I Got this off of Food network's website, and like it soo much i thought I'd post it!! I like the orange idea instead of using lemons! This was on his English cooking episode. There were about 3 roast chickens listed, but this one looked and tastes the best to me!!

5 1/2 lbs whole chickens
1/2 bunch fresh oregano
1/2 bunch thyme
1/2 bunch parsley
1/4 lb butter, softened
kosher salt & freshly ground black pepper, to taste
1 orange, halved
1/2 head garlic
1 medium white onion, halved, plus 1 onion
6 slices smoked bacon
2 tablespoons flour
1 1/2 cups chicken broth
1/4 cup dry sherry

Steps:

  • Preheat oven to 425 degrees F.
  • Rinse the chicken with cool water, inside and out. Pat it dry with paper towels. Divide the herbs, keeping 1/2 of them whole. Finely chop the other half.
  • In a small bowl, mash the softened butter with the chopped herbs, until combined. Rub the herbed butter under the skin, as well as all over the outside of the chicken.
  • Season the bird all over with salt and pepper. Stuff the cavity with the orange, garlic, 1 onion, and the remaining herbs. Tie the legs together with kitchen twine to help hold its shape.
  • Place the chicken, breast-side up, in a roasting pan. Put the remaining onion into the pan, which will help color and flavor the sauce. Lay the strips of bacon across the breast of the chicken and roast for 25 minutes.
  • Remove the bacon and baste the chicken with the drippings and cook for another 25 minutes to brown the skin. The chicken is done when an instant-read thermometer reads 165 degrees F when inserted into the thickest part of the thigh (the legs of the chicken should wiggle easily from the sockets too.) Remove the chicken to a platter and let stand for 10 minutes, so the juices settle back into the meat before carving.
  • Meanwhile, remove the softened onion from the roasting pan. Tilt the pan so the drippings collect in 1 corner, skimming off as much fat as possible, and leaving the drippings.
  • Place the roasting pan on top of the stove over medium heat and take a wooden spoon to scrape up the flavor from the bottom of the pan. Stir the flour into the drippings to make a roux-like paste. Pour in the chicken broth in stages; continue to stir to dissolve the flour evenly to prevent lumps. Stir in the sherry and season with salt and pepper.
  • To serve, carve the chicken tableside and squeeze the oranges from the cavity over the meat.

We always look forward to Mom Mom's chicken at each at family gathering and we found out her secret: it's an adapted version of the oven-baked chicken recipe you find on the Bisquick box, which I am sharing with you. Simple with lots of flavor to go around and can easily be served for any occasion, any time of the year.

12 pieces chicken, skinless (mix of legs and bone-in thighs)
1 tablespoon butter
2/3 cup Bisquick
1 (2/3 ounce) package Good Seasons Italian dressing, and recipe mix (this is a 0.7 oz pkg)
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon pepper

Steps:

  • Preheat oven to 425 degrees.
  • Meanwhile, place aluminum foil on a cookie sheet; dice up the Tbsp of butter and sporadically place diced butter on foil.
  • Place sheet with butter in pre-heating oven to melt; pull out when melted (don't burn) and tilt pan to coat.
  • Stir and combine Bisquick, about 3/4 of the packet of Good Seasons (reserve 1/4), paprika, garlic powder and pepper.
  • Sprinkle chicken with 1/4 remaining Good Seasons.
  • Coat chicken with Bisquick mix; set on buttered foil.
  • Bake for 35 minutes; turn chicken and bake for another 15 minutes (or longer if you like it a bit more crispy).

CRISPY BAKED ROSEMARY-GARLIC CHICKEN LEGS

12 chicken legs
2 cloves garlic, minced
4 stems rosemary, leaves picked and roughly chopped
4 cups panko bread crumbs
Kosher salt and freshly ground black pepper
2 eggs
2 cups milk
3 cups all-purpose flour
Extra-virgin olive oil
Lemon wedges, for serving

Steps:

  • Preheat the oven to 350 degrees F. Put a sheet tray in the oven to preheat.
  • Wash and trim the chicken legs of any excess fat. Mix the garlic, rosemary and panko together in a shallow rimmed dish and season well with salt and pepper. Alternately, crush the garlic and rosemary with some olive oil and salt in a mortar and pestle.
  • Crack the eggs into a similar dish, add the milk and whisk to combine. Season with salt and pepper, to taste. In another dish add the flour and season with salt and pepper, to taste.
  • Take the chicken legs and 1 at a time, dredge in the flour, then the egg wash and then coat well with the rosemary-garlic panko bread crumbs. Lay the chicken legs out on a tray lined with parchment paper, as you work. Refrigerate the legs for about 15 to 20 minutes for the breading to set.
  • Remove the hot sheet tray from the oven and drizzle with a good amount of olive oil. Arrange the chicken legs carefully on the tray, spacing them out evenly (the chicken will sizzle when added to the hot oil). Roast until the chicken legs are golden and crispy, about 35 to 40 minutes Remove the chicken from the oven to a serving platter. Season with salt and serve with lemon wedges.

Place the cloves onto a piece of tin foil and pour about a teaspoon of olive oil on top. Cover with the foil. Place in the oven and roast for 45 minutes, or until the garlic is golden brown and soft.   • To the same pan, add the butter. Once melted add the flour and whisk for about 1 minute or until bubbly. Slowly pour in the milk, whisking as you add the milk. Stir in the cream, nutmeg, salt and pepper. Bring the sauce to a gentle boil. Place the egg yolk in a small bowl and whisk in about 1/3 cup of the warm milk mixture. Whisk the egg yolk mixture into cream sauce until smooth. Cook until thickened, about 5 minutes. Remove from the heat and stir in the parmesan cheese.
  • Add the chicken and thawed spinach to the sauce. Make sure the chicken is immersed in the sauce. Sprinkle the top of the dish with grated parmesan cheese and fresh parsley. Place in the preheated 400 degree oven for 20-15 minutes or until lightly browned on top.
