2 cups sweet potatoes (1 lb.)
3 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon fresh ground nutmeg
1/2 teaspoon salt
1 cup unsalted butter (2 sticks)
2 cups sugar
4 large eggs
1 teaspoon vanilla extract
1 cup powdered sugar, sifted
2 tablespoons molasses
1/4 teaspoon fresh ground nutmeg

Steps:

  • Bake the sweet potatoes at 375° for 1 hour or until tender.
  • Allow potatoes to cool, then peel, mash, and set aside in a bowl.
  • Preheat oven to 350°; thoroughly grease and flour a 10-inch tube pan, or spray it with baking spray.
  • In a bowl, mix together the flour, baking powder, baking soda, nutmeg, and salt; set aside.
  • In a big bowl, cream the butter and sugar until light and fluffy, stopping once or twice to scrape down the sides of the bowl.
  • Add the eggs one at a time, beating well after each addition.
  • Add the vanilla and sweet potatoes, and mix until the batter is combined (expect that the batter may look curdled at this point).
  • With the mixer on low speed, gradually add in the flour mixture.
  • Mix to just incorporate.
  • Scrape the batter into the prepared pan and bake for 45-50 minutes or until the cake springs back when pressed lightly and a pick comes out clean.
  • Cool the cake in the pan or a wire rack for 20 minutes.
  • Run a thin knife around the edge to loosen the cake, and then carefully invert it onto the rack to cool completely.
  • The glaze-combine the powdered sugar, molasses, and nutmeg in a small bowl.
  • Mix until the sugar is completely absorbed and the glaze is smooth.
  • Spoon the glaze over the cake while it is still warm and serve.

Slather this "spiced-up" butter on your baked sweet potatoes! The butter can be prepared up to 1 week in advance, and can be doubled, make this topping well in advance, it will save you time. If you have a any leftover butter, it can be frozen. This amount of butter should be enough for 5-6 medium baked yams depending on the amount used on each potato. This is wonderful on baked sweet potatoes!

1/2 cup butter, room temperature
3 tablespoons light molasses
1 teaspoon cinnamon
1 teaspoon orange zest
1 teaspoon chili powder
1/4-1/2 teaspoon salt
1/8 teaspoon cayenne pepper

Steps:

  • Mix the first 6 ingredients in a bowl using an electric mixer until fluffy; cover and chill (soften slightly before using if desired).
  • After the yams are baked cut slits across center of each yam.
  • Press ends together toward the center to expose the flesh.
  • Spoon 2-3 tablespoons of spiced butter into each.
  • Pass the spiced butter around at the table.

4 large sweet potatoes, peeled and cut into 1-inch cubes
6 tablespoons Crisco® Pure Canola Oil, divided
15 fresh sage leaves
⅓ cup molasses
¼ teaspoon ground cinnamon
⅛ teaspoon ground red pepper
Salt to taste
⅓ cup coarsely chopped pecans

Steps:

  • Heat oven to 375 degrees F. Line 2 baking sheets with foil. Coat sweet potatoes with 3 tablespoons oil. Place on prepared baking sheets. Bake 28 to 32 minutes until fork tender.
  • Heat remaining 3 tablespoons oil in large skillet over medium-high heat. Add sage leaves. Cook 1 to 2 minutes or until edges begin to brown. Remove with slotted spoon.
  • Add sweet potatoes to skillet. Cook 2 minutes over medium-high heat. Add molasses, cinnamon and red pepper. Cook 2 to 3 minutes, stirring occasionally, until molasses thickens. Season with salt. Place in serving dish. Top with crumbled sage leaves and pecans.

1/2 cup (1 stick) unsalted butter, room temperature
3 tablespoons mild-flavored (light) molasses
1 teaspoon ground cinnamon
1 teaspoon grated orange peel
1 teaspoon chili powder
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
6 9- to 10-ounce yams (red-skinned sweet potatoes)

Steps:

  • Using electric mixer, beat first 7 ingredients in medium bowl until fluffy. (Can be prepared 1 week ahead. Cover and chill. Bring to room temperature before using.)
  • Preheat oven to 350°F. Line large baking sheet with heavy-duty foil. Using small, sharp knife, make one 1/2-inch-deep lengthwise slit in each yam, leaving 1 inch of yam uncut at each end. Place yams on baking sheet. Bake yams until tender, about 1 hour 15 minutes.
  • Cut slits across center of each yam. Press ends toward center to expose flesh. Transfer yams to platter. Spoon 1 tablespoon spiced butter into each. Pass remaining spiced butter separately.
