HURRY-UP BLACK BEAN DIP
If you're looking for a near-instant potluck contribution, you just struck pay dirt. It would be tough to make this recipe any simpler-unless you left out the beans. A little chopping, some liquid measure, and a quick whirrrrrr of your trusty margarita-maker, and you've got a bowl of ready-to-serve puréed goodness.

- 1. Transfer one tablespoon of the red onion to a cup and set aside for the garnish
- 2. In a blender or food processor, purée the beans, remaining red onion, vinegar, orange juice, cilantro, oil, garlic, and cumin.
- 3. Transfer the dip to a bowl; add salt and pepper. Sprinkle with the reserved red onion and serve with tortilla chips and vegetables.

- Preheat the oven to 350-degrees Fahrenheit, and ensure your cream cheese and sour cream are softened.
- In a large bowl, combine the refried beans, softened cream cheese, sour cream, taco seasoning, green chiles and half of the shredded cheese.
- Using an electric mixer, beat the mixture together until smooth and creamy, about 1 minute. Spread the mixture into an 8x8" baking dish.
- Sprinkle the remaining cheddar on top. Bake the bean dip for 20 minutes, or until the edges start to barely bubble.
- Let cool slightly, and then spread store-bought pico de gallo on top before serving with tortilla chips.

HURRY-UP BLACK BEAN DIP
I love Emerald Valley Kitchens bean dips from Eugene, OR, and I decided to find my own bean dip instead of purchasing theirs. Don't be fooled by the ingredients into thinking it's too healthy to be delicious because this is good for you and tasty too! I found this recipe on epicurious.com posted by Pableaux Johnson. He takes it to potlucks because it's simple to fix. This is great unheated just the way it is, but you could also heat it in the microwave and top with a little cheese if you prefer a hot bean dip. I mixed my salt and pepper with the other ingredients instead of adding it on top before serving. If you're using canned black beans, drain and rinse them. I used black beans already prepared from my freezer.

Steps:
- Preheat your oven to 350 degrees.
- Take a 13x9 glass pan or metal pan and spread your softened cream cheese all over the bottom of the pan evenly.
- Then take your hormell chili and spread that on top of the cream cheese.
- Dice your green pepper and onion into pieces and sprinkle on top of the chili.
- Use as much of it as you want.
- At this time if you prefer jalapenos in it also then this is the time to put that in also.
- Finally put your two packages of shredded cheese on top of it and put in oven and bake for 15-20 minutes or until cheese is melted and bubblely.
