An Old Fashioned Bread Stuffing is a classic recipe for stuffing made with bread cubes, sauteed onions, celery, and butter.

1/4 cup butter (plus more for greasing pan)
1 large onion (diced)
3 celery stalks (chopped)
3 sprigs fresh thyme leaves (stems discarded)
1 pound bread (cubed)
2 cups chicken stock
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Cut the bread into 1-inch cubes and arrange it onto a baking sheet. Allow the bread to dry out for 3-12 hours.
  • Grease an 8x8 or 2-quart baking dish with butter. Preheat oven to 350 degrees F.
  • Melt 1/4 cup (or 1/2 stick) butter in a large heavy-bottomed skillet, over medium-low heat.
  • Add onions, celery, and fresh thyme leaves to the skillet. Season with a pinch of salt and pepper. Saute veggies until softened slightly, about 7 minutes.
  • Place the bread cubes in a large mixing bowl. Add in the sauteed veggies and another pinch of salt and pepper. Toss well.
  • Add in the chicken stock, 1 cup at a time, and toss until bread cubes are moistened completely. You want the bread to be wet and softened, but not drenched in liquid or soggy. You may not use all the liquid.
  • Pour the prepared stuffing into the prepared baking dish and cover with foil.
  • Bake at 350 degrees for 40 minutes covered. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden.

1 medium onion (finely diced)
1 cup finely diced celery
4 cloves garlic (minced)
1/4 cup butter
1 teaspoon poultry seasoning
1 teaspoon ground sage
1/2 teaspoon ground pepper
1 teaspoon salt
4 cups crumbled cornbread
2 cups dry cubed bread
3 cups chicken broth

Steps:

  • In a large saucepan over medium-high heat, saute onion, celery, and garlic in butter until just tender, about 5 minutes. Remove from heat and stir in seasonings.
  • Place crumbled cornbread and bread in a large bowl and stir in onion mixture. Pour chicken broth over top and gently stir until stuffing is evenly moistened.
  • Spread stuffing in a greased 9x13 pan. Bake covered at 375F 30-35 minutes then remove foil and bake an additional 10 minutes until top is slightly browned. Let stuffing cool 10 minutes then serve warm. Enjoy!

¾ cup chopped onion
1 ½ cups chopped celery with leaves
9 cups soft bread cubes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

A traditional recipe for Homemade Stuffing made with dried bread cubes mixed with onions and celery sauteed in plenty of butter then mixed with herbs and broth (and more butter) and baked until golden and delicious! It is the perfect stuffing recipe for your Thanksgiving table! Can easily be doubled for a crowd.

12 cups Stale White Bread - cut into 1 inch cubes ((approx 1 lb 4 oz loaf of bread - see notes below for details))
3/4 cup plus 2 tbsp butter (divided )
1 large yellow or white onion, chopped
2 cup celery, chopped (stalks and leaves!)
1 1/2 tsp kosher salt
1 tsp black pepper
1 tsp poultry seasoning
1/2 tsp marjoram
3 tbsp (heaping) fresh sage, chopped
1/3 cup fresh parsley, chopped (Curly or Italian will work)
2 eggs
1 cup chicken broth or stock

Steps:

  • Cut the bread into 1 inch cubes.
  • Make the bread stale by one of the two options:A. Overnight - Lay the bread cubes on a sheet pan on the counter overnight to dry out.B. Quick Method - Preheat the oven to 250°, lay the bread cubes on a sheet pan and pop in the oven for 30 minutes, tossing every 5-10 minutes.
  • Preheat the oven to 350° and prep a 9x9 baking dish by generously greasing with butter or oil. (if you are doubling the recipe use a 9x13 or 10x15 baking dish)
  • In a large saute pan over medium heat melt 3/4 cup butter. Add the onions and celery and saute until they are completely softened, this will take about 20 minutes.
  • Off the heat add the salt, pepper, poultry seasoning, marjoram, fresh sage and parsley to the onions.
  • In a small bowl whisk together the eggs and broth.
  • Add the bread cubes to a large bowl, pour the onions/herb mixture over the bread and stir to combine. Pour the egg mixture over the bread cubes and stir until the liquid is absorbed.
  • Pour the stuffing mixture into the buttered baking dish. Cube the remaining 2 tbsp of butter and dot the top of the stuffing.
  • Cover the dish with foil and bake for 30 minutes. remove the foil and bake for another 15 minutes. For an extra crispy top turn the broiler on for a minute or two!
  • Serve right away!

