MOJITO FRUIT SALAD
With lovely cocktail flavours and a bit of booze, this fruit salad is definitely for the grown-ups

- In a very clean pestle and mortar, bash most of the mint leaves with the finely grated lime zest. Add the sugar, a good lug of rum and the lime juice, then mix again gently. Have a taste and add a touch more sugar if you think you need to, but bear in mind the fruit may be quite sweet.
- Toss the fruit together in a bowl with a little of the mojito mixture, then spread it all out on a big plate. Spoon the rest of the mixture over the top, decorate with a few torn-up mint leaves and serve.

MOJITO FRUIT SALAD
Steps:
- In a small bowl, add the sugar and mint leaves. Muddle the mint leaves into the sugar (pressing/crushing/rubbing the leaves into the sugar to release the mint flavor). Remove the mint leaves. Stir the lime juice and rum (if using) into the sugar to create a mojito dressing. Set aside.
- In a large bowl, gently mix together all of the fruits. Drizzle the mojito dressing over the fruit mixture and gently combine the dressing with the fruit. Cover the bowl and refrigerate at least 1 hour.
- Before serving, gently combine the fruit with the dressing one more time.

Steps:
- Mix the watermelon, grapes, cantaloupe, strawberries, and kiwi in a bowl with a tight-fitting lid; top with the blueberries.
- Stir the mint, sugar, and lime juice together in a bowl, crushing the mint with the back of a spoon while mixing to extract flavors; pour over the fruit mixture. Seal the bowl with lid and refrigerate at least 1 hour.
- Just before serving, gently flip the sealed bowl several times to coat the fruit with the dressing.
