Blueberry Lemon Cream Cheese Muffins image

Blueberry Lemon Cream Cheese Muffins are the perfect way to start (or end) your day! An easy breakfast recipe that's sure to become a new favorite. Delicately moist and bursting with flavor, these muffins are topped with a refreshingly tart lemon glaze that's bound to make your mouth water.

4 oz cream cheese (room temperature)
4 tbsp unsalted butter (room temperature)
1 tbsp lemon juice
2 tbsp lemon zest
2 tsp vanilla
2 eggs (room temperature)
½ cup whole milk
2 cups all-purpose flour
⅔ cup granulated sugar
1½ tsp baking powder
½ tsp baking soda
¼ tsp salt
1 pint fresh blueberries
1/2 cup powdered sugar
2 tbsp fresh lemon juice
1 tbsp lemon zest

Steps:

  • Preheat the oven to 350F degrees.
  • Line muffin tin with cupcake liners.
  • Beat cream cheese and butter until smooth.
  • Add lemon juice, lemon zest and vanilla and continue beating until combined.
  • Add milk and eggs and beat until well blended.
  • Combine flour, sugar, baking powder, baking soda, and salt in a small bowl.
  • Gradually add flour mixture to cream cheese mixture until combined.
  • Fold in the blueberries.
  • Scoop the batter into muffin tins until about ¾ full.
  • Bake for 30 minutes or until just starting to turn golden brown.
  • Let cool slightly.

1 box white cake mix
2 eggs
1/2 cup vegetable oil
1 cup blueberries, rinsed
3/4 cup lemon juice
1 cup confectioner's sugar

Steps:

  • Preheat the oven to 350°
  • Line with parchment paper or grease a 9x9 baking dish
  • In a large bowl, beat the eggs and oil together.
  • Beat in the white cake mix.
  • Fold in the rinsed blueberries.
  • Spread evenly into prepared baking dish.
  • Bake for 35-40 minutes. Check the center with a toothpick for doneness.
  • Remove from the oven and allow to cool completely before glazing.
  • To prepare glaze, combine the lemon juice4 and the confectioner's sugar until smooth.
  • Pour over cooled cake.

Nonstick cooking spray, for pan
1/2 cup unsalted butter, chilled
3/4 cup sugar
1 1/2 cups all-purpose flour
1/2 teaspoon ground cinnamon
Pinch kosher salt
1 egg
1/2 heaping cup sour cream
1/3 cup sugar
2 tablespoons lemon juice
1 tablespoon all-purpose flour
4 teaspoons cornstarch
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
2 cups blueberries

Steps:

  • Preheat the oven to 350 degrees F. Spray an 8-by-8-inch baking pan with cooking spray. Line the pan with parchment paper so that it hangs over on two sides. Spray the parchment.
  • For the crust: In the bowl of a food processor, combine the butter, sugar, flour, cinnamon and salt. Process until the mixture starts to come together and clump, 1 minute. Remove 3/4 cup and reserve; press the remaining crust mixture evenly into the prepared baking pan. Set aside.
  • For the filling: In a medium bowl, whisk together the egg, sour cream, sugar, lemon juice, flour, cornstarch, vanilla extract and cinnamon until smooth. Mix in 1 cup of the blueberries. Pour the filling mixture over the crust, shaking the pan gently to settle the custard and berries. Pour the remaining 1 cup blueberries over the top, spreading them evenly.
  • Take the reserved crust and sprinkle it over the top of the berries, squeezing the mixture in your hands to encourage large lumps.
  • Bake for 1 hour. Let cool. Remove the bars from the pan and cut into 9 pieces. Refrigerate until ready to serve.

  • Filling: While the crust is partially baking, combine the brown sugar, flour, salt and cinnamon in a large mixing bowl and whisk until mixed together. Add the corn syrup, lemon zest, lemon juice, eggs, and vanilla and whisk until well combined. With a mixing spoon, stir in the drained blueberries and then the chopped pecans.
