BAKED CHERRY PUDDING
Our mother's recipes pleased all six of her children. One of my brothers was especially fond of her cherry pudding. Every time he came home, Mom would bake this cake-like treat. Now, I surprise him with it whenever he visits me.

Steps:
- In a small bowl, combine 2/3 cup sugar, flour, baking powder and salt. Stir in milk. Spread into a greased 11x7-in. baking dish; set aside., In a small saucepan, combine the cherries, butter and remaining sugar. Bring to a boil; cook and stir for 1-2 minutes or until sugar is dissolved. Spoon over crust. Bake at 350° for 30-35 minutes or until golden brown. Serve warm.

MOM'S CHERRY NUT BREAD PUDDING
this is from my mother's own homemade recipes...I was blessed with all my mothers cookbooks, hand written recipes - we love this tasty & yummy change to the "old bread pudding," with cherries & pecans - you can't go wrong...

Steps:
- 1. Heat cherries in wine/juice until medium warm and soak for 20 minutes. Heat milk & butter in sauce pan.
- 2. In large bowl, combine the next 6 ingredients and the cherries (don't drain). Add milk mixture and stir gently. Spoon into a greased one-quart baking dish. Place dish in pan of hot water.
- 3. Bake at 350 degrees F for 45-55 minutes, or until knife inserted one inch from edge comes out clean.
- 4. Serve warm Top with whipped cream & a sprinkle of almonds, if desired.
OLD FASHIONED BAKED SOUR CHERRY PUDDING
My little granddaugher loves pink, I can't wait to make this wonderful treat for her. Best of all it tastes delicious and is really quick and easy to make. A perfect dessert served plain or with some vanilla bean ice cream. It is best served warm.

- Preheat oven to 350 degrees.
- Combine 2/3 cup sugar, flour, baking powder and salt in a small bowl.
- Mix milk and almond extract together and lightly stir into the flour mixture.
- Pour batter into a greased 11 x 7 " pan and set aside.
- In a small pot, add the cherries, butter and 1 cup sugar and bring to a boil.
- Cook, constantly stirring for 2 minutes until the sugar disolves.
- Add the toasted almonds, stir well and spoon the mixture over the batter.
- Bake at 350 degrees for 30 minutes or until golden brown.
CHERRY PUDDING
This is a recipe my great-grandmother made years ago when I was a small child and she used to watch us kids while my mother went to work. She used to give us this in a bowl with some warm milk and a little bit of sugar on it!

- Preheat Oven to 350 degrees.
- Mix all but cherries together.
- Fold in cherries and pour into a 13 x 9 baking dish.
- Bake at 350 for 30 minutes until fork inserted in the center comes out clean.
- Note: You can honestly use whatever berries you have in season at the time. My great grandmother always called it cherry pudding whether she used blueberries, raspberries, strawberries or whatever was in season.
CHERRY PUDDING
This recipe came from a phamphlet my mom had, titled "101 Ways to a Mans Heart". It was created from a recipe contest using E-Z Bake Flour. I used to make this sweet bread like pudding with cherries every chance I got when I was a kid. I loved it because I loved the cherries. I think I will try it again and try to make it sugar...

Steps:
- 1. PART 1: In bowl, mix together throughly, flour, sugar, baking powder, salt, melted butter and milk. Place in a well-greased, deep bread pan. 4x8. Set aside. (When I make this I use an oven proof bowl or small baking dish).
- 2. PART 2: Mix together in saucepan, cherries, sugar, juice and 1 tsp butter, heat until sugar is dissolved and mixture is hot. Pour cherry mixture on top of batter. Bake 400 degrees F. 40-50 min. or until toothpick inserted in middle comes out clean. Dough will rise up through cherries.
MIRJ'S EASY CHERRY PUDDING
This is really a very easy dessert that tastes great, especially served warm with vanilla ice cream. I've done it with all sorts of canned fruit, comes out perfect every time!

Steps:
- Melt the margarine and pour into a Pyrex baking dish, about 8 inches square.
- You can also melt this directly into the Pyrex dish in the microwave.
- Mix the flour, sugar, baking powder and water.
- Pour this on top of the melted margarine.
- DO NOT MIX!
- Pour the cherries and their syrup on top of this batter.
- DO NOT MIX!
- Bake in a 350 degree F oven for 1 hour.
- The cherries will sink to the bottom, the crust will rise to the top.
- Serve warm with vanilla ice cream or whipped cream.
- I've also done this with canned plum (depitted first), canned fruit cocktail, canned blueberries.
- It's so simple and tastes great!

SELF-SAUCING CHERRY PUDDING

Steps:
- Spread the drained cherries evenly in the bottom of a deep 9 x 9 greased baking dish.
- To prepare batter, cream together the 3/4 cup sugar and butter until well blended, then stir in milk.
- Sift 1 cup flour, baking powder, and salt over creamed ingredients. Combine thoroughly until batter is smooth.
- Turn batter over cherries and smooth evenly with back of spoon.
- To make topping, mix together 1/4 cup sugar and 2 1/2 tbsp flour. Sprinkle it evenly over top of batter.
- Pour reserved cherry liquid in a 2 cup measure and add enough water to make 1 1/2 cups of liquid.
- Heat this liquid in a saucepan until boiling, then remove from heat and stir in red food colouring.
- Slowly, with a back and forth motion, pour liquid all over top of batter.
- Bake at 350 for 45 minutes.

Steps:
- throughly grease tube mold.
- stir together breadcrumbs, 3/4 cup sugar, flour, baking powder, and salt in a large bowl.
- stir in egg yolks one at a time,
- carefully fold in 1 1/2 cups Cherry pie filling, butter, almond extract, and food color.
- Beat egg whites in another bowluntil foamy gradually add 1/4 cup sugar.
- keep beating until stiff peaks form.
- fold about 1/3 of whites into Cherry mixture.
- blend and then fold in remaining egg.
- fold in chocolate chips.
- pour batter into tube moldif top is open close with foil.
- cover mold with wax paperand tie with string.
- place a rack in a large kettlepour water to top of rack.
- heat water to boilingplace mold on rack.
- simmer about 1 1/2 hours.
- remove from heat and cool for 5 minutes.
- remove cover unmold into serving plate serve with cherry whipped cream.
- For cherry whipped cream.
- beat cream with powdered sugar in a large bowl until stiff.
- fold in remaining pie fillingand 1/2 teaspoon almond extract.
