BACON-WRAPPED MEATLOAF
Homemade meatloaf just like mom used to make has nothing on this bacon-wrapped meatloaf. With a brown sugar-ketchup glaze and whole strips of bacon, this mighty meatloaf is a flavorful meal that's far from the dry brick that haunts many childhood memories. So the next time you want a throwback dinner but with a delicious updated twist, try this bacon-wrapped meatloaf.

- Preheat oven to 350° F. Line a 9 x 5-inch loaf pan with slightly overlapping pieces of bacon.
- In a medium-sized bowl, mash together beef, onions, bell pepper, garlic, Worcestershire sauce, eggs, oats, salt and pepper.
- Spread 2 tablespoons of glaze over the bacon in the loaf pan.
- Then press the meatloaf mixture into the pan.
- Fold any overhanging bacon over the top of the loaf pan. Flip the loaf pan onto a baking sheet lined with foil or parchment paper. Carefully wrap the ends of the meatloaf with bacon as well, tucking the strips into the other pieces of bacon so it's tight.
- Bake meatloaf at 350° F for 50 minutes. Remove meatloaf, brush with ketchup glaze and return to oven for another 15-20 minutes. Finished meatloaf should have crispy bacon edges and reach an internal temperature of 165° F in the center of the meatloaf.
- Let meatloaf rest for 10 minutes before slicing and serving.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x11-inch baking dish.
- Place bacon in a large skillet and cook over medium-high heat until edges just start to curl, 1 to 2 minutes per side. Drain the bacon slices on paper towels. Reserve about 1 tablespoon bacon drippings in the skillet.
- Cook and stir onion and garlic in the bacon drippings until onion is softened, 6 to 7 minutes. Remove from heat and cool.
- Mix cooled onion and garlic, ground beef, 1/2 cup barbeque sauce, bread crumbs, eggs, Worcestershire sauce, Dijon mustard, oregano, and chili powder together with your hands in a large bowl. Form beef mixture into a log-shaped meatloaf; place in the prepared baking dish.
- Wrap partially-cooked bacon slices around the meatloaf, tucking the ends of bacon underneath the loaf.
- Bake in the preheated oven for 35 minutes. Brush bacon-wrapped meatloaf with 3 tablespoons barbeque sauce. Continue baking until no longer pink in the center, about 10 more minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Let stand for 10 minutes before serving.

- Preheat the oven to 350 degrees F (175 degrees C) .
- Combine ground beef, ground sausage, crushed crackers, ketchup, onion, eggs, onion powder, and garlic powder in a large bowl until mixed thoroughly, using your hands for best results. Form mixture into a loaf shape.
- Weave strips of bacon into a basket weave pattern. Place meatloaf in the center and carefully lift and transfer to a loaf pan, so bacon is on the bottom and sides of the pan.
- Bake in the preheated oven until no longer pink in the center, about 1 1/2 hours. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Allow to sit for 5 minutes before carefully flipping onto a platter.

- Preheat oven to 350° Fahrenheit.
- Line a 14 ½" x 10" sheet pan with aluminum foil.
- Heat a 10" skillet over medium heat. Add safflower oil and finely chopped onion. Cook onion until it is translucent, stirring occasionally. Remove from heat and allow to cool.
- In a small bowl beat together eggs, cream, and Worcestershire sauce. Set aside.
- Place ground beef in an extra-large bowl. Put bread in a food processor and pulse until bread is in fine crumbs. Add bread crumbs, poultry seasoning, black pepper, salt, and cooked onion to the ground beef. Pour egg mixture over all and gently, mix until all ingredients are incorporated.
- Gather meatloaf mixture into a ball and place on prepared sheet pan. Shape into a 10 inch oval.
- Starting at center of the meatloaf, cover meatloaf diagonally with strips of maple bacon. Trim bacon with kitchen scissors as needed to completely cover the top and sides of the meatloaf.
- Place meatloaf in the preheated oven and bake for 1 hour and 15 minutes. Remove from oven and brush top and sides of meatloaf with barbeque sauce. Return meatloaf to oven and bake for another 15 minutes.
- Remove meatloaf from oven and serve.

- In a large non-stick skillet, heat oil over medium-high heat. Cook carrots and onion until tender and golden about 5 minutes. Stir in garlic and cook 1 minute. Set aside to cool.
- In a bowl, use your hands to combine the turkey, egg, parsley, breadcrumbs, chili sauce and the cooled onion mixture until just blended. Do not overwork or the mixture will become tough when cooked. Divide into 4 equal portions and shape into thick patty, about 3-inches across. Wrap a slice of bacon around the edge of the each patty. To freeze, wrap individual patties in plastic wrap and store in a resealable plastic freezer bag.