1 lb Oscar Mayer bacon
2 c diced celery
1 c diced onion
2 bag(s) onion and sage bread stuffing, 12 oz each
1/2-1 tsp rubbed sage, to taste
1-2 c chicken broth, enough to dampen dressing
maybe a little melted butter

Steps:

  • 1. Cut up bacon in one-inch pieces.
  • 2. Brown lightly in pan. Do not drain grease. You can use any bacon you like, My mom always used Oscar Mayer which has a certain flavor.
  • 3. When browned. add celery and saute for 2-3 minutes.
  • 4. Add onions and continue sauteing until they become glassy and soft but not browned.
  • 5. Empty dressing bags into a large pan (I use an old roasting pan).
  • 6. Pour the bacon, onion, and celery evenly over the bread.
  • 7. Sprinkle about 1 tsp rubbed sage and mix well.
  • 8. Add chicken broth a little at a time. The dressing should be moist but not soggy. The bread cubes should still look like cubes but should be starting to stick together.
  • 9. Stuff your 12-14 lb turkey. There will be leftovers.
  • 10. Roast according to directions. Don't stuff ahead of time.
  • 11. Place the leftovers in a baking dish.
  • 12. Add a little more chicken broth.
  • 13. You can drizzle some melted butter over the top to make top nice and crispy.
  • 14. Bake at 350 until warm and brown, about 45 minutes.
  • 15. My sons love this and would eat only this for Thanksgiving with some gravy! It is a rather basic stuffing that is always a crowd pleaser.

MOM'S STUFFING PORK CHOPS

Mom never follows a recipe when she cooks, so this is my best guess of how she makes them! You may have to tweak things a bit, as all values for ingredients she uses are approximate. I still have not been able to replicate hers exactly!

6 (3/4 inch) thick pork chops
½ cup water
2 tablespoons butter

1 ¼ teaspoons salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat olive oil in a large skillet over medium high heat. Brown chops, turning once, and transfer to a shallow baking dish. Add water, and cover.
  • Bake in the preheated oven for 1 hour.
  • When chops are almost done, melt butter in a medium saucepan over medium heat. Cook and stir celery and onions until onions are translucent. Stir in bread crumbs, corn, poultry seasoning, salt, and pepper. Cook for 5 minutes, then spoon stuffing over chops and return to the oven. ½ cup unsalted butter (1 stick), more for baking dish
2 lbs good quality white bread, cut into 1-inch cubes ((about 20 cups))
4 ribs celery, plus some leafy tops, finely diced ((1½ cups))
2 carrots, finely diced ((1 cup))
1 sweet onion, finely diced ((2½ cups))
1 lb bulk pork breakfast sausage
2 tbsp finely chopped fresh sage
2 tbsp finely chopped fresh thyme
3 cups homemade turkey stock, or chicken broth or stock
Kosher salt and fresh cracked pepper

Steps:

