With lovely cocktail flavours and a bit of booze, this fruit salad is definitely for the grown-ups

1 bunch fresh mint, leaves picked
3 limes, finely grated zest and juice of
2 tablespoons light brown sugar
white rum, to taste
¼ large watermelon, peeled and cut into chunks
2 ripe mangoes, stoned and flesh scooped out with a spoon
1 ripe pineapple, peeled, cored and cut into chunks

Steps:

  • In a very clean pestle and mortar, bash most of the mint leaves with the finely grated lime zest. Add the sugar, a good lug of rum and the lime juice, then mix again gently. Have a taste and add a touch more sugar if you think you need to, but bear in mind the fruit may be quite sweet.
  • Toss the fruit together in a bowl with a little of the mojito mixture, then spread it all out on a big plate. Spoon the rest of the mixture over the top, decorate with a few torn-up mint leaves and serve.

1 tablespoon granulated sugar
5 sprigs fresh mint, leaves torn in half & stems discarded
3 tablespoons fresh lime juice
1 tablespoon rum (optional)
1 cup seedless watermelon, balled
1 cup seedless grapes
1 cup cantaloupe, balled
1 cup strawberries, hulled and quartered
1 cup kiwi, peeled and quartered
1 cup fresh blueberries

Steps:

  • In a small bowl, add the sugar and mint leaves. Muddle the mint leaves into the sugar (pressing/crushing/rubbing the leaves into the sugar to release the mint flavor). Remove the mint leaves. Stir the lime juice and rum (if using) into the sugar to create a mojito dressing. Set aside.
  • In a large bowl, gently mix together all of the fruits. Drizzle the mojito dressing over the fruit mixture and gently combine the dressing with the fruit. Cover the bowl and refrigerate at least 1 hour.
  • Before serving, gently combine the fruit with the dressing one more time.

1 cup cubed seeded watermelon
1 cup seedless grapes
1 cup cubed cantaloupe
1 cup hulled and quartered strawberries
1 cup peeled and quartered kiwi
1 cup fresh blueberries
3 sprigs fresh mint
2 teaspoons white sugar
3 tablespoons fresh lime juice

Steps:

  • Mix the watermelon, grapes, cantaloupe, strawberries, and kiwi in a bowl with a tight-fitting lid; top with the blueberries.
  • Stir the mint, sugar, and lime juice together in a bowl, crushing the mint with the back of a spoon while mixing to extract flavors; pour over the fruit mixture. Seal the bowl with lid and refrigerate at least 1 hour.
  • Just before serving, gently flip the sealed bowl several times to coat the fruit with the dressing.

1 small honeydew melon (diced or balled using a melon baller)
2 cups green grapes, halved if large
2 kiwi fruits, quartered and sliced
1 cup cucumber, seeded, quartered and sliced (optional)
1 lime, both zest and juice of
7 -8 mint leaves, cut into chiffonade
6 ounces lime flavor yogurt (I used 1 container of Wallaby Organic Key Lime Yogurt)

Steps:

  • In a bowl, place all the fruits, lime juice and zest, and mint.
  • Add yogurt and mix.
  • Infuse love and serve!
