RED CABBAGE MOJO SLAW



Red Cabbage Mojo Slaw image

Cuban Mojo sauce is made with tons of garlic, fresh orange juice, and lots of oregano and cumin. Here, we use it as a dressing for a zesty, spicy red cabbage slaw that's perfect for serving as a side dish or as a topping for barbecue sandwiches.

1 medium red cabbage (about 2 lb), shredded
1 bunch cilantro, leaves and stems minced (about 1 cup)
1 large carrot, shredded (about 1 cup)
1 tablespoon orange zest
8 cloves garlic, minced
1/2 cup fresh orange juice (about 3 medium oranges)
1/2 cup fresh lime juice (about 4 medium limes)
1 teaspoon dried oregano or 1 tablespoon fresh minced oregano
1 teaspoon ground cumin
Salt and pepper, to taste
1/3 cup extra-virgin olive oil

Steps:

  • In a large bowl, toss together the cabbage, cilantro, carrot and orange zest until well mixed. Set aside.
  • In the basin of a food processor or a blender, combine the garlic, orange juice, lime juice, oregano, cumin, salt and pepper. Pulse together until the garlic is finely chopped.
  • With the food processor or blender running on low, slowly pour in the olive oil until well combined.
  • Pour dressing over the cabbage mixture and toss to coat. Taste and season with more salt and pepper as necessary. Refrigerate for at least 15 minutes before serving. Yields about 1 cup per serving.

1 pint rum
1 pint cherry brandy
1 (12-ounce) beer
1 (12-ounce) Coke can
1 (12-ounce) 7-Up can
12 ounces orange juice
12 ounces pineapple juice

Steps:

  • Mix rum, brandy, beer, coke, 7-Up, orange juice and pineapple juice in a container that holds about 1 gallon. Serve over ice. Can also add fruit slices if you like.

I just served this at our NYE 2007 party.. I can't even lie and say it was a success for all - only the women drank this.. but the punch bowl was pretty much licked dry :) I found this recipe on a bartending website...Enjoy! Serves "12"... For ice: Use a bundt pan and add mint leaves and fresh cranberries - fill with 1/4 cup water. Freeze once frozen add more cranberries and mint fill pan with water and use for pretty ice set-up in your bowl (not necessary - just presentation).

4 cups light rum
1/2 cup lime juice
4 cups sparkling water
1/2 cup sugar
1/2 cup water
1/2 cup of fresh mint

Steps:

  • Start by boiling the water and sugar.
  • Stir constantly until dissolved.
  • Take off heat.
  • Add washed and clean mint.
  • Leave mint in for 15 minutes.
  • Strain mint and refrigerate liquid.
  • Hour before party.
  • Use punch bowl.
  • Add ice (see above).
  • Combine rum, lime juice, water and syrup in bowl.
  • Serve in glasses garnished with mint sprig and lime wedge.

¼ cup extra-virgin olive oil
3 limes, zested and juiced
1 orange, zested and juiced
6 cloves garlic, finely chopped
1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon ground cumin
1 pound large shrimp - peeled, deveined, and butterflied
2 tablespoons extra-virgin olive oil

Steps:

  • Combine 1/4 cup extra-virgin olive oil, lime juice and zest, orange juice and zest, garlic, oregano, salt, black pepper, and cumin in a bowl. Add shrimp, cover, and place in the refrigerator to marinade for 4 to 6 hours.
  • Remove shrimp from the marinade. Heat 2 tablespoons extra-virgin olive oil in a large skillet. Add shrimp and cook until pink, 4 to 7 minutes. Remove shrimp from skillet and set aside.
  • Pour marinade into the skillet, bring to a boil, and simmer until slightly thickened, 5 to 8 minutes. Serve shrimp with marinade sauce on the side.

This chicken is fall-off-the-bone tender. Allow enough time to marinate the chicken thighs, the longer the better. I serve the thighs over white rice and spoon some sauce over chicken. I also serve additional sauce on the side.

¾ cup freshly squeezed orange juice
½ cup freshly squeezed lime juice
½ cup extra-virgin olive oil
¼ cup chopped fresh cilantro
6 cloves garlic, pressed
2 medium oranges, zested
1 medium lime, zested
2 teaspoons dried oregano
1 ½ teaspoons salt
1 teaspoon ground black pepper
1 teaspoon ground cumin
2 bay leaves
4 (6 ounce) bone-in chicken thighs

Steps:

  • Combine orange juice, lime juice, olive oil, cilantro, garlic, orange zest, lime zest, oregano, salt, pepper, cumin, and bay leaves in a large resealable bag. Add chicken thighs, coat with marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for at least 6 hours or overnight. Flip the bag over occasionally and rub over chicken thighs to evenly distribute marinade.
  • Place chicken and marinade in a slow cooker. Cook on Low until chicken is no longer pink at the bone and the juices run clear, 4 to 5 hours. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
