NEWFOUNDLAND MOLASSES RAISIN BREAD
A classic Newfoundland recipe that everyone's Mom or Nan made back in the day. It's often enjoyed at the Holidays and is a favourite for morning toast with gobs of melting butter.

Steps:
- In a small bowl, stir the sugar into the lukewarm water and then sprinkle the yeast over the top. Let stand without stirring for 10 minutes.
- In a large mixing bowl or the bowl of an electric mixer that has a dough hook, stir together 3 cups of the flour along with the salt. When the yeast is ready, stir it add it to the flour and salt along with the butter, molasses, warm milk and beaten eggs.
- Using a wooden spoon or the regular paddle of your electric mixer, mix slowly for 4-5 minutes until the mixture is smooth with no lumps. If using an electric mixer, switch to the dough hook at this point and begin to slowly incorporate the remaining flour. You may need to use a little more or less flour than the recipe details to bring your dough to a proper consistency that is not too sticky. This is not unusual.
- If not using an electric mixer, keep mixing in the flour gradually until a soft dough forms that leaves the sides of the bowl.
- Add the raisins at this point and continue to knead until the raisins are evenly distributed in the dough.
- Turn the dough out onto a flour-dusted counter top or breadboard to knead. Knead the dough for an additional 5-10 minutes by hand.
- Place the dough in a large bowl cover the dough with a damp tea towel. Leave it to rest and rise for two hours. Punch the dough down and knead it for a few minutes by hand before letting it rest for another 10 minutes.
- Grease 4 medium loaf pans. 9 x 5 inches at the top or similar dimensions. Divide the dough into 12 equal portions. Form each portion into a ball. I use a kitchen scale for this purpose, taking the total weight of the dough and them dividing by 12.
- Place 3 balls of dough in each prepared loaf pan. Cover with a clean tea towel and allow the dough to rise until it is about 2 inches above the rim of the pan, about 2-3 hours depending on room temperature. Molasses bread generally takes quite a bit longer to rise/proof than white bread.
- Bake at 350 degrees F for 40-50 minutes depending on the size of the pans that you are using. The top and bottom crust should have good colour.
- When baked, turn the loaves out onto a wire rack to cool. Brush the tops with melted butter if desired to soften the top crust.

OATMEAL RAISIN MOLASSES BREAD
DH loved the bread his grandmother always made. This is the closest we ever got to it. Use a bread machine for the dough and bake in the oven.

- Place oats, molasses, butter, and salt into the bread maker bowl; add the boiling water.
- Measure 1/4 teaspoon sugar into a small cup and set aside. Pour remaining sugar into the oat mixture and stir. Let mixture cool to about 100 degrees F/38 degrees C, about 20 minutes.
- Pour warm water into the reserved sugar in the small cup; add yeast.
- Pour bread flour atop the oat mixture. Pour yeast mixture over the flour.
- Select Dough setting and press start. Check your owner's manual to see how long the kneading lasts, so you can add raisins to the dough 5 minutes before it finishes kneading. Let the bread maker run the full dough cycle, about 1 hour, though it will depend on your machine.
- Grease 2 bread pans.
- Turn dough out onto a lightly floured surface. Punch down dough, but do not knead. Separate into two loaves and place in prepared pans; cover each with a damp towel and allow to rise for about 1 hour.
- Preheat oven to 350 degrees F (175 degrees C).
- Bake in preheated oven until the top is golden brown and the bottom of loaf sounds hollow when tapped, 15 to 20 minutes.

MOLASSES RAISIN BREAD
This is a common recipe here in Newfoundland. There's nothing like homemade raisin bread. I got this recipe from Newfoundland site. It did not call for cinnamon, but raisin bread is not the same without the cinnamon.The recipe says it makes 3 loaves but I think it could make 4.Making 3 tends to yield large loaves.

