My mom often makes this potato salad for dinner and it's loved by my family.

4 potatoes, peeled and cut into eighths
salt and ground black pepper to taste
1 cucumber, thinly sliced
½ onion, thinly sliced
1 carrot, thinly sliced into rounds
1 tablespoon apple juice
⅓ tablespoon rice vinegar
2 hard-boiled eggs, chopped
5 tablespoons mayonnaise

Steps:

  • Soak potatoes in a bowl of water to draw out the bitterness.
  • Rub salt over cucumber and onion slices; squeeze out excess moisture and pat dry. Set aside.
  • Drain potatoes and place in a pot with carrot. Add enough water to cover. Season with salt. Bring to a boil; reduce heat to low and simmer until potatoes can be easily pierced with a bamboo skewer, 10 to 15 minutes. Remove carrot from the pot when tender.
  • Drain potatoes and return to the pot. Add apple juice and vinegar; mash potatoes with a wooden spatula or fork for about 2 minutes.
  • Transfer potatoes to a bowl. Add cooked carrot, cucumber, onion, and eggs. Mix in mayonnaise. Season with salt and pepper. Refrigerate until cool, 30 minutes to 1 hour. Serve in individual bowls.

This old fashioned potato salad recipe has been passed down through generations of my family. It's hands down the best potato salad recipe I've ever tried, and you're gonna love it!

5 lbs of russet potatoes
18 eggs
1 1/2 10 oz jars of Sweet Tiny Midget Pickles
1 large yellow onion
20 oz (about 2/3 of a 30 oz jar) of Miracle Whip
1/2 cup yellow mustard
1/2 cup mayo
Salt to taste

Steps:

  • Clean the potatoes and boil them with the peel on. Boil them until the peel begins to crack, that's how you'll know they're done.
  • Drain the potatoes and set them aside to cool until you can handle them.
  • Hard boil the 18 eggs, and then remove them from the water until they're cool. This step can also be done in advance if you want to save some waiting time for them to cool.
  • Peel the potatoes, then chop them into bite size pieces (about 1 inch cubes). Place the chopped potato in a very large bowl.
  • Once the boiled eggs have cooled enough to peel, chop them into small pieces. Add the chopped pieces to the potatoes.
  • Chop the onion and the pickles into very small, minced pieces. Grandma always made us do this by hand, but you can do it with a food chopper if you're pressed for time.
  • Add the pickles and the onions to the potatoes and eggs.
  • Add in and mix the miracle whip, mayo, yellow mustard, and salt and then use a large spoon to mix until it's all incorporated.
  • Cover the potato salad and place it in the fridge for 24 hours, or overnight if you waited til last minute.
  • If the potato salad seems very dry the next day, it's because the potatoes absorbed some of the liquid. Add up to half a cup more of miracle whip or mayo (whatever you prefer) to help re-moisten it.

2 cups mayonnaise
½ cup yellow mustard
1 cup chopped onion
2 tablespoons prepared horseradish
sea salt to taste
8 hard-cooked eggs, chopped
3 dill pickles, chopped
freshly ground black pepper to taste

Steps:

  • Place the potatoes in a large pot with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until tender. Drain, and place in a serving bowl.
  • Stir the onion, salt and pepper into the potatoes while they are still hot. This allows the potatoes to absorb the flavor. Allow to cool for about 20 minutes.
  • Add the mayonnaise, mustard and horseradish to the salad, and mix well. Gently stir in the eggs and dill pickles. Finish off with a generous grinding of black pepper on top. Chill for about 30 minutes before serving.

