PEANUT BUTTER BANANA CHOCOLATE CHIP MUFFINS
Incredibly moist and delicious Peanut Butter Banana Chocolate Chip Muffins packed with peanut butter flavor and sweet morsels of chocolate. For mornings when you just need a little chocolate.

Steps:
- Preheat the oven to 325 degrees. Peel and mash the bananas.
- Add in the egg, butter, peanut butter, brown sugar and vanilla and mix until well combined.
- Combine 1 cup of flour and remaining dry ingredients, reserving 1/4 cup of flour. Add the dry ingredients and stir just until combined. Do not overmix.
- Combine Reese's peanut butter chips, and chocolate chips in a bowl. Sprinkle remaining 1/4 cup of flour over the chips and gently coat the chips with flour.
- Add to batter and mix just until combined.
- Lightly grease a muffin tin or line with baking cups.
- Divide batter evenly among 12 cups.
- Bake muffins for 20-25 minutes or until golden brown. Let the muffins cool slightly before removing from tin. Enjoy!

BANANA CHOCOLATE CHIP MUFFINS

- Preheat oven to 350F. In a small bowl mash the bananas with a fork. Set aside.
- Combine flour, baking soda, baking powder, salt and optional cinnamon in a bowl. Stir until nicely blended.
- Cream softened butter with your electric mixer. Add sugar, eggs and mashed bananas and mix until combined.
- Add flour mixture in three additions alternating with the milk and beat until combined. Lastly, stir in chocolate chips by hand.
- Scoop batter into lined or greased pan and bake for about 25 minutes until golden brown.

Steps:
- Preheat oven to 350*.
- Stir together flour, Splenda, brown sugar, baking powder and cinnamon.
- In another bowl, combine bananas, milk, peanut butter, oil, vanilla, egg white and applesauce.
- Add the two mixtures together and stir until combined. There should be no lumps.
- Gently stir in mini chocolate chips.
- If making loaves, pour batter evenly into two sprayed 8"x 4" loaf pans. If making muffins, pour batter evenly into sprayed muffin tins, or use cupcake liners. Depending on size of tins, you will have enough batter for 15-18 muffins. If you'd like to make just one loaf of bread, you will have enough extra batter to make 6 large muffins.
- Bake bread for 50-55 minutes. Bake muffins for 20-25 minutes. Use toothpick test to check for doneness.
- Dust with powdered sugar when cool.

- Preheat oven to 325 degrees F (165 degrees C). Grease 12 muffin cups with butter or line with paper muffin liners.
- Stir sugar, oil, mayonnaise, and eggs together until creamy and light yellow. Mix in bananas until incorporated.
- Stir flour, oats, flax, wheat germ, baking soda, baking powder, and salt into banana mixture until smooth. Mix in chocolate chips and walnuts. Spoon batter into prepared pans.
- Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 25 minutes.

- In a large bowl, beat together the butter and sugar together until smooth then add the eggs, again beating until smooth. Add the sour cream, mashed bananas and vanilla. Mix together.
- Add all the dry ingredients and gently fold them into the wet ingredients, just until barely mixed. It is ok to have some streaks of flour in your finished batter. Do not over mix or you will have tough muffins. Line 12 muffin tins with paper liners and fill them to the top with the batter.