- Grease 3 loaf pans with margarine.
- Dissolve yeast in 1 cup lukewarm water in a large bowl and add 2 tsp sugar.Let sit for about 5 minutes.
- To the yeast mixture,add remaining water(3 cups), 3/4 cup molasses, 1/4 cup melted margarine,vanilla,cinnamon,1 tbsp salt and remaining 1/2 cup sugar(minus the 2 tsp).Mix until smooth.
- Add the 12 cups of flour mixing after each addition. Add the 2 1/2 cups of raisins. Place dough onto a lightly floured surface. (I just do the kneading in the bowl itself).
- Knead the dough until it is smooth and elastic (about 12-15 minutes).
- Keeping the dough warm, grease a large mixing bowl with margarine. Place the dough in the bowl. Cover the bowl with saran wrap or a dish towel and let the dough rise in a warm place until it doubles in size (about an hour) (After an hour, if you touch the dough, the indentation should remain. At that point you know it has risen enough).
- Punch down the dough and divide it into three even parts. Take each part and divide it into thirds. Shape each of the nine pieces of dough into a ball, folding the edges in under. Place three of the balls in each of the 3 pans. Let rise until doubled, about 1 hour.
- Heat oven to 375° F.Place the pans on the lower rack. Bake until loaves are golden brown, about 60 minutes (it only took mine 30 minutes in a convection oven). Remove bread from pans and brush the tops with margarine. Place on wire racks to cool.
- Cooking time does not include rising time.

SARAH'S MOLASSES BROWN BREAD
This easy traditional molasses brown bread recipe is ready in three hours (including rising time). If you're new to yeast bread, this is the best beginner recipe ever.

- In a small bowl dissolve sugar in the 1 cup of warm water and sprinkle over the yeast. Leave for 5-10 minutes.
- In a large bowl mix molasses, rolled oats, butter and salt.
- Add the 1 cup boiling water, whisk, and then add the 1 cup cold water.
- Stir in yeast mixture.
- Add flour gradually and scrape dough onto a floured surface to knead in the final cup of flour.
- Cut dough in half and place in two large bread pans that have been well greased or lined with parchment paper.
- Cover each plan with a dishtowel and set in a warm place to rise until almost double in size (about 1 1/2 hours).
- Remove dishtowels and bake at 325 F for about an hour
- When ready, remove from oven and let cool about five minutes before removing from pans to cool.

- In a large bowl, combine the water and oats; let stand for 30 minutes. Add the molasses, butter and salt. In a small bowl, dissolve yeast in warm water; add to oat mixture. Stir in enough flour to form a soft dough. Stir in raisins and nuts. , Turn onto a lightly floured surface; knead until smooth and elastic, about 8 minutes. RAISIN BROWN BREAD
This is a very good bread to have with baked beans, or just on it's own. This recipe can also be used to make rolls.

- Combine boiling water, oats, shortening, brown sugar, salt, and molasses. Allow to cool.
- Stir 1/2 cup warm water and 1 teaspoon white sugar until sugar is dissolved. Sprinkle yeast over this mixture, and proof while oats are cooling.
- Add 3 cups of warm water to the cooled oat mixture. Stir in yeast. Begin stirring in flour 1 cup at a time until it begins to get hard to stir. Dredge raisins in flour, and mix with cinnamon; mix into the dough. Turn onto a lightly floured surface, and knead in enough flour to make a soft but not sticky dough. Cover. Let rise for 1 to 2 hours in a warm place, or until dough doubles in size.
- Divide dough into 5 parts. Shape loaves, and place into greased 9 x 5 inch loaf pans.
- Bake in a preheated 375 degree F (190 degree C) oven for 20 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake an additional 20 minutes. Cool on wire racks.

MOLASSES GOLDEN RAISIN BREAD

- Add all the ingredients except the raisins to the breadmaker and run on the dough cycle, for my breadmaker this is the order given and the dough cycle lasts 90 minutes. Note: I like to mix the warm water, milk and molasses and "proof" the yeast in it for about 10 minutes before adding the remaining ingredients.
- When the dough cycle has finished start it again, and add the raisins, let it run for 5 to 10 minutes to mix all the raisins in and then stop it.
- Make dough into a smooth loaf and place in a greased 9" x 5" loaf pan.
- Cover with plastic wrap and let raise until doubled.
- Bake in a preheated 350F oven about 35-45 minutes, loaf should be golden and sound hollow when tapped.

- Start by melting the butter and heating the milk. Once melted and heated, remove from burner and set aside to cool.
- Next, measure whisk the eggs in a small bowl and set aside. Measure out one cup of molasses and set aside.
- Fetch a glass 2-cup measuring cup and fill it with hot water. Let it sit for a minute or so. This is to temper the glass. Otherwise, the cold glass will cool the lukewarm water too rapidly.
- Poor the hot water out of the measuring cup and add the lukewarm water. Add the sugar and stir until the sugar is dissolved. Add the yeast and stir two or three times. Set the mixture aside for 10 minutes.
