MOM'S APPLE CRISP (WEIGHT WATCHERS)
This recipe is from the September/October 2009 Weight Watchers magazine. Now you can have your crisp and eat it too. :) This is Weight Watchers version of the all-American favorite. - Preheat the oven to 375°F Spray a shallow 1-1/2 quart baking dish with nonstick spray.
- To make the topping, combine the 1/2 cup flour, the oats, brown sugar, ginger, cinnamon, and salt in a medium bowl. With a pastry blender or 2 knives used scissor-fashion, cut in the butter until the mixture resembles coarse crumbs. Add the water and firmly press mixture to form clumps.
- To make the filling, mix the granulated sugar, the 2 tablespoons flour, the nutmeg, and cloves in a large bowl. Add the apples and vanilla; mix well. Transfer to the baking dish. Sprinkle the topping over the filling. Bake until the filling is bubbling and the topping is golden, 55 - 60 minutes. Serve warm or at room temperature.

- In a large bowl, combine the apples, 1/4 cup sugar and 1 teaspoon cinnamon. Transfer to a greased 8-in. square baking dish. , In a small bowl, combine the flour, baking powder, salt and remaining sugar; cut in butter until crumbly. Sprinkle over apples, pressing down to smooth top. , Slowly pour water over the top; sprinkle with remaining cinnamon. Bake, uncovered, at 400° for 40-45 minutes or until apples are tender. Serve warm.

NO PEEL APPLE CRISP
This delicious apple crisp is so easy to make as you don't have to peel the apples.

- Preheat oven to 350 degrees. Grease a deep-dish pie plate or large baking dish with cooking spray and set aside.
- Slice each apple into 8 slices and remove the seeds. Toss the apple slices in the lemon juice.
- To the apple slices add the sugar, cinnamon, and vanilla extract in a large bowl. Mix well until all of the apples are evenly coated. Pour into the prepared baking dish.
- In a separate medium-size bowl, combine the flour, oats, brown sugar, salt, and cinnamon. Pour in the melted butter and stir until well coated and crumbly. Sprinkle the crumb mixture evenly over the top of the apples.
- Bake in the preheated oven for 45-60 minutes until fruit is soft and the topping is golden brown. Allow to cool slightly before serving. Serve warm or cold.

- Preheat the oven to 350*F/180*C/ gas mark 4. Butter an 9-inch square baking dish. Set aside.
- Make the crumbs first. Combine all of the ingredients in a bowl, cutting the butter in until you have a nice crumbly mixture. Set aside.
- To make the sauce, whisk the sugar and corn flour together in a small saucepan. Whisk in the water and vanilla. Cook, stirring constantly, over medium high heat, until the mixture comes to the boil, then reduce to low and cook at a simmer for two minutes.
- Press half of your crumb mixture into the baking dish. Top with the apples. Pour the sauce mixture evenly over top of the apples. Sprinkle the remaining crumbs over everything evenly.
- Bake in the preheated oven for 55 to 60 minutes until the apples are tender and the crumbs are golden brown.
- Serve warm, spooned out and topped with vanilla ice cream or whipped cream, if desired. Delicious!

- Combine all the ingredients for the filling in a medium bowl, stirring to coat all the apples. Let sit for at least 1 ½ hours, covered in the refrigerator; stirring occasionally. Sometimes I get impatient (Imagine that!) and I don’t wait that long, and it’s still delicious. The flavors are better if you let the apples macerate, but just know that I understand if you bake it right away.
- In a medium bowl whisk together the sugar, flour and oats; add the butter cubes and toss to coat them with the flour mixture. Using your hands, work the butter into the flour mixture by grabbing a handful, squeezing and mashing it against your palm with your fingers. Repeat until your hand is exhausted and the mixture sticks together in chunks but there are only a few remaining lumps of butter. Work as quickly as possible so that the butter doesn’t actually melt.
- Give the apples one last stir and pour into an 8 inch square baking dish. Cover with the crisp topping using as much or as little as you wish. There is a lot! Press some down into the apples. {Trust me.}
