Here's a unique way to use one of our most versatile vegetables, the potato.

2 potatoes - peeled, boiled and mashed
⅔ cup butter
1 cup white sugar
½ teaspoon baking powder
⅛ teaspoon salt
½ cup heavy whipping cream
½ cup milk
2 teaspoons lemon zest
2 tablespoons lemon juice
1 teaspoon vanilla extract
¼ teaspoon nutmeg
4 eggs, beaten
2 (9 inch) pie shell

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium mixing bowl mix sugar, baking powder, and salt, then add potatoes and butter or margarine; mix well. Gradually add whipping cream and milk, stirring until well blended. Stir in lemon rind, juice, vanilla, and nutmeg. Add beaten eggs and mix well.
  • Pour mixture into pie shells and put in preheated oven. Bake for 55 minutes or until knife inserted in center comes out clean. Best when served cold.

During World War II when meat was scarce, my mother used to feed her large family casseroles using whatever meat or fish was available. My favorite is a type of baked casserole with salmon and potato which not only tasted great, but one which satisfied her family of seven kids.

8 medium potatoes, peeled and sliced
1 medium onion, sliced
1 (14.75 ounce) can salmon, drained and flaked
4 tablespoons all-purpose flour, or more as needed
½ teaspoon salt, or to taste
½ teaspoon ground black pepper
1 cup milk
2 teaspoons salted butter, cut into small pieces

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a casserole dish.
  • Place one layer of potato and onion slices in the prepared dish. Add salmon. Sprinkle flour over top until salmon layer is covered. Sprinkle with 1/2 of the salt and pepper. Layer with remaining onion and potato slices, then sprinkle with remaining salt and pepper. Add milk and top with butter.
  • Bake, covered, in the preheated oven until golden brown, about 1 hour and 15 minutes.

I grew up in a Catholic family, when Catholics could not eat meat on Fridays. Fish and a side dish were Friday meals. One particularly favorite side-dish was this recipe. Hearty, filling and delicious! Cubed ham and finely chopped onions can be added to the potato and cheese mixture if you want more of a one-dish meal. Use American, muenster, havarti, or brie cheese. 6 potatoes, peeled and cut into chunks
¼ cup butter
¼ cup milk, or as needed
salt and ground black pepper to taste
½ cup shredded American cheese
pastry for a 9 inch double crust pie
2 teaspoons butter, melted
2 teaspoons milk

Steps:

  • Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash the potatoes with 1/4 cup butter, 1/4 cup milk, salt, and black pepper to make medium-stiff mashed potatoes; stir in the American cheese.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Fit a crust into a 9-inch pie dish, and fill with the potato mixture. Place the top crust on the pie, roll the edges together and crimp with a fork to seal. Stir the melted butter and 2 teaspoons of milk together in a small bowl, and brush the mixture all over the pie crust. Cut several vent holes in the top of the crust.
  • Bake the pie in the preheated oven until the crust is golden brown, about 45 minutes; if the edges are getting too brown, wrap them in aluminum foil.

1 pastry for a 9-inch double crust pie
4 cups peeled chopped sweet potatoes
1 ½ cups white sugar
3 eggs
⅓ cup milk
¼ cup margarine
½ teaspoon vanilla extract
½ teaspoon lemon extract
⅓ teaspoon ground cloves
¼ teaspoon ground allspice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Press the pie pastries into two 9-inch pie dishes.
  • Place sweet potatoes into a large pot and cover with water; bring to a boil, reduce heat to medium-low, and simmer until tender, 15 to 20 minutes. Drain potatoes and let cool.
  • Beat potatoes, sugar, eggs, milk, margarine, vanilla extract, lemon extract, cloves, and allspice together in a bowl until smooth; pour into the prepared crusts.

Mom's sweet potato pies are a vital part of my family's Thanksgiving. This is a recipe she inherited from her mother. The blender incorporates ingredients so well that this makes a creamy pie beyond belief. Mom prefers her sweet potato pie without any spices at all, but I usually add pinch or two of the spices listed below. Also, in lieu of the glaze, we opt for a creamy refrigerated whipped topping, but I've included glaze directions as an option.

2 unbaked pie shells
2 -2 1/2 cups cooked sweet potatoes
1 cup sugar
1 tablespoon flour
2 eggs
1 cup evaporated milk
1/4 cup margarine
1 tablespoon vanilla
1/2 teaspoon cinnamon (optional)
1/4 teaspoon nutmeg (optional)
1 pinch clove (optional)
2 tablespoons lemon juice (optional)
1 cup sifted powdered sugar (optional)

Steps:

  • Place pie shells in 350°F oven for about 5 minutes, or till just barely brown; set aside.
  • Place remaining pie ingredients in blender container and whirl till well-blended.
  • Pour equally into the 2 pie shells.
  • Place in 350°F oven; bake for 30 to 40 minutes, or till filling is set.
  • (Note: if crust begins to get too brown during cooking, use strips of aluminum foil along the crust ridges to keep from over-browning) While pie is cooking, glaze may be prepared: Place ingredients for glaze into mixing bowl and blend with electric mixer until smooth.
  • Drizzle glaze over pies while they are still warm.

3/4 cup plus 1 tablespoon sugar, divided
3-1/2 teaspoons ground cinnamon, divided
2 frozen deep-dish pie crusts (9 inches)
3 pounds potatoes, peeled and cubed
1/2 cup butter, softened
3 large eggs
1/2 cup sweetened condensed milk
1/8 teaspoon vanilla extract
3/4 cup evaporated milk
1-1/2 teaspoons ground nutmeg
Confectioners' sugar, optional

Steps:

  • Preheat oven to 350°. In a small bowl, combine 1 tablespoon sugar and 1/2 teaspoon cinnamon. Sprinkle half the mixture in the bottoms of both pie crusts; bake until lightly browned, 7-10 minutes. , Meanwhile, place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, about 10-15 minutes, stirring occasionally. Drain. , In a large bowl, mash potatoes with butter; beat until fluffy. Add eggs, condensed milk and vanilla; mix well. Stirring continuously, slowly add evaporated milk; mix until smooth. Add remaining sugar, cinnamon and nutmeg; mix well. Pour potato mixture into prepared crusts; do not over-fill. Sprinkle with remaining cinnamon sugar mixture. Bake until pie is set or until a knife inserted in the center comes out clean, about 45 minutes. Cool on a wire rack 1 hour before serving. If desired, sprinkle with confectioner's sugar.
