CHEWY GINGER MOLASSES COOKIES

Chewy Ginger Molasses Cookies image

These Chewy Ginger Molasses Cookies are easy to make, super-soft and chewy, and irresistibly delicious. Feel free to halve this recipe if you would like a smaller batch!

Provided by Ali

Time 25m

Number Of Ingredients 11

1 1/2 cups unsalted butter, softened to room temperature (not melted*)
1 cup granulated (white) sugar
1 cup packed brown sugar
1/2 cup unsulphured molasses
2 eggs
4 1/2 cups (639 grams) all-purpose flour
4 teaspoons baking soda*
1 tablespoon ground ginger
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon salt

Steps:

  • In a medium bowl, whisk together flour, soda, cinnamon, cloves, ginger and salt. Set aside.
  • Using a separate mixing bowl, either with a stand mixer or a hand mixer, cream together the softened butter and sugars on medium-high speed until the mixture is light and fluffy and a pale yellow color, about 2 minutes, scraping down the sides occasionally as needed. Mix in the eggs (one at a time) and molasses, and beat on medium-low speed until each is combined. Gradually add in the dry ingredient mixture and beat until it is evenly incorporated.
  • Transfer the dough to an airtight container and refrigerate for at least 2 hours, or until the dough is completely chilled.
  • Preheat oven to 350°F. Line a sheet pan with parchment paper; set aside.
  • Roll the dough into small balls, about 1-inch in diameter. Fill a separate small bowl with sugar, and roll each ball in the sugar until it is completely coated. Place dough balls on the prepared baking sheet.
  • Bake for about 8-10 minutes, until the cookies begin to slightly crack on top. (They will crack more while cooling.) Remove from the oven and let cool for 4-5 minutes. Then transfer the cookies to wire racks to cool completely.
  • Serve warm and enjoy, or store in a sealed container for up to 4 days. Or freeze for up to 3 months.

BEST EVER GINGER MOLASSES COOKIES (BETTER THAN STARBUCKS!)

Best Ever Ginger Molasses Cookies (Better than Starbucks!) image

These Best Ever Ginger Molasses Cookies are crispy on the outside, chewy on the inside and perfectly flavoured with ginger!

Provided by Chrissie Baker (thebusybaker.ca)

Categories     Dessert

Time 1h20m

Number Of Ingredients 11

1 1/4 cup unsalted butter (at room temperature)
2 cups white sugar
2 eggs
1/2 cup molasses
4 cups all purpose flour
1/2 tsp salt
4 tsp baking soda
2 tsp ground cinnamon
1 tsp grated fresh ginger (or powdered ginger)
1/2 tsp ground cloves
1/3 cup white sugar for rolling

Steps:

  • Add the butter to the bowl of your stand mixer fitted with the paddle attachment. Cream the butter on medium high speed until it is soft and creamy and the colour begins to turn pale (use a hand mixer if you wish).
  • Add the sugar and beat on medium high speed for 2 minutes, scraping down the sides of the bowl a few times.
  • Beat in the eggs on medium high speed one at a time, scraping down the bowl after each addition.
  • Beat in the molasses and scrape down the bowl to ensure everything is evenly combined.
  • In a separate bowl, combine the flour, baking soda, grated ginger, cinnamon, cloves and salt. Whisk these ingredients together to they're combined and dump the mixture into the bowl of the stand mixer with the butter mixture.
  • Combine the butter mixture and the dry ingredients on low speed just until no streaks of flour remain. You'll have to scrape down the sides of the bowl a few times to make sure everything is incorporated.
  • Cover the dough with plastic wrap and chill in the fridge for one hour.
  • After one hour has passed, preheat your oven to 350 degrees Fahrenheit.
  • Remove the dough from the fridge and shape it into about 36 balls with your hands, rolling each ball of dough in the white sugar and placing it on a baking sheet prepared with some parchment paper. Remember to space the cookies out appropriately...this recipe makes about 3 dozen cookies so you'll likely need to bake 3 or more sheets of cookies.
  • Bake each sheet of cookies for 10-11 minutes at 350 degrees Fahrenheit.
  • When you remove the baking sheet from the oven, let the cookies cool on the baking sheet until they've cooled almost completely. This will help them achieve that soft and chewy texture as they continue to bake on the inside even after they've been removed from the oven.

When they were done I threw one to my dog. They are now his favorite treat of all. Hopefully, you will love this recipe as much as we do!

GINGER MOLASSES COOKIES RECIPE

Ginger Molasses Cookies Recipe image

Chewy in the center, crispy on the edges, and perfectly spiced, these gingerbread cookies are certain to become a new holiday favorite.

Provided by Jessie Sheehan

Categories     Dessert

Time 1h57m

Number Of Ingredients 13

2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon kosher salt
1 tablespoon ginger
1 teaspoon cinnamon
Optional: 1/4 teaspoon white pepper
3/4 cup unsalted butter (melted)
1 cup dark brown sugar (packed)
1 large egg
1 large egg yolk
1/2 teaspoon pure vanilla extract
1/4 cup molasses
Granulated sugar, for rolling

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F. Line 2 cookie sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and white pepper, if using.
  • In a large bowl, whisk together the melted butter and sugar until smooth.
  • Add the egg and yolk one at a time, whisking after each addition.
  • Add the vanilla and molasses and whisk until smooth.
  • Add the dry ingredients to the wet ingredients and gently fold with a flexible spatula to combine. Place the dough in the refrigerator until it has a scoopable texture, or about 20 to 30 minutes.
  • Scoop the dough into 1 1/2 tablespoon balls using a small ice cream scoop or measuring spoons.
  • Roll each ball in granulated sugar and place on the prepared cookie sheets, about 12 balls per sheet. Place the sheets in the freezer to firm up for about 30 minutes to an hour. This will prevent the cookies from spreading when baked.
  • Roll the cookie balls in granulated sugar again for extra sparkle. Bake for about 12 minutes until the tops are cracked and the cookies are slightly puffy. Once removed from the oven, flatten each cookie lightly with a spatula. Serve warm or cold.

1/4 teaspoon kosher salt
1 cup dark brown sugar, lightly packed
1/4 cup vegetable oil

granulated sugar, for rolling cookies

  • With the mixer still on low, slowly add the dry ingredients to the bowl and mix on medium speed for 2 minutes. Add the crystallized ginger and mix until combined.
  • Scoop the dough with 2 spoons or a small 1" ice cream scoop. With your hands, roll each cookie into a 1 3/4-inch ball and roll in sugar. Then flatten them lightly with your fingers and place them on sheet pans. Sprinkle tops with additional sugar. Bake for exactly 13 minutes. The cookies will be crackled on the top and soft inside. Let the cookies cool on the sheets for 1 to 2 minutes, then transfer to wire racks to cool completely.
