MOMMA'S HOLIDAY RICE



Momma's Holiday Rice image

This very easy side dish will be a great served at a holiday meal. We loved the flavor of this rice. It reminded us of wild rice. Almonds add a nice crunch to each bite. This is simple and delicious.

1 stick butter
2 c Uncle Ben's Original Long Grain Converted Rice, uncooked
2 can(s) beef consomme soup (10.5 oz. each)
2 can(s) French onion soup (10.5 oz.)
1/2 c water
2 can(s) sliced mushrooms, drained (4 oz. each)
2 pkg sliced or slivered almonds (2 oz. each)

Steps:

  • 1. Preheat oven to 350.
  • 2. Melt butter in 13x9 casserole dish.
  • 3. Add the beef consomme soup, French onion soup, rice, and water. Stir.
  • 4. Put the mushrooms in. Then sprinkle the almonds on top.
  • 5. Bake 350F for about an hour until all the liquid is absorbed.

Old-fashioned chicken and rice, lightened up for the perfect Sunday dinner.

Number Of Ingredients 7

1 10.5 oz 98% Fat Free Cream Of Chicken Soup
1 10.5 oz Can of Water ((just fill the cream of chicken soup can with water))
1 cup Long Grain White Rice (Plain White rice- do NOT use Instant or Minute Rice)
1 ½ lbs Chicken Breast, raw
1 Packet of Lipton Recipe Secrets Onion Soup Mix
Cooking Spray
Salt & Pepper

Steps:

  • Preheat oven to 350 degrees.
  • Cut the chicken breast into small, uniform bite-size pieces.
  • In a large bowl, add chicken breast, soup mix, cream of chicken soup, water, and rice. Mix well until combined.
  • In a lightly sprayed casserole dish, add the chicken and rice mixture. Cover tightly with tin foil.
  • Place into the oven for 1 hour.
  • After removing from the oven, fluff the rice with a fork. Serve and enjoy!

1 can Cream of Mushroom soup
1 can Beeff Consomme

Steps:

  • Saute onion in butter in baking dish. Add rice and pour soups over. Bake in 375 degree oven for 45 minutes. Rice should absorb liquid and be lightly brown on top.

  • Start by rinsing you rice in a fine mesh sieve. This will rinse away the extra rice starch that is on the outside of the rice grains. This will help your rice cook more evenly and prevent clumping/mushiness.
  • Set the Instant Pot to sauté function, add the oil and once it reads hot sauté the chopped onions for about 5 minutes. Add the rice and garlic and sauté for another 3 minutes. The rice will turn translucent and a little brown. Yum!