  • Preheat oven to 350º. Spread bread cubes on two large baking sheets and toast for 30 minutes, stirring and rotating pans, until lightly browned and crisp. Transfer to very large bowl when done.
  • Meanwhile, in large skillet, melt 1 stick of butter. Pour half the melted butter in a bowl and reserve for later, to brush the top of the stuffing. To the pan with remaining melted butter, add celery, carrots and onion, a sprinkle of salt, and cook and stir over medium-high heat until softened and starting to brown, about 8 to 10 minutes. Transfer vegetables to bowl. Add sausage to skillet in chunks, and cook, breaking it up with wooden spoon, until cooked through and lightly browned, about 6 minutes.
  • Return vegetable mixture to the skillet and add the sage and thyme, a little salt and pepper, and cook for 1 minute. Add 1 cup of stock, cook and stir up any browned bits, until stock is reduced and cooked down by half, about 5 minutes.
  • Transfer sausage mixture to bowl with the toasted bread cubes. Add remaining 2 to 2½ cups of stock and toss well until bread cubes are evenly moistened. Taste and season with salt and pepper. Spread stuffing into large, buttered baking dish (about 3½ quart size) and brush with the reserved melted butter.
  • Bake in center of oven until heated through and nicely browned, about 1 hour, rotating casserole halfway through. Let stuffing rest 10 minutes before serving.

1 teaspoon poultry seasoning

  • Preheat oven to 325 degrees.
  • In a large skillet cook celery and onion in melted butter over medium heat until tender, but do not let get brown. Remove from heat.
  • Stir in seasoning and lemon pepper.
  • Place bread cubes in a large bowl; add onion mixture and beaten egg.
  • Drizzle with enough chicken broth to moisten; toss lightly to combine. Add a little milk for flavoring.
  • Spoon stuffing into neck and body cavities of the turkey.
  • If you have some leftover, place it in a buttered casserole dish. Bake covered for 30-45 minutes or until heated through. You will want to add more chicken broth so that it isn't so dry. When it cooks inside the turkey it gets very moist, but in a baking dish it gets dry.
  • Recipe makes enough for a 15 pound bird.

4 cups dried or toasted bread, cubed (good for an 8 - 10 lb. roasting chicken or turkey)
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon poultry seasoning
1 egg, slightly beaten
3 tablespoons butter
3 tablespoons onions, chopped
1 1/2 cups celery, chopped
2 tablespoons cooking oil

Steps:

  • Moisten bread cubes with milk or hot water.
  • Add salt, pepper, poultry seasoning, and egg.
  • Combine mixture.
  • Melt butter in frying pan and add onions until slightly browned, then add celery.
  • Stir, then add to bread cube mixture.
  • Stuff turkey or chicken lightly with stuffing, being careful not to pack stuffing in tightly.
  • Rub turkey or chicken well with oil, salt, and pepper.
  • Put in 300 degree oven for 2 1/2 hours.

1 12 oz loaf whole wheat french bread (cut into small cubes)
3 slices center cut bacon (minced)
1 tbsp butter
1 large onion (minced)
3 medium stalks celery (minced)
10 fresh sage leaves (minced)
2/3 cup chopped parsley
salt and fresh pepper (to taste)
1 teaspoon Bell's Turkey Seasoning (or poultry seasoning)
1 large egg (beaten)
2 cups chicken broth
1/2 cup water
cooking spray

Steps:

  • If your bread is fresh, preheat the oven and bake the bread cubes on 2 baking sheets at 250°F for about 30 minutes, stirring half way until the bread is completely firm.
  • Increase the oven to 350°F.
  • In a large saute pan over medium heat cook bacon for about 2 minutes. Add butter; when melted add onions, celery, parsley, sage, Bell's seasoning, salt and pepper and saute on medium low until soft, about 5-10 minutes. Remove from heat and let cool a few minutes.
  • In a medium bowl, combine chicken broth and egg.
  • In a large bowl add bread and combine with sauteed vegetables. Add chicken broth and egg mixture and combine well. If stuffing is too dry, add a little more broth or water until you have the right consistency.
  • Spray a casserole with cooking spray, add stuffing. (If making ahead cover with foil and refrigerate).
  • If making alongside a turkey, pour some of the pan juices from the cooked turkey over the stuffing. Bake uncovered 40 to 45 minutes, or until golden.

