This moist Apple Cake is an old-fashioned, easy dessert that has been loved for generations!

3 eggs
2 cups sugar
1 ½ cups vegetable oil
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
¼ teaspoon nutmeg
2 teaspoons vanilla extract
1 cup chopped pecans
3 cups peeled and finely chopped apples
1 cup brown sugar
½ cup (1 stick) salted butter
½ cup milk
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F. Grease and flour a Bundt pan; set aside.
  • In a large bowl, use an electric mixer to beat together the eggs, sugar and oil until light and fluffy.
  • In a separate bowl, sift together the flour, baking soda, salt, cinnamon and nutmeg. Add the dry ingredients to the egg mixture and mix just until combined. Add vanilla; mix. Gently fold in the nuts and apples.
  • Transfer the batter to the prepared pan. Bake for 70-80 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for a few minutes while you make the glaze, then turn out onto a wire rack. Glaze the cake while it's still warm.

Finally, after all these years, I've come up with a solution for people who can't decide whether to make an apple crumble or coffee cake. This features the best things about both of those recipes. It's like baking a crumb-topped coffee cake on top of another coffee cake!

2 teaspoons unsalted butter
2 cups all-purpose flour
½ teaspoon fine sea salt
1 teaspoon baking powder
¾ teaspoon baking soda
1 ½ cups finely chopped toasted walnuts
⅓ cup packed light brown sugar
⅓ cup white sugar
¼ teaspoon salt
1 teaspoon ground cinnamon
3 tablespoons unsalted butter, melted
½ cup unsalted butter, at room temperature
1 cup white sugar
2 large eggs
1 ½ teaspoons vanilla extract
1 cup plain yogurt
2 each Honeycrisp apples

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x12-inch baking dish generously.
  • Whisk flour, sea salt, baking powder, and baking soda together in a bowl. Set aside.
  • Combine walnuts, brown sugar, white sugar, salt, cinnamon, and melted butter in a bowl. Mix until walnuts and sugar are thoroughly coated with butter.
  • Cream butter and sugar together in another bowl with a spatula until well blended. Add 1 egg and whisk until mixture is smooth, 2 to 3 minutes. Whisk in second egg until thoroughly incorporated. Add vanilla extract and yogurt; whisk together. Add flour mixture to wet ingredients; whisk just until flour disappears. Do not overmix.
  • Remove cores from apples. Cut across into 1/8- to 1/4-inch slices. Stack up a few slices, make 1 cut down the center, and dice across into cubes. Add to cake batter, folding in with a spatula until just combined.
  • Spread 1/2 of the batter evenly into the bottom of the prepared baking dish. Scatter 1/2 of the crumble mixture evenly over the top. Top with the rest of the batter in dollops. Spread carefully to evenly distribute, trying not to disturb the crumbs. Top with the rest of the crumb mixture. Press crumbs into the batter very gently.
  • Bake in the center of the preheated oven until a toothpick or bamboo skewer inserted into the center comes out clean, about 40 minutes. Let cool to room temperature, about 30 minutes, before slicing and serving.

Apple crumb cake: a divine, four layer cake straight out of my mom's kitchen.

2 pounds fuji or gala apples (or other sweet apples)
4 egg yolks
3.5 ounces white sugar
1 lemon zest
10.5 ounces white flour
1 teaspoon baking soda
5.25 ounces butter
4 egg whites
5.25 ounces white sugar
5.25 ounces walnuts
3 tablespoons apricot marmalade
1/2 teaspoon vanilla extract

Steps:

  • Peel and grate apples. Squeeze them in batches to get the juice out, and then transfer to a medium sized bowl. Grind walnuts.
  • In a large bowl, combine egg yolks and sugar. Mix with a hand mixer until completely integrated. Add lemon zest and mix again. At this point turn off hand mixer, take up a wooden spatula and start adding in flour and baking soda to the mix while integrating everything together. When it toughens, sprinkle some flour on your working area, and transfer the dough onto it. Work your dough, and add the butter in until you get a smooth, tough but soft mass. Divide into two parts.
  • Take the first half of your dough and roll it out with a rolling pin until it fits the bottom of your baking pan (approximately 8.5inches x 12 inches in size). Sprinkle the pan with a little bit of flour, and transfer the dough into it. Spread grated apples over the dough evenly.
  • Make the filling by mixing egg whites until stiff. Add sugar, ground walnuts, marmalade, and vanilla extract. Continue mixing until integrated. When done, pour evenly over grated apples.
  • Heat oven to 350°F. Take the other half of your dough and grate over your cake. Place the baking pan in the oven and bake for 50 minutes. Turn around about half-way through. If it starts blushing, cover with foil and add a little bit of baking time at the end.

