Mom's Mashed Potato Salad image

Mashed potato salad that can be made with or without the chopped egg. This is the only kind of potato salad my dad will eat; try it and you'll see why.

6 Yukon Gold potatoes
1 small sweet onion, diced
3 hard-cooked eggs, chopped
½ cup diced celery
¼ cup chopped sweet pickles
salt and ground black pepper to taste
1 cup mayonnaise
⅓ cup sweet pickle juice
1 teaspoon prepared yellow mustard

Steps:

  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and transfer potatoes to a large bowl.
  • Mash potatoes with a potato masher. Stir in onion, eggs, celery, pickles, salt, and black pepper. Mix mayonnaise, pickle juice, and mustard in a separate bowl; pour over potatoes and mix well. Cover and refrigerate at least 1 hour before serving.

From Tyler Florence's cookbook, Tyler's Ultimate. He claims this is the best potato salad he's ever made. I made half the amount of dressing indicated and still had plenty.

2 lbs small yukon gold potatoes
2 large eggs
kosher salt
1/2 bunch scallion, sliced, white and green parts
2 tablespoons drained capers
1 cup mayonnaise
1/4 cup Dijon mustard (I used half as much)
1/4 cup finely chopped dill pickle
1/4 cup pickle juice
1 small red onion, chopped
2 tablespoons chopped fresh flat leaf parsley
1/2 lemon, juice of
fresh ground pepper

Steps:

  • Place potatoes and eggs in saucepan of cold, salted water.
  • Bring to a simmer.
  • Remove eggs with a slotted spoon after 12 minutes and let cool.
  • Continue cooking potatoes until tender, about 3 minutes longer.
  • Drain potatoes in a colander and let them cool.
  • Reserve some scallions and capers for garnish.
  • Stir together mayonnaise, mustard, pickles with juice, onions, remaining scallions and capers, parsley and lemon juice in a bowl large enough to hold the potatoes.
  • Peel the cooled eggs and grate them into the bowl.
  • Peel cooled potatoes with a paring knife.
  • Cut potatoes into chunks and toss with the dressing to coat.
  • Season with salt and pepper to taste.
  • Garnish with reserved scallions and capers.

MUSTARD MASHED POTATOES (TYLER FLORENCE)

I saw this on an episode of Tyler's Ultimate. Definitely a twist on mashed potatoes - you boil the potatoes in milk/cream instead of water, then use the liquid when mashing. Curious to see if this would work with buttermilk to save some calories. Can't wait to try it!

6 -8 yukon gold potatoes, skin on
2 garlic cloves
whole milk
heavy cream
butter
1 sprig fresh thyme
salt and pepper
2 tablespoons coarse grain mustard

Steps:

  • Scrub unpeeled potatoes, add to pot along with enough milk to cover potatoes halfway. Then add enough cream to completely cover the potatoes. Also add peeled/crushed garlic cloves and thyme. Bring to a boil and cook until tender.
  • When potatoes are done, drain them in a colander under which a large bowl has been placed. Place potatoes back into the cooking pot.
  • Mash potatoes. Add cupfuls of the hot milk/cream as you mash, until you reach desired consistency. Add a pat of butter and salt and pepper to taste. Fold in two heaping tablespoons of course-grain mustard.
  • Any leftover milk/cream can be used to "revive" your potatoes in case you end up with late dinner guests or if you have leftovers.

My mother used to make this on Easter to go with our ham and she used to make it for our get togethers whenever we were having a lot of company. We also like it at room temperature. Just do not leave it out any longer then you would regular potato salad. Served warm, it goes great with ham or fried chicken.

5 red potatoes
5 Yukon Gold potatoes
2 tablespoons butter
salt and pepper to taste
½ cup mayonnaise
½ cup prepared mustard
½ cup sour cream
1 stalk celery, finely chopped
1 red onion, finely diced
2 small sweet pickles, finely chopped
1 green bell pepper, chopped

Steps:

  • Cube potatoes, if desired you may peel them. Place potatoes in a large saucepan and cover with water. Cook over medium heat until potatoes are tender. Drain and place cooked potatoes in a large bowl.
  • Mash potatoes with butter and salt and pepper to taste. Once mashed stir in the mayonnaise, mustard and sour cream, mixing well. Stir in the celery, onion, pickles and green pepper. Serve warm or at room temperature.

4 cups mashed potatoes (good for left-overs)
1/3 cup celery & leaves, finely chopped
1/3 cup sweet pickle relish, drained well
1/3 cup sour cream
1/4 cup mayonnaise, more if needed
1/3 cup onion, finely chopped
1/4 cup half-and-half cream
2 tablespoons wine vinegar
2 teaspoons yellow mustard, to taste
3 hard-boiled eggs, separate yolks
salt
white pepper
cooking spray

Steps:

  • Separate cooked egg whites from yolks; refrigerate yolks for use when serving.
  • In large bowl, combine mashed potatoes *need not be hot*, onions, mayo, Half and Half vinegar, mustard, salt and pepper, and chopped egg whites-only.
  • Mix thorougly to blend; add additional mayo and Half & Half, if needed. Mixture should be moldable.
  • Spray mixing bowl lightly with cooking spray, sized just large enough to hold filling completely to the top.
  • Place mashed potato mixture into bowl, making sure no air holes are within.
  • Compact firmly.
  • Cover and refrigerate until ready to serve.
  • To serve: Place lettuce leaves on serving plate.
  • Run very thin bladed knife around inside of bowl to help with unmolding.
  • Carefully, plate lettuce-lined plate upside down over molded potato salad.
  • Flip and tap gently to release.
  • Using a medium-fine grater/microplane, grate the cooked egg yolks over the top of the molded salad.
  • Decorate with sliced stuffed olives, if desired.

Ready, Set, Cook! Special Edition Contest Entry: This recipe is reminiscent of a mashed potato dish my Italian grandmother made which was a favorite of my childhood. The technique is the same but I was able to be creative and change most of the ingredients to create a whole new dish! I love this recipe because the Simply Potatoes Traditional Mashed Potatoes make it soooo much easier. A yummy side dish (or a great midnight snack!

vegetable oil cooking spray
1/2 cup Italian seasoned breadcrumbs
24 ounces Simply Potatoes Traditional Mashed Potatoes
6 tablespoons butter, divided (melt 3 Tablespoons of the butter and set aside)
10 ounces frozen chopped spinach, thawed, squeezed dry
2 cups pre-shredded mozzarella cheese
12 slices bacon, cooked crisp, drained, chopped
4 ounces goat cheese, cut in 1/2 inch cubes
1/4 cup sun-dried tomato packed in oil, drained, patted dry, finely chopped
1/4 cup parmesan cheese, grated

Steps:

  • Preheat oven to 350 degrees. Spray a 13x9x2 inch casserole with vegetable oil spray. Put 1/4 cup of the breadcrumbs in the casserole, shake to coat the pan, pour out excess crumbs and reserve in a small bowl along with the rest of the breadcrumbs.
  • In a large bowl combine the 24 ounce container of Simply Potatoes Traditional Mashed Potatoes with 3 tablespoons melted butter and blend well. Stir in spinach, mozzarella cheese, bacon, goat cheese and sundried tomatoes, blend well till combined. Spoon the potato mixture into the prepared casserole.
  • Sprinkle the Parmesan cheese all over the top of the potatoes and sprinkle the remaining breadcrumbs on top of the Parmesan. Cut the remaining 3 tablespoons butter into little pieces and dot the top of the casserole with it. Bake at 350 degrees for 30 minutes or till golden.
