Steps:

  • Cook the meat in a large pot over medium-high heat, breaking it into small pieces.
  • When the meat is no longer pink, add the onion and garlic, sauteing until tender.
  • Stir in the remaining ingredients, except cabbage, and bring to a boil over medium heat.
  • Add the cabbage, a handful at a time, stirring well after each addition. Reduce heat to medium-low, cover, and cook for 10 minutes, stirring occasionally until cabbage is soft.

2 tsp beef broth crystals (i like better than bouillon)
1/2 Tbsp minced garlic
2/3 c onion chopped
2 c celery finely chopped
1 lb carrots, bite size chunks
2 c shredded cabbage
6 medium potatoes bite size chunks
1/3 c pearl barley
1 small parsnip bite size chunks
1/2 c ketchup
3 Tbsp worshtershire
1 tsp pepper
8 oz tomato paste
2 lb hamburger, cooked

Steps:

  • 1. Put everything in a big pot.
  • 2. Heat until boiling then reduce heat to simmer and cook for at least 30 minutes before serving.

My mom didn't know the name of it so I just called it a goulash...it's like a stew or soup....Makes a lot for a family and is very...

1 cabbage head in small to medium chunks
3 medium carrots, sliced (optional)
1 pkg beef wieners, sliced
1 can(s) large tomatoes (do not drain the juice)
black pepper (as little or as much as you like)
salt (as little or as much as you like)

Steps:

  • 1. Boil a large pot of water as you would as if you were making pasta. Water should be enough to completely cover cabbage/carrots. I always add a pinch of salt to my boiling water.
  • 2. Add cabbage and carrots (carrots are optional). Bring it back to a boil and add sliced wieners. Add salt and pepper (as much or as little as you want). Turn down heat to medium.
  • 3. Completely drain water once cabbage/carrots are tender (do not over cook). Put back in pot and add tomatoes with the juice. I used 1 regular size can of Italian diced tomatoes and 2 regular size cans of Italian whole stewed tomatoes. You can use as much tomatoes that suits you or your family. Add a tad more black pepper to suit your tastes.
  • 4. Heat on medium/low until heated all the way through. Enjoy! Seriously, this is an easy recipe and it's very forgiving. I don't like as much black pepper in mine as much as my mom did when we were growing up, but I love tomatoes so I add more of those. You do not have to use Italian style tomatoes...it's just my preference, but my mom just used regular canned diced tomatoes.

1 medium green pepper, chopped
1 sweet onion, chopped
1 1/2 cups elbow macaroni, cooked (or any other type of small pasta)
1 (8 ounce) can tomato sauce
1 (14 1/2 ounce) can stewed tomatoes
1 (8 ounce) can sliced mushrooms
italian seasoning (to taste)
ground black pepper (to taste)
salt (to taste) or garlic salt (to taste)

Steps:

  • Fry hamburger, pepper, and onion in large skillet.
  • Drain fat if needed (if you're not sure, you can also only cook the macaroni part way so that while simmering the uncooked pasta will soak up excess moisture when added to the mixture).
  • Add remaining ingredients and heat well.
  • Add macaroni and heat through.

MOM'S GOULASH IN THE MICROWAVE

There were no microwaves when my mom made this, so she did it on the stove top. She never gave us the recipe and I have discovered it through trial and error. You never forget the taste! I started with a recipe in a microwave cookbook and have adjusted the ingredients over time. If anyone is home when you are cooking, you will have company in the kitchen! Serve with Caesar salad, oven-baked garlic butter French bread and red wine. Microwave temperatures vary, so keep checking to see if these power levels work for you.

1 (8 ounce) package uncooked elbow macaroni
1 pound ground beef
1 cup diced onion
1 cup sliced celery
1 tablespoon minced garlic
1 (14.5 ounce) can diced tomatoes
1 (10 ounce) can tomato sauce
1 tablespoon sugar
1 tablespoon paprika
1 teaspoon dried oregano
¼ teaspoon caraway seed
1 pinch cayenne pepper, or to taste
1 teaspoon salt

Steps:

  • Bring a pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Drain.
  • Meanwhile, crumble the ground beef into a 2 quart or larger casserole dish. Add the onion, celery and garlic. Cook in the microwave on High for 5 to 6 minutes, or until beef is no longer pink. Stir once during cooking. Drain off the grease.
  • Stir the tomatoes, tomato sauce and sugar into the beef, and season with paprika, oregano, caraway seed, cayenne pepper and salt. Cover, and cook in the microwave on power level 8 for about 14 minutes, or until celery is tender and the flavors have blended.
  • Remove from the microwave, and mix in the cooked macaroni. Cook for 2 to 3 more minutes, until heated through. Serve.

Not to be confused with the Hungarian dish of paprika-spiced stewed meat and vegetables, this American version of goulash, also referred to as "slumgullion," is made with ground beef and pasta. The beef is cooked down with plenty of aromatics and spices and combined with tomatoes, pasta, and cheese to create the perfect comfort meal. We added paprika to the dish in a nod to its Hungarian counterpart.

1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1 pound ground beef
Kosher salt and freshly ground black pepper
1 teaspoon paprika

One 15-ounce can tomato sauce
1 teaspoon Worcestershire sauce
1 cup low-sodium beef broth

Steps:

  • Heat the olive oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute.
  • Add the beef and cook, stirring and breaking up the meat with a wooden spoon, until browned and no longer pink, about 8 minutes. Add 1 teaspoon salt, a few grinds of pepper, the paprika, and Italian seasoning to the beef and stir to combine. Cook, stirring, until the paprika begins to toast and become fragrant, about 1 minute.   • Remove the pot from the heat. Gently stir in the parsley and Cheddar until combined and the cheese starts to melt. Divide the goulash among 6 bowls and top with more shredded Cheddar and chopped parsley.

  • Set the Instant Pot to the sauté setting and adjust to high. When it reads HOT add in broken up ground beef. Add in the onion, pepper and pre-minced garlic. Brown the beef for about 5 minutes. Drain off any excess grease. Turn off the sauté setting. Scrape any bits off the bottom of the Instant Pot.
  • Add to pot in order: Lay the cabbage on top of the beef. Then sprinkle paprika and the rice on top of the cabbage. Pour broth over the top of the rice. Then add the whole cans of diced tomatoes and tomato sauce and spread evenly around. Do not stir though.
  • Cover the Instant Pot and secure the lid. Set the valve to sealing. Set the manual pressure cook button to 8 minutes. When the time is up let the pot sit for 10 minutes and then move the valve to venting. After fully venting remove the lid.