1 pound sausage (Italian, breakfast, spicy, sage - pick your favorite, optional)

Steps:

  • Preheat oven to 300F. Place cubed cornbread on a large baking sheet and bake 20 minutes or until dried out. Set aside.
  • In a large skillet, brown sausage. Remove from skillet leaving one tablespoon of grease in skillet.
  • Add onion, celery, salt and pepper to skillet and cook over medium heat, stirring frequently, until onions are translucent, about 4 to 5 minutes.
  • Add sage, thyme, and pecan and stir to combine. Cook for 2 to 3 minutes more.
  • In a medium bowl, whisk together 2 cups of stock or broth and both eggs.
  • Place dried cornbread cubes in a very large bowl. Add sausage, onion and herb mixture, egg mixture and 4 tablespoons of melted butter. Gently fold together until combined.
  • Pour into a greased 3 quart baking dish and press down lightly. Cover with foil and bake for 30 minutes.
  • Remove dressing from oven and remove foil. Check consistency of stuffing. Add additional stock as needed and drizzle with the remaining 4 tablespoons of melted butter.

What a wonderfully classic stuffing recipe! It's filled with celery, green pepper, onion, and fresh herbs which makes the stuffing extremely flavorful. Easy to make, this recipe makes a lot so it's enough to feed a crowd. It reminds us of what our moms used to make.

1 onion, diced
1 green pepper, diced
1 c butter
3/4 c diced celery (celery seed can be used, maybe a teaspoon or so)
2 eggs, beaten
2 c canned chicken broth
1 bag(s) Pepperidge Farm herbed seasoned stuffing (is crumbs, not cubes or croutons and is sold in a blue & white bag), 16 oz.
1 bag(s) soft bread cubes, 16-20 oz.
1 tsp garlic powder
1 tsp poultry seasoning
2 Tbsp dried parsley flakes (or can use fresh parsley)
1 tsp oregano
1 Reynolds turkey sized baking bag
1 turkey

Steps:

  • 1. In a large bowl, combine the bag of bread cubes with Pepperidge Farm herbed seasoned stuffing.
  • 2. In a frying pan, melt butter over medium-high heat. Sautée onions, green pepper, and celery (or celery seed) until all is softened and translucent.
  • 3. Pour melted butter and vegetables over all bread cubes and crumbs.
  • 4. Mix in the two beaten eggs. Toss.
  • 5. Add: 1 tsp Garlic Powder 1 tsp Poultry Seasoning 2 Tbsp Dried Parsley 1 Tsp Oregano Toss again.
  • 6. Now pour chicken broth over all of the mixture making sure that stuffing is ALMOST wet. You want it to be more than damp, but not downright wet so that stuffing doesn't dry out while inside turkey baking. (You can judge if stuffing is becoming too wet, just reserve the rest of the broth if not needed. Many people like to use milk, but I find that it causes it to have a bland flavor. The chicken broth is the secret to excellent flavor, here.)
  • 7. Toss once again, making sure all bread is well coated with all ingredients.
  • 8. Stuff the turkey, packing tightly, but not too tightly (as in "don't really jam it in there") at both ends. (If you have any leftover, you can put it in a casserole dish, and refrigerate until 45 minutes before turkey is done, then put in the oven with turkey for extra stuffing.)
  • 9. Use softened butter and, using fingers, rub butter all over turkey until coated. Then shake a little paprika over the top of the entire turkey.
  • 10. Put about 2 tablespoons flour inside the baking bag before putting the turkey inside. Push turkey into the bag. Close bag tightly. Make three slits across the top of the bag for ventilation and put it into a roaster pan.
  • 11. Put the lid on the roaster. Then bake following instructions for the size turkey you have. (**Note: the baking bag will probably cut baking time by at least 3/4 hr to 1 hour, but really holds in the juices and turkey stays very moist and juicy.) No basting is required when you use the baking bag, but if you wish, you can baste one or two times during baking.

