CRANBERRY JELLO SALAD

This Cranberry Jello Salad is always on our holiday table. The combination of tart and sweet go perfectly together. This recipe is a must for every table.

2 (6 oz) packages raspberry jello
2 cups boiling hot water
2 cups cold water
2 14 oz cans whole berry cranberry sauce
2 20 oz cans crushed pineappple ((NOT pineapple chunks))
1 cup walnuts (toasted and chopped)

Steps:

  • In a large measuring cup, mix the 2 (6 oz) packages of raspberry Jell-O powder with 2 cups of boiling water using a whisk. Then add 2 cups of cold water and whisk until everything is dissolved.
  • In a large bowl, combine the 2 (14 oz) cans of whole berry cranberry sauce, 2 (20 oz) cans of crushed pineapple (juice included), and 1 cup of toasted chopped walnuts. Then pour in the jello and stir until well mixed in.
  • Pour the cranberry jello into either a large pan with raised edges or individual cups. Refrigerate overnight until it sets.

1 can (8 ounces) crushed pineapple, in it's own juice
1 package (3 ounces) raspberry flavored gelatin
1 can (14 ounces) whole berry cranberry sauce
1/4 cup chopped celery
1/4 cup chopped nuts

Steps:

  • Drain pineapple, saving the juice. Add enough water to the juice to total 1-1/4 cups of liquid. In a saucepan, bring the liquid to a boil.
  • Remove from the heat and stir in the gelatin until it's dissolved.
  • Break up the cranberry sauce with a fork and stir it into the gelatin mixture.
  • Cool until the mixture begins to thicken and then stir in the crushed pineapple, celery and nuts.
  • Pour into a mold and chill until set. (For best results first with non-stick spray so that the jello comes out easily.)

1 package (3 ounces) cranberry or raspberry gelatin
1 cup boiling water
1 can (14 ounces) whole-berry cranberry sauce
LEMON LAYER:
1 package (3 ounces) lemon gelatin
1 cup boiling water
3 ounces cream cheese, softened
1/3 cup mayonnaise
1 can (8 ounces) crushed pineapple, undrained
1/2 cup heavy whipping cream, whipped
1 cup miniature marshmallows
2 tablespoons chopped pecans

Steps:

  • In a small bowl, dissolve cranberry gelatin in boiling water; stir in cranberry sauce until blended. Transfer to an 8-in. square dish. Refrigerate until set., In another bowl, dissolve lemon gelatin in boiling water. Beat cream cheese and mayonnaise until smooth; stir into the lemon gelatin with the pineapple. Refrigerate until slightly thickened, about 2 hours., Fold the cream, marshmallows and pecans into cream cheese mixture. Spread over cranberry layer. Refrigerate for 4 hours or until set.

2 (3 ounce) packages raspberry flavored Jell-O® mix
1 cup white sugar
2 cups boiling water
1 ½ cups cold water
1 pound cranberries
1 orange
1 ½ cups crushed pineapple, drained
2 cups seedless red grapes, halved
1 ½ cups diced apples

Steps:

  • Add the sugar to the gelatin. Stir in the boiling water and stir until the gelatin is dissolved. Stir in the cold water or the pineapples juice. Chill until gelatin is thick.
  • Finely grind the cranberries and the orange in food processor or run through the meat grinder.
  • Add the ground cranberry mixture, drained crushed pineapple, grapes and cubed apples to the thickened gelatin. Pour mixture into one 9 x 13 inch pan or a large bowl. Refrigerate overnight before serving.

This is a recipe my grandmother used to make for Christmas and Thanksgiving when I was a kid. It sure is good! Also good for potluck dinners.

