- In a large bowl, dissolve yeast in water; let stand for 5 minutes. Add the milk, 1/2 cup sugar, oil, salt, eggs, extract and 2 cups flour; beat well. Stir in enough remaining flour to make a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch the dough down. Turn onto a floured surface, roll out into a 1/4-in.-thick rectangle. Spread with 2 tablespoons butter and sprinkle with 1/3 cup of the remaining sugar. Fold dough in half lengthwise; roll out to 1/4-in. thickness. Spread with 2 tablespoons butter and sprinkle with 1/3 cup sugar. , Fold in half widthwise; roll to 1/4-in. thickness. Spread with remaining butter and sprinkle with 1/3 cup sugar. Fold in half lengthwise; roll out to an 18x10-in. rectangle. Combine the cinnamon and remaining sugar; sprinkle half over the dough to within 1/4 in. of all edges. , Roll up jelly-roll style, starting with a short side; pinch seam to seal. Cut into 1/2-in. slices and place on greased baking sheets (four to six slices per sheet). Cover with waxed paper and flatten with palm of hand. Sprinkle with remaining cinnamon-sugar. Let stand for 30 minutes. , Bake at 400° for 12-15 minutes or until golden brown. Immediately remove from pans to wire racks to cool.

PEANUT BUTTER CRISPIES II
My aunt used to make these when I was a little girl. I think they are a nice change from marshmallow treats.

Steps:
- In a medium sauce pan, mix together sugar, peanut butter, and corn syrup. Be careful not to let it burn, or it will ruin the recipe. Stir mixture until well melted. Remove pan from heat.
- Combine warm peanut butter mixture with crisp rice cereal.
- Grease well a 9 x 13 inch pan with butter or margarine. Spread mixture in pan. Allow to cool. When mixture is no longer sticky to the touch, cut into bars.

- Preheat oven to 350°F Beat softened butter in a bowl, then add both sugars and beat for two minutes. Add egg and beat until creamy.
- Pour in melted chocolate. (**You can also use cocoa: three tablespoons of cocoa and one tablespoon of butter for every ounce of baking chocolate needed.).
- Stir in flour, baking powder and baking soda until just combined. Add oats and coconut.
- Drop slightly rounded teaspoonfuls of dough onto cookie sheets. Bake for 10 minutes and let cool briefly on the pans before removing to a storage container.

Steps:
- In an electric mixer fitted with the paddle attachment cream together sugars and shortening.
- In a seperate small bowl combine vanilla extract and eggs.
- Slowly add vanilla/egg mixture to creamed sugars.
- In a seperate larger bowl sift together flour, salt and baking soda.
- Slowly add flour mixture to electric mixer while it is running.
- Remove nuts from stove top and finely chop.
- Add nuts and oats and 1/2 cup of the chocolate chips to mixer.
- Turn off mixer and add remaining chocolate chips, mix well.
- Place dough on a piece of wax paper and form into a log. (you can divide it into as many logs as you want and freeze).
- Refridgerate until ready to bake.
- Preheat oven to 350 degrees.
- Unwrap dough and slice to desired thickness.
- Place on cookie sheet and bake 8-10 minutes, until golden brown.

Steps:
- 1.already have your cereal separated into the two bowls.
- i ususally have a small amount left in the bottom of the cereal bag.
- have 4 pieces of wax paper layed out just a little longer than a cookie sheet.
- plan of action is when the marshmallow is melted to pour 1/2 into a bowl (have a helper) then press it out between 2 sheets of wax paper.
- 2.melt stick of butter in large pot.
- start adding marshmallows 1 bag at a time until melted on medium-high heat.
- continuously stir the mixture until fully melted.
- 3. have a helper help you pour half the mix into one of the bowls and mix it up while you keep stiring. they can mix and pour it onto a piece of wax paper then press another piece down on top to flatten it.
- 4. keep stirring the mix you can add in the 3 heaping spoonfuls of peanutbutter if you'd like to try peanutbutter flavored crispies and repeat step 3. or you can leave them plain.
- 5. you can also put chocolate chips in with the cereal if you'd like chocolate chip crispies. or you can melt the chocolate and drizzle it on top of the plane crispies when your done.
- YUM very gooey!

This is my favorite holiday cookie. To make them especially festive, dip one side in holiday sprinkles before baking.

- Mix sugar, butter, egg and vanilla in a large bowl.
- In another, medium-sized bowl, mix the dry ingredients.
- Gradually add this mixture to the larger bowl, beating with a hand-held mixer.
- Cover and refrigerate for a minimum of one hour.
- Heat the oven to 375°.
- Shape the dough into 1-inch balls.
- If you want to add sprinkles, place the balls into a shallow pan, such as a pie pan, that has a layer of sprinkles on the bottom.
- Gently flatten the dough into the sprinkles using the bottom of a glass.
- If you are not using sprinkles, dip the bottom of the glass in granulate sugar.
- Line a cookie sheet with parchment paper.
- Bake until barely browned (these cookies are meant to be soft) or about 8 minutes.
- Immediately remove from the cookie sheet and lay on aluminum foil.

- Topping - Combine cinnamon, pecans and confectioners sugar and set aside.
- Preheat oven to 375 degrees.
- Cream butter and sugar, then add eggs one at a time. Add vanilla.
- Add the flour and baking powder and mix well.
- Form into small balls. Roll in topping. Place on greased cookie sheet and flatten slightly.
- Bake 8-10 minutes or until a light golden brown.