3/4 loaf of day old bread, ripped up into bite sized pieces
2 onions, chopped
1/4 butter + 2 tbsp melted butter
2 tbsp savoury
salt & pepper, to taste

Steps:

  • Melt 1/4 cup butter in a frying pan, Add onions and cook for 5 minutes to soften.
  • In a large bowl, add bread, savoury, salt and pepper, cooked onions and 2 tbsp melted butter. Toss to combine.
  • Add the stuffing into the turkey cavity. Make sure to not pack it in too tight. The stuffing cooks inside the turkey. It's ready when it reaches an internal temperature of 165F. Remove stuffing promptly and place in a serving dish.

6 Large Mushrooms
3 Stalks of Celery
1 Onion
1 Loaf of Bread
1 1/2 Tablespoons Poultry Seasoning
1/4 Cup Dried Parsley
1/2 Cup Raisins
Salt and Pepper
1 Cup Boiling Water
1 Pack OXO Chicken Stalk
1 Spoonful Butter

Steps:

  • Combine all Ingredients under the first section of Dry Ingredients in a large bowl.
  • Boil a cup of water and add the butter and chicken OXO into it.
  • Drizzle the water, butter, and chicken stalk mixture over your dry ingredients bowl while stirring it all together. All of the dry ingredients should be moist.
  • Stuff Turkey with about half of the stuffing mixture. This stuffing will cook inside the turkey as the turkey cooks. A stuffed turkey may take a bit longer to cook than a turkey that is unstuffed, so take that into consideration when timing your turkey.
  • After stuffing the turkey tie the turkeys legs together to hold it all in.
  • With the turkey in a roasting pan, cover the turkey in Tin Foil and Cook at 350 degrees for 20 minutes a pound.
  • The other half of the stuffing can be cooked separately in a casserole dish. Just cover with tinfoil and cook for 1 hour at 325 degrees.
  • Remove tin foil from the turkey about 30 minutes before the turkey should be done to help the turkey brown. And when the turkey is done remove from oven and let sit for a few minutes.
  • Remove stuffing from inside of the turkey and mix with other stuffing that was cooked separately. The stuffing cooked inside the turkey will be much more moist than the other, so when mixed together they become the best turkey stuffing ever!

1 1/4 pounds sourdough bread, crusts trimmed, cut into 1/2-inch cubes (about 12 cups) (can substitute with 12 slices of Italian bread)
3/4 pound bacon (about 12 slices), cut into 1/2-inch pieces
1 large onion
3 cups chopped celery
1 pound mushrooms, sliced (used 2 cans of sliced)
1 1/2 tablespoons dried sage leaves
2 teaspoons dried thyme
1 teaspoon salt
3/4 teaspoon ground black pepper
2 1/2 cups (or more) canned low-salt chicken broth (also can use stock)
2 large eggs
1 1/2 teaspoons baking powder

Steps:

  • Preheat oven to 325°F. Spread bread cubes on 2 baking sheets. Bake until bread cubes are dry and crisp, stirring occasionally, about 25 minutes. Transfer bread to large bowl. Sauté bacon in heavy large skillet over medium-high heat until brown and crisp. Using slotted spoon, transfer bacon to paper towels and drain. Pour off all but 1/4 cup drippings from skillet. Add chopped onion and celery to skillet and sauté until tender and beginning to brown, about 10 minutes. Add mushrooms, sage, thyme, salt and pepper and sauté until tender, about 10 minutes. Pour mushroom mixture over bread cubes. Add bacon and toss to blend. Mix in 2 cups broth. (Stuffing can be prepared 1 day ahead. Cover and refrigerate.) Preheat oven to 350°F. Butter 13 x 9 x 2-inch glass baking dish. Beat eggs and baking powder in small bowl to blend. Mix eggs into stuffing; moisten stuffing with more broth if stuffing is dry. Transfer to prepared baking dish. Bake stuffing until cooked through and golden brown on top, about 1 hour.