2/3 cup milk (warm)
3 cups all-purpose flour
2 1/2 teaspoons dry instant yeast
1/3 cup granulated sugar
1 teaspoon vanilla extract
a pinch of salt
1/3 cup butter (room temperature)
1 medium-sized egg (room temperature)
milk or water for brushing
1 cup butter
2/3 cup sugar
1 2/3 cups all-purpose flour
powdered sugar (optional)

Steps:

  • Warm the milk in the microwave or on the stove. It needs to be warm but not hot or boiling.
  • In a large mixing bowl, add the flour and the instant dry yeast (check the instructions on the package to be sure it doesn't have to be dissolved in water or milk first). Add the sugar, and then the lukewarm milk. Knead the contents of the bowl together using the spiral dough hooks of your hand mixer until everything is mixed together.
  • Then add the vanilla extract, soft butter, egg, and a pinch of salt to the bowl. Keep kneading the dough for another 5 minutes until the dough no longer sticks to the sides of the bowl. Use your hands to form it into a nice ball. If your dough is too sticky, you can add a bit more flour. If the dough is a little too dry and crumbly, add a little more milk to the mix.
  • Take a towel or a lid and place it over the bowl with the dough inside. Set the bowl in a warm place without a draft to allow the dough to rise. This should take approximately one hour.
  • Around the 55 minute mark of the dough rise timeline, get your baking pan ready by lining it with parchment paper or by greasing it.
  • Once the hour is up and the ball of dough has increased in size noticeably, remove it from the bowl. Sprinkle your countertop with flour and give the dough a quick knead with your hands. Then roll out the dough using a rolling pin to fit your baking sheet/pan. We typically use a baking pan that is around 13.5 x 9.5 inches. Once the dough is rolled to size, place the dough onto the baking sheet. Let it rest for another 15 minutes.
  • In the meantime preheat the oven to 350 degrees Fahrenheit and prepare the streusel for the topping. For this, place butter, sugar, and flour into a bowl. Using the spiral dough hooks or your hands, quickly knead the ingredients until small crumbs form. Press them together lightly with your hands, then set them aside.
  • Once the 15 minutes of rest are up, lightly brush the dough with some water or milk. This will allow the streusel to stick better.
  • Then evenly place the streusel on top of the dough.
  • Bake the cake on the middle rack of your oven for around 25-30 minutes until the crumbs are lightly golden brown.
  • Remove the cake from the oven and let it cool. You can dust the cake with powdered sugar before serving.

1/2 cup (1 stick) unsalted butter, (melted and cooled)
1/2 cup vegetable oil
2 cups (14 oz) granulated sugar
3 large eggs, (beaten)
2 teaspoons vanilla
3 cups apples, (peeled and chopped, 3-4 apples)
1 1/2 cups (7 1/2 oz )white flour
1 1/2 cups (7 1/2 oz) whole wheat flour
1 cup chopped pecans (or walnuts)
1 teaspoon table salt
1 teaspoon baking soda
1/2 teaspoon cinnamon

Steps:

  • Lightly grease a 9x13 baking pan. If you wish line the pan with parchment paper so the ends hang over the long sides of the pan.
  • Combine butter, oil, sugar, eggs, and vanilla in a large mixing bowl. Add apples to the bowl. Mix well and set aside.
  • Whisk together flours, pecans, salt, and baking soda in a medium bowl. Add dry ingredients to apple mixture. Combine together with a few swift strokes. Do not over mix.
  • Using a silicone spatula, scrape the batter into the prepared baking pan and smooth it out.
  • Put the pan into a cold oven. Set the oven to 325F. Bake for one hour or until an instant read thermometer reads 205-210F.
  • Top with powdered sugar or cinnamon sugar if desired.

1/2 c butter - room temperature
1 c sugar
2 eggs
1/2 tsp vanilla
1 3/4 c flour
1 tsp salt

2 can(s) comstock brand apple pie filling
CRUMB TOPPING
3 c flour
3 stick butter - room temperature
1 1/2 c light brown sugar
2 tsp cinnamon

Steps:

  • 1. To make the batter:
  • 2. In a large mixing bowl, cream the butter, sugar, eggs and vanilla.
  • 3. In a separate bowl, combine the flour, salt, and baking powder.
  • 4. Alternate the dry ingredients and milk into butter mixture until well blended.
  • 5. Spread batter into greased 10 x 13 inch baking pan.
  • 6. Spread two cans of apple pie filling over batter and sprinkle with the cinnamon.
  • 7. To make the crumb topping:
  • 8. Mix flour, butter, brown sugar and cinnamon with hands and shape into a ball. Pull pieces from ball and place on top of cake. Should be enough crumbs to cover the entire top of the cake. The crumbs don't need to be perfect.
  • 9. Bake for 1 hour at 350 degrees.

  • 11. Cool completely before cutting into squares. Sprinkle with powdered sugar just before serving.