5 pounds Yukon Gold potatoes (kept whole)
1/4 cup pickle juice
4 large hard boiled eggs (peeled an chopped)
1/2 cup celery (diced small (3 small stalks))
1/3 cup sweet onion (diced small)
1/2 cup dill pickle (diced small)
2 tablespoon red bell pepper (diced small)
1/4 cup chives (chopped)
1 cup mayonnaise
1/4 cup sour cream
1 tablespoon prepared yellow mustard
1/2 teaspoon garlic powder
1/2 teaspoon celery salt
1/4 teaspoon fresh ground black pepper
1 teaspoon salt

Steps:

  • Do not peel potatoes. In a large stock pot, cover potatoes with cold water. Cover the pot and bring potatoes to a boil over high heat (could take 20 minutes or more to GET to a boil.) Once boiling begins, remove the lid. Turn down to medium and gently boil uncovered for 15 minutes. Should be able to pierce with knife but potatoes should be firm and hold their shape.
  • Drain then plunge into ice bath. Peel skins when they are cool enough to handle. Chop into bite sized pieces and place in a large bowl. Sprinkle warm potatoes with 1/4 cup pickle juice, toss to distribute. Set aside.
  • In a medium bowl, combine mayo, sour cream, mustard, garlic powder, celery salt, black pepper, and salt. Taste for seasoning, add more salt if you like. Set aside.
  • To the bowl with potatoes, add boiled eggs, celery, bell pepper, onion, pickle, and chives. Top with dressing and toss until completely coated. Cover and refrigerate for at least 2 hours (preferably overnight) to allow flavors to mingle.

1 medium red onion, chopped
3 stick celery, chopped
1 capful white vinegar
3/4 c mayonnaise (add more if too dry)

1/2 tsp pepper (add more to taste)
1 lb bacon (fried crisp/cut up)

Steps:

  • 1. Peel and cut potatoes into bite-size pieces. Boil until tender but not mushy (about 15 minutes depending on the size of chunks you cut).
  • 2. Drain potatoes and place in a mixing bowl. Mix in diced red onion and celery.
  • 3. Add mayo, vinegar, sugar, salt, and pepper. Mix well.
  • 4. Taste test to adjust spices. Add more mayo if it's too dry.

This is my favourite way to make a mayonnaise based potato salad. It is perfect in my opinion, with just the right amount of dressing. Nicely flavoured with a bit of crunch from the celery and the cucumber.

Finely chopped fresh chives, salad cress or chopped parsley (optional)
Ground paprika
2 hardboiled eggs thinly sliced
8 medium sized new potatoes, unpeeled
The juice of one small lemon
1/4 cup of vegetable oil
Fine sea salt to taste
1/2 tsp freshly ground black pepper
2 stalks of celery, washed, trimmed, and chopped
1/2 of a medium English Cucumber
4 hardboiled eggs, chopped into 1/2 inch dice
2 TBS finely chopped onion
1 cup of good quality mayonnaise
1/2 cup of coleslaw dressing
3 TBS cider vinegar
1 tsp sugar

Steps:

  • Boil the potatoes in lightly salted water, until tender just to the fork.
  • Drain well and as soon as you can handle them, peel, and cut them into 1/2 inch dice.
  • Toss in a bowl along with the lemon juice, chopped onions, oil and salt to taste. This preliminary dressing while very warm gives the potatoes extra flavour and coats them. This prevents them from absorbing too much mayonnaise later on. Allow to cool.
  • Add the black pepper, celery, chopped eggs and cucumber. Blend 1/2 cup of the mayonnaise with the salad cream, vinegar, and the sugar. Pour this over the potato salad, gently folding until all pieces are coated. Add the remaining mayonnaise only if the salad seems dry. Taste and adjust the seasoning as required. Spoon into a clean bowl and smooth the top. Lay the sliced hard boil egg over top. Cover and chill for several hours.
  • Just before serving, sprinkle with some chopped fresh chives, salad cress or chopped parsley, if using, and ground paprika. Delicious!!

