MOM'S BANANA CREAM PIE



Mom's Banana Cream Pie image

Been making this pie for years, always light and delish. If you have never made one, you'll want to give this one a try!!!!

Number Of Ingredients 13

FILLING:
2/3 c granulated sugar
1/2 tsp salt
2 1/2 Tbsp cornstarch
1 Tbsp all-purpose flour
3 c milk
1 or 2 bananas, add as you layer the filling into crust. i sometimes just put on top when ready to serve as the bananas will turn brown in the filling, your choice.
AFTER THICKENED:
3 eggs yolks, slightly beaten
AFTER REMOVED FROM HEAT:
1 Tbsp butter
1 1/2 tsp vanilla extract
1 baked pie crust (single)

Steps:

  • 1. Mix in saucepan: all dry ingredients. Stir in gradually 3 cups of milk and cook over moderate heat stirring constantly, until mixture thickens and boils. Boil one minute.
  • 2. Remove from heat and stir a little of the mixture into the 3 egg yolks, slightly beaten. Then blend into hot mixture in saucepan. Boil one minutes more stirring constantly.
  • 3. Remove from heat. Blend in 1 tablespoons of butter and 1 1/2 teaspoons of vanilla extract.
  • 4. Pour half into prepared cooked 1 crust pie crust slice banana and put one layer in middle of pie, than add the rest of your filling, or use a graham cracker crust your choice. Cool and set up in refrigerator. Serve with Whipped cream and a cherry. Keep refrigerated. Oh and enjoy!

This banana cream pie starts with a creamy banana infused pudding which is layered with fresh bananas and topped with sweetened whipped cream and sliced almonds.

4 bananas
3 Tbsp butter
2 cups half and half
3/4 cup sugar
1/4 tsp salt
3 egg yolks (slightly beaten)
3 Tbsp cornstarch
2 tsp vanilla
1 9 inch baked pie crust (pastry or graham cracker)
1 cup whipping cream (whipped)
2 tsp sugar
1 tsp vanilla.
1/4 cup sliced almonds

Steps:

  • Slice two bananas into 1/2 inch pieces and place in a pan with 1 Tbsp butter. Cook over medium heat until bananas are softened, just a few minutes. Add half and half into pan and bring to a boil. Boil for 30 seconds and then remove from heat, cover and allow to sit for about 30 minutes. Strain out bananas.
  • Mix together sugar, salt and egg yolks in a medium saucepan. Mix in cornstarch. Add banana infused milk and stir until smooth. Cook over medium heat for about 3-4 minutes until a pudding consistency forms. Stir often.
  • Remove from heat and add in 2 Tbsp butter and vanilla. Stir to combine. Cover pudding with plastic wrap, place wrap directly against surface of pudding. Put in refrigerator and cool for about an hour.
  • Add half of pudding mixture to bottom of baked pie crust, Add 2 sliced bananas, (sliced about 1/4" thick) to top of pudding. Add remaining pudding on top
  • Put whipping cream, 2 tsp sugar and vanilla into a bowl and whip until soft peaks form. Spread over the top of the filled pie dish. Sprinkle with sliced almonds.Refrigerate until ready to serve.

1 (9 inch) graham cracker crust
3 medium bananas
8 ounces cream cheese
1/3 cup lemon juice
14 ounces sweetened condensed milk
1 teaspoon vanilla extract

Steps:

  • Soften the cream cheese to room temperature.
  • Line pie crust with slices from 2 bananas.
  • Whip cream cheese till fluffy.
  • Gradually add sweetened condensed milk.
  • Continue to stir until well blended.
  • Add lemon juice and vanilla extract-blend well.
  • Pour into crust.
  • Chill 2 hours or until firm.
  • Garnish with banana slices from the third banana.

Prick the pie crust with a fork in a number of places. Remove the parchment (reserve it!) and crimp the edges decoratively. Fit the parchment back into the pie crust and fill the pie with dried rice, dried beans, or pie weights. For more on blind baking a pie crust click here.
  • Bake on the lower rack of the oven for 20 minutes, then remove from the oven, carefully remove the parchment and weights, and return the crust to the oven. Bake for another 15 to 20 minutes until golden and cooked through. Set on a cooling rack to cool completely.
  • Meanwhile, in a large saucepan, whisk together the sugar, cornstarch, salt and milk . Place the pan over medium-high heat until it starts to bubble and thicken, then reduce the heat a bit so that it bubbles slowly for another two or three minutes and thickens up further.
  • Lightly beat the egg yolks in a small bowl. Slowly pour a few tablespoons of the hot filling into the egg yolks, whisking all the while, until blended. Slowly pour this egg mixture back into the pan over medium-high heat, whisking constantly, so that it is all smooth and blended. Allow to come to a boil ( big bloopy bubbles will rise to the top and pop) and stir for another 2 minutes until the mixture is quite thick.
