GRANDMA'S BEST COFFEE CAKE
This is my family's favorite COFFEE CAKE recipe! Buttery, brown sugary, perfectly spiced tender cake that we serve every Christmas morning.

- Preheat oven to 350 degrees F. Liberally grease a 9x13" rectangular baking dish with cooking spray; set aside.
- In a large bowl, combine the flour, sugars, baking soda, baking powder, nutmeg, cinnamon, and salt and whisk together until incorporated. Pour in the oil and stir to combine until moist crumbs come together. Reserve 2 cups of the crumbs.
- Add in the beaten egg, buttermilk, and vanilla to the original bowl and stir until a thin batter comes together. Do NOT overmix the batter; some lumps are okay. Pour the batter into the prepared pan in an even layer. Sprinkle the top of the batter evenly with the crumbs.
- Bake for 30-35 minutes or until a toothpick inserted near the center comes out clean or with moist crumbs. Cool about 15-20 minutes before cutting into squares to serve, or cool longer if you want prettier squares as this is a very tender cake!

- Preheat oven to 350°F. Coat a 9×13 baking dish with nonstick spray. Set aside.
- In a medium bowl prepare the cinnamon filling by whisking together the brown sugar, flour, and cinnamon until combined. Set aside.
- To prepare the crumb topping, mix together the melted butter, brown sugar, cinnamon, and flour in a medium bowl until it resembles coarse crumbs. Use your hands to mix to form larger crumb pieces. Set aside.
- For the cake, mix the butter, granulated sugar, and light brown sugar in the bowl of your stand mixer fitted with the paddle attachment on medium speed for 2 minutes until light and fluffy.
- Add in the eggs, vanilla, sour cream, salt, and baking powder and mix for 1 minute until combined and smooth, scraping the sides of the bowl as necessary.
- Turn the mixer to low and add in the flour and milk in alternating portions, beginning and ending with flour. Mix until just combined and smooth, again, scraping the sides of the bowl as necessary.
- Spread half of the cake batter into the prepared pan. Sprinkle the cinnamon filling evenly on top of the batter. Carefully spread the remaining cake batter on top of the cinnamon layer. Evenly sprinkle the crumb topping on top.
- Bake for 40-45 minutes, or until the cake is set and a toothpick inserted in the center comes out clean.
- Remove cake from oven and place pan on a wire rack to cool completely.
- Whisk together the powdered sugar and milk until smooth and drizzle on top of the cooled cake. Or alternately sprinkle with powdered sugar instead of making the icing.

- 1. Preheat oven to 350 degrees. Cream butter, and sugar in a large bowl. Add eggs, sour cream and vanilla, beating on medium speed until well blended.
- 2. In another bowl, mix flour, baking powder, baking soda and salt together. Add gradually to creamed mixture, beating after each addition.
- 3. Have walnuts, sugar and cinnamon mixed together. Butter a 9-inch spring form pan. Put 1/2 the batter into pan and sprinkle 1/2 the cinnamon mixture over batter. Add remaining batter and sprinkle with the rest of the cinnamon mixture. **batter will be thick, so I dollop it over the cinnamon layer of cake, and gently blend it together with the back of a spoon, then sprinkle cinnamon over top of cake.
- 4. Bake for 45-60 minutes, or until a toothpick comes out clean.

- 1. Mix the filling ingredients and set aside. Preheat the oven to 375 degrees and grease a 10 inch Bundt pan or tube pan.
- 2. In a large mixing bowl, combine the cake mix, sour cream, oil, sugar, water, and eggs together.
- 3. Beat for 2 minutes.
- 4. Pour 2/3 of the batter into the prepared pan.
- 5. Then the filling sprinkling it evenly around the top of the batter.
- 6. Pour the remaining batter over the filling.
- 7. Bake in the preheated oven (375 degrees) for 45-55 minutes.
- 8. Once baked, allow the cake to cool about 10 minutes and turn out onto a serving plate.
MOM'S DIVINE COFFEE CAKE
I got this recipe from mom, who got it out of an old cookbook, and decided to rename it "Mom's coffee cake" . In fact, she renamed everything "moms" if it was good! Anyways, it is a great basic coffee cake, and can be made with or without the nuts. Impress your work friends, church group, or house guests. It is yummy, and tastes better the next day.

- COMBINE nuts with the 1/4 cup sugar and cinnamon; set aside.
- BLEND together flour, baking powder & soda; set aside. Cream butter with the 1 cup sugar until light and fluffy. Add eggs and vanilla; beat well. Add dry ingredients and sour cream; beat until well blended (do not overbeat).
- POUR half batter into greased and lightly floured 9 inch square pan;

- Preheat oven to 350 degrees F. and grease a bundt pan, set aside.
- With a mixer, cream together butter, sugar and sour cream until fluffy.
- Mix in beaten eggs and vanilla until combined.
- Sift together flour, baking soda, baking powder and salt, and add to wet mixture, beating well.
- Toss the ingredients for the Cinnamon Nut Streusel together and add 1/3 of the mixture to the prepared bundt pan. Top with 1/3 of the cake batter, and continue to alternate batter and streusel mixture, ending with batter.

COFFEE CAKE
Steps:
- Preheat oven to 375°.
- Beat egg in mixing bowl. Mix in sugar, milk, salt, oil, and vanilla.
- Spoon flour into measuring cup. Dump flour on top of the batter. Sprinkle baking pwder over flour and gently mix into the top half of the flour. Stir flour mixture into batter until combined. Pour into greased, or parchment lined, 9x9 baking dish.
- In a microwave-safe bowl, melt butter in microwave. Remove and mix in brown sugar, cinnamon, and flour and stir until well combined. Add nuts if desired.
- Sprinkle streusel onto the cake.Use a finger or the small end of a wooden spoon to poke the streusel halfway down into the cake batter, randomly 12-18 times.
- Bake for 25-30 minutes, until a toothpick inserted in the middle comes out with moist crumbs (not runny batter). Do not overbake or it will be more dry!
- (optional step) Mix butter and powdered sugar. Thin with milk until desired consistency. Lightly drizzle cake with icing.
BLUEBERRY COFFEE CAKE
Steps:
- On the largest setting of a cheese grater, shred frozen/ultra-cold butter into bowl with flour.
- Add brown sugar to the mixture. Stir to combine and set aside for later.
- Preheat oven to 350°F. In a large bowl, add butter and sugar, beating until well combined and fluffy.
- Add vanilla extract and egg. Beat until smooth.
- In a separate, small bowl, combine flour with baking powder.
- Into the sugar/butter mixture, add in flour/baking powder mixture in small parts, alternating with a small splash of milk. Repeat this process until you run out of milk and flour.
- Stir in blueberrries. Grease a 6-inch baking pan with butter. Spread the cake mixture evenly thoughout.the pan.
- Spread the streusel topping over the top of the cake batter. Bake cake for 50-60 minutes. When the cake is fully baked, a toothpick should come out of the center clean.
