25 minutes.
  • Serve immediately with warm tortillas, lime wedges and garnished with cilantro, if desired.

1/4 cup lime juice
1 tablespoon vegetable oil
1 teaspoon chili powder
1 pound boneless skinless chicken breast halves, cut into 4x1/4-inch strips
1 medium onion, cut into 1/4-inch slices
8 Old El Paso™ flour tortillas (8 inches in diameter)
1 cup Old El Paso™ salsa (any variety)
1/2 cup guacamole, if desired

Steps:

  • Mix lime juice, oil and chili powder in shallow glass or plastic dish or heavy-duty resealable plastic food-storage bag. Add chicken and onion; turn to coat with marinade. Cover dish or seal bag and refrigerate at least 1 hour but no longer than 24 hours.
  • Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat.
  • Remove chicken and onion from marinade; reserve marinade. Cover and grill chicken and onion 4 to 6 inches from medium heat 8 to 10 minutes, brushing frequently with marinade and turning once, until chicken is no longer pink in center. Discard any remaining marinade.
  • Divide chicken and onion among tortillas, placing in center. Fold one end of tortilla up about 1 inch over chicken mixture; fold right and left sides over folded end, overlapping. Fold remaining end down. Top with salsa and guacamole.

1 package (1 oz) Old El Paso™ fajita seasoning mix
1 large red bell pepper, cut into thin strips
1 large green bell pepper, cut into thin strips
1 large onion, cut in half and sliced
1 tablespoon vegetable oil
2 cups cut-up shredded deli rotisserie chicken
1/2 cup barbecue sauce
10 Old El Paso™ flour tortillas for soft tacos & fajitas (6 inch; from 8.2-oz package), heated as directed on package

Steps:

  • Place fajita seasoning mix in gallon-size resealable food-storage plastic bag. Place vegetables in bag; seal. Shake vegetables until evenly coated.
  • In 12-inch nonstick skillet, heat oil over medium-high heat. Add vegetables; cook and stir, scraping any seasoning mix from bottom of skillet, 3 to 4 minutes or until vegetables are almost crisp-tender. Stir in chicken and barbecue sauce. Cook and stir 2 to 3 minutes longer or until chicken and sauce are heated through.
  • Fill each tortilla with about 1/2 cup of mixture.