1 lb shell pasta
4 new potatoes, if small use 6
4 hard-boiled eggs
15 ounces peas
1/4 cup plain yogurt
3/4 cup mayonnaise
1 large sweet onion, diced
2 carrots, chopped finely
2 stalks celery, chopped finely
1 teaspoon Dijon mustard
1 tablespoon fresh dill, finely chopped
salt and pepper, to taste

Steps:

  • Wash and peel the new potatoes than cut into cubes. Add potatoes and eggs to a dutch oven or large pot and over medium high heat cook until potatoes are just fork tender, approximately 20 minutes. (Do not let the potatoes get over cooked because they will turn to mush when making the salad.) Cook pasta according to package directions.
  • Drain pasta well and place in a large mixing bowl. When potatoes and eggs are ready drain well and set eggs in a bowl of ice water to cool. Add potatoes to mixing bowl with pasta and add remaining ingredients. Peel and chop eggs, add to bowl. Gently fold everything together, taste, and season with salt and pepper.
  • Place in refrigerator until chilled or overnight for best flavor. More mayonnaise and yogurt can be added if creamier texture is desired.

My momma is known for her salads and she makes them only on special occasions. When the holidays come around, we know our favorite potato salad will be made! The longer this potato salad sits, the better it gets. Make this one the day before so all the flavors marinate in the fridge overnight!

3 pounds Russet potatoes (about 3 large potatoes), peeled and cut into 1-inch dice
Kosher salt
6 large eggs
1 green bell pepper, seeded and roughly chopped
1/2 yellow onion, roughly chopped
2 ribs celery, roughly chopped
1 cup mayonnaise
1 tablespoon yellow mustard
1 tablespoon sweet relish or sweet salad cubes
2 teaspoons granulated sugar, plus more as needed
1 tablespoon Miss Brown's House Seasoning, plus more as needed, recipe follows
2 teaspoons roughly chopped flat-leaf parsley
Pinch sweet paprika, for garnish
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Put the potatoes to a large pot, add enough cold water to fully cover and season the water liberally with salt. Bring to a boil over high heat and cook until the potatoes are tender, about 15 minutes. Drain the potatoes, rinse with cool water and place in a large bowl to cool for at least 15 minutes.
  • Meanwhile, put the eggs in a medium saucepan and add enough cold water to fully cover. Bring to a boil over high heat and cook for 12 minutes. Transfer the eggs to an ice bath until cool enough to handle, about 3 minutes. Peel the eggs, roughly chop, transfer to a small bowl and set aside. Add the eggs to the potatoes.
  • Add the pepper, onion and celery to the bowl of a food processor and pulse until finely chopped. Transfer the mixture to the bowl with the potatoes. Add the eggs and set aside.
  • Whisk together the mayonnaise, mustard, sweet relish and sugar in a small bowl. Add the Miss Brown's House Seasoning and whisk to combine. Add the seasoned mayonnaise to the potatoes and gently toss with a wooden spoon until coated. Taste and adjust the seasoning as desired. Transfer to a large serving bowl if desired. Sprinkle with the parsley and paprika. Serve immediately or chill in the fridge overnight.
  • Stir everything together in a small bowl. Keep in an airtight container. Makes 5 teaspoons.

  • To cook hard-boiled eggs, place eggs in a pot and cover with water. Sprinkle with 1/2 teaspoon of salt. Bring to a rolling boil and then reduce heat, cover, and let sit for about 10-12 minutes. With a spoon, remove one egg and run under cold water. Peel and check for the desired doneness. Chop and slice hard boiled eggs.
  • To make dressing: in a small bowl, stir together mayo, mustard, sugar, salt, and pepper. Set aside. Pour dressing all over potatoes and gently toss to coat being careful to not break up or mash potatoes. Add hard-boiled eggs, onions, pickles, celery (optional), and fresh herbs. Check for seasoning. The potatoes will become more flavorful as they soak up the dressing in the refrigerator.
  • Cover and let chill in the refrigerator for at least 1-2 hours before serving. Garnish with sliced hard-boiled eggs and a sprinkle of Lawry's seasoned salt.
