POTATO BREAKFAST CASSEROLE

Steps:
- Preheat oven to 375 degrees
- Melt the butter in a large skillet and saute the diced poblano pepper until browned, almost blackened. Add the frozen hash browns, some salt and pepper and toss together.
- Tip into a buttered baking dish and top with the cheese and lastly bacon.
- Bake until hot and bubbly, about 30 minutes.

LOW CARB BREAKFAST CASSEROLE
This casserole is great morning, noon or night! It is also a great addition to your meal prep since it reheats and even freezes really well!

- Start by preheating your oven to 400 degrees F and greasing a 7x11 baking dish.
- Combine the butter, cream cheese and mozzarella cheese in a large microwave-safe bowl. Microwave for 1-minute intervals, stirring in between each interval until it's all melted. The cheeses will combine easily, but the butter may be stubborn - don't worry, it will all mix together when you add in the rest of the ingredients.
- Once the cheese is melted, add in the almond flour, baking powder, and 1 egg.
- Using your hands or a stand mixer with a dough hook attachment - stir the dough until it becomes uniform.
- Once the dough has come together, spread it into the bottom of greased a 7x11 baking dish. You can also use a 9x11 dish, but you will have to work a little harder to get it spread out enough and I am all about making things easier!
- Pop it in the oven for about 10-15 minutes, until golden brown. Remove from the oven and decrease your oven temp to 350 degrees F.
- While it's baking, add a dash of salt to your zucchini, allow it to sit for about 5 minutes - then squeeze it to remove excess water.
- Top the "bread" layer with the cooked and crumbled sausage, the shredded zucchini and cheddar cheese.
- In a separate bowl, crack your 6 remaining eggs and whisk them well. *If you are prepping this ahead of time - then this is where you will be stopping. Simply cover the bowl of eggs and the casserole dish and refrigerate until you are ready to cook it*
- Pour the eggs over the sausage, cheese and zucchini mixture and place it all in the oven. Loosely cover with aluminum foil and bake for about 20 minutes, then remove foil and bake an additional 10 minutes or until the eggs are set.

BRAD'S MOM'S BREAKFAST CASSEROLE
This is Brad Pitt's Mom's recipe and is supposedly one of his favorite dishes. This needs to be made the night before and refrigerated overnight, which means you can't exactly whip this up if Brad drops in unexpectedly!

Steps:
- Brown sausage in a medium skillet over low heat.
- Drain grease and set aside to cool.
- Lightly beat eggs in a large bowl; add milk, mustard and salt and blend well.
- Stir in bread crusts, add sausage and cheese and mix well.
- Pour into a shallow, 2-qt glass baking dish and refrigerate overnight.
- The next morning, preheat oven to 350° and bake casserole for 40-45 minutes or until edges are golden brown.
- Serve hot or at room temperature.
CHRISTMAS MORNING WIFE SAVER (BREAKFAST CASSEROLE)
I certainly cannot take credit for this recipe but it is a Christmas classic. There are lots of little things to personalize this recipe. I have suggested using red and green bell peppers because they are Christmas colors! I also use grated cheese and spread it over the Canadian bacon instead of cheese slices. I have used regular bacon in this recipe, but I find that it overpowers the rest of the flavors. Make this tasty breakfast dish the night before and just pop it in the oven on Christmas morning; let it cook while you open gifts and sip your rum-spiked coffee!

- Butter a 9x13-inch baking dish. Cut and fit 8 slices of bread to fit over entire bottom of dish. Cover bread with slices of Canadian bacon and sharp Cheddar cheese. Cut and fit remaining 8 slices of bread to completely cover bacon and cheese.
- Whisk eggs with salt and black pepper in a bowl. Whisk dry mustard, onion, diced green and red bell pepper, Worcestershire sauce, and hot sauce into eggs. Whisk in milk until egg mixture is smoothly combined. Pour egg mixture evenly over the casserole. Cover the dish and refrigerate overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Pour melted butter evenly over the casserole and sprinkle corn flake crumbs over the top.
- Bake in the preheated oven until set and lightly browned, about 1 hour. Let casserole stand for 10 minutes before serving.

- Place bread at bottom of greased glass baking dish.
- Break up sausage into bite-size pieces & cook in pan.
- While sausage is cooking, mix eggs & milk in bowl.
- After sausage is done, add it to the milk & egg mixture.
- Pour mixture over bread.
- Cover mixture in pan with cheese.
- Top off with soup.
- Put in oven at 325 degrees in glass dish for about 35-40 minutes or until egg has risen and edges are bubbly (you'll know it's not done if the dish jiggles).
