- 1. PREHEAT OVEN 350*
- 2. IN A MED.BOWL MIX SUGAR, BAKING POWDER,AND SALT. NOW ADD POTATOES AND BUTTER (MIX WELL).GRADUALLY ADD WHIPPING CREAM AND MILK ,STIRRING UNTIL WELL BLENDED,NOW STIR IN LEMON RIND, LEMON JUICE, VANILLA ,AND NUTMEG.ADD BEATEN EGGS AND MIX WELL.
- 3. POUR MIXTURE INTO PIE SHELLS AND BAKE IN PREHEATED OVEN FOR 55 MIN. OR UNTIL KNIFE INSERTED IN THE CENTER COMES OUT CLEAN.
- 4. SERVE COLD
OLD FASHION WHITE POTATO PIE
This was one of my Mom Mom's favorite and the whole family loved it! Great, easy dessert!

Steps:
- 1. Preheat oven at 350. Separate egg yolks from whites. Set yolks aside. Beat whites with mixer til stiff peaks form. Put this bowl in refrigerator. In lg bowl beat yolks; stir in cream, potatoes, sugar, vanilla & salt. Beat til smooth. Pour into both pie shells; sprinkle with cinnamon & nutmeg.
- 2. Wrap edges of pie with aluminum foil, covering the rim. Place on center rack of oven & baje for 25 mins. Remove pies from oven, remove foil then put back into the oven for another 15-20 mins or until crust is done. Allow to cool before serving.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium mixing bowl mix sugar, baking powder, and salt, then add potatoes and butter or margarine; mix well. Gradually add whipping cream and milk, stirring until well blended. Stir in lemon rind, juice, vanilla, and nutmeg. Add beaten eggs and mix well.
- Pour mixture into pie shells and put in preheated oven. Bake for 55 minutes or until knife inserted in center comes out clean. Best when served cold.

MOM'S TWO-CRUST POTATO PIE
I grew up in a Catholic family, when Catholics could not eat meat on Fridays. Fish and a side dish were Friday meals. One particularly favorite side-dish was this recipe. Hearty, filling and delicious! Cubed ham and finely chopped onions can be added to the potato and cheese mixture if you want more of a one-dish meal. Use American, muenster, havarti, or brie cheese. Steps:
- Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Mash the potatoes with 1/4 cup butter, 1/4 cup milk, salt, and black pepper to make medium-stiff mashed potatoes; stir in the American cheese.
- Preheat oven to 375 degrees F (190 degrees C).
- Fit a crust into a 9-inch pie dish, and fill with the potato mixture. Place the top crust on the pie, roll the edges together and crimp with a fork to seal. Stir the melted butter and 2 teaspoons of milk together in a small bowl, and brush the mixture all over the pie crust. Cut several vent holes in the top of the crust.
- Bake the pie in the preheated oven until the crust is golden brown, about 45 minutes; if the edges are getting too brown, wrap them in aluminum foil.