1 (3 ounce) envelope unflavored gelatin
1 1/2 cups cold water, divided
4 cups fresh or frozen cranberries
1 1/2 cups sugar
1 1/2 cups dry red wine or 1 1/2 cups cranberry juice
1 (6 ounce) package lemon gelatin
1 1/2 cups diced celery
3/4 cup chopped walnuts
1 cup sour cream
3/4 cup mayonnaise
celery leaves (to garnish)

Steps:

  • Soften the unflavored gelatin in 1/2 cup cold water; set aside.
  • In a 3-quart saucepan, combine cranberries, sugar and wine or cranberry juice; heat to boiling, stirring occasionally. Reduce heat and simmer 5 minutes, stirring frequently.
  • Remove from heat. Add lemon gelatin and softened unflavored gelatin; stir until dissolved. Stir in remaining water. Chill until mixture is partially set.
  • Fold in celery and walnuts. Pour into a greased 8-cup mold; cover and chill until set.
  • Meanwhile, combine sour cream and mayonnaise; refrigerate until ready to serve.
  • To serve, unmold gelatin and top each serving with a dollop of the sourcream dressing. Garnish with celery leaves.
  • NOTE: In the picture, this is molded in a ring shape with a small bowl set in the center holding the sourcream dressing.

1 teaspoon unflavored gelatin
1 tablespoon plus 1 cup cold water, divided
1 cup boiling water
1 package (3 ounces) raspberry gelatin
3 cups (12 ounces) fresh or thawed frozen cranberries, divided
2 medium apples, cut into wedges
1 medium navel orange, peeled
1 cup sugar
1/2 cup chopped walnuts
1/2 cup finely chopped celery

Steps:

  • Sprinkle unflavored gelatin over 1 tablespoon cold water; let stand 1 minute. Add boiling water and raspberry gelatin; stir until gelatin is dissolved, about 2 minutes. Stir in remaining cold water. Refrigerate until thickened, about 45 minutes., Pulse 2-1/3 cups cranberries, apples and orange in a food processor until chopped. Transfer to a small bowl; stir in sugar. Stir fruit mixture into thickened gelatin. Fold in walnuts, celery and remaining whole cranberries., Coat a 10-in. fluted tube pan, an 8-cup ring mold or two 4-cup molds with cooking spray; pour in gelatin mixture. Cover and refrigerate overnight or until firm. Unmold onto a platter.

2 boxes (4-serving size each) Jell-O™ lemon-flavored gelatin
2 tubs (10 oz each) frozen cranberry-orange sauce, thawed
1 cup fresh raspberries

Steps:

  • Lightly brush 6 1/2-cup ring mold or 1 1/2-quart decorative bowl with vegetable oil.
  • In large bowl, pour boiling water on gelatin; stir until gelatin is dissolved. Stir in cranberry-orange sauce. Fold in raspberries. Pour into mold or bowl. Cover and refrigerate at least 6 hours but no longer than 24 hours.
  • To unmold salad from ring mold, dip mold into hot water for 10 seconds. Place serving plate upside down onto mold; turn plate and mold over, then remove mold. Refrigerate salad until serving. If using decorative bowl, do not unmold; scoop salad from bowl to serve.

2 cups boiling water
1 teaspoon finely grated orange rind
1 (14 ounce) can crushed pineapple with juice, drained well,reserving juice
2 tablespoons lemon juice
1 cup fresh cranberries, stemmed,sorted,washed and chopped
1/2 cup finely diced celery
1/2 cup walnuts, coarsely chopped

Steps:

  • Dissolve gelatin in simmering water in large heatproof bowl.
  • Stir in orange rind.
  • Pour reserved pineapple juice into 2-cup measure.
  • Add lemon juice and enough cold water to total 2 cups.
  • Stir into gelatin mixture.
  • Refrigerate 1 to 1 1/2 hours or until consistency of unbeaten egg whites.
  • Fold in cranberries, celery, walnuts and pineapple.
  • Pour into lightly oiled 1-quart fluted ring mold or crown mold.
  • Chill at least 25 hours or until very firm.
  • When ready to serve, loosen edge of mold with thin knife.
  • Dip mold quickly in hot water to loosen salad, then invert onto serving plate.
  • Cut in slim wedges to serve.

My grandmother made this salad every Thanksgiving. It is delicious even without its creamy topping. This side dish is so yummy, I sometimes make it even when it's not Thanksgiving! Depending on your salad's shape, you can spread the topping in a layer over the Jell-O; or if you use a ring mold, put the topping in the center. Alternately, you could serve the topping in a bowl on the side, so it's optional.
