MOM'S OVEN-BARBECUED RIBS

Mom's Oven-Barbecued Ribs image

My mom made these tender ribs for special Sunday suppers when we were growing up. A few common ingredients are all you need to make the zesty sauce that coats them. My family's eyes light up when I bring a plate of these ribs to the table, and company never suspects how easy they are to prepare. -Yvonne White Williamson, New York

BARBECUE RIBS

Barbecue Ribs image

This recipe is easier than it sounds. I usually cook the ribs the day before and grill them for a quick dinner the next night. FYI: the sauce is much better after it is cooked. It is not a dipping sauce.

You can adjust for the amount of sauce you need. I just adjusted to make 2-3 cups for 2 packages of ribs (about 4-5 lbs.) and I used Splenda brown sugar for my husband.

  • Carefully split the peppers and remove seeds and membranes. The arbol peppers are SPICY! I only used two of them. You may be able to simply tap them in order to get the seeds out.
  • Place peppers, tomato, onion and garlic cloves in pan with enough water to cover. Heat on medium to boil, then reduce to low and simmer for 30 minutes.
  • With slotted spoon, remove vegetables from pan and place in blender. Use just enough water so the blender will move freely. Many people say that the water from the pan is bitter. I haven't noticed this, but you can use fresh water, if you prefer. Blend on low then high until solids are removed.

Close the lid of the grill and allow the ribs to cook undisturbed for 1 hour and 30 minutes. The ribs need to cook slowly with indirect heat.
