1 (3 1/2) pound boneless pork butt, trimmed of excess fat and cut into big chunks
¾ cup chicken broth
½ cup orange juice
¼ cup lime juice
¼ cup lemon juice
1 onion, cut into big chunks
1 jalapeno pepper, halved
1 head garlic, cloves separated and peeled
1 ½ teaspoons salt
1 teaspoon dried oregano
½ teaspoon ground black pepper
½ teaspoon ground cumin
½ teaspoon smoked paprika
2 bay leaves

Steps:

  • Combine pork, chicken broth, orange juice, lime juice, lemon juice, onion, jalapeno, garlic, salt, oregano, black pepper, cumin, paprika, and bay leaves in a slow cooker. Stir to combine.
  • Cover and cook on Low until pork shreds easily with a fork, 8 to 10 hours.

4 1/2 cups fresh orange juice, divided
1 1/4 cups fresh lime juice, divided
1 orange, zested
1 lime, zested
1/2 cup finely chopped fresh oregano, divided
12 cloves garlic, coarsely chopped
1/2 cup olive oil
1 bone-in pork shoulder (about 4 to 6 pounds), trimmed of excess fat
Salt and freshly ground black pepper
Mojo Dipping Sauce, recipe follows
Plantains with Rum and Brown Sugar, recipe follows
8 cloves garlic
1 serrano chile, chopped
3 tablespoons chopped cilantro leaves
Salt
1/2 cup orange juice
1/4 cup lime juice
1/4 cup extra-virgin olive oil
4 tablespoons unsalted butter
1/2 cup light brown muscavado sugar
3 ripe plantains, peeled and sliced on the bias into 1/2-inch-thick slices
1/2 cup dark rum

Steps:

  • Combine 4 cups of the orange juice and 1 cup of the lime juice and zest in a large saucepan over high heat and reduce to 2 cups. Remove from the heat and stir in the remaining orange juice and lime juice add a few cloves of garlic and 1/4 cup of the oregano. Let cool to room temperature.
  • Using a paring knife, make small slits over the entire surface of the pork and rub the garlic into the slashes. Whisk together the oil and remaining 1/4 cup of the oregano in a large roasting pan, add the pork and turn to coat, cover and let marinate in the refrigerator for at least 4 hours and up to 24 hours.
  • Preheat the oven to 425 degrees F.
  • Remove the pork from the refrigerator 30 minutes before roasting. Season the pork with salt and pepper and cook for 30 minutes. Reduce the heat to 375 degrees F and continue roasting, basting with the marinade during the last 30 minutes of roasting until golden brown and an instant-read thermometer inserted into the center reaches 150 degrees F. Remove from the oven, baste with any remaining glaze, tent loosely and let rest 15 minutes before slicing.
  • Serve the pork with the Mojo Dipping Sauce and the Plantains with Rum and Brown Sugar.
  • Using a mortar and pestle, mash the garlic, serrano, cilantro and a few pinches of salt until it becomes a paste. Add the orange juice, lime juice and oil and stir to combine.
  • Heat butter in a large saute pan over high heat. Add the sugar and cook until melted. Add the plantains and cook until soft and heated through. Remove pan from the heat, add the rum, return to the heat and cook until the alcohol has reduced.

2 large onions, quartered
12 garlic cloves
1 bottle (18 ounces) Cuban-style mojo sauce and marinade
1/2 cup lime juice
1/2 teaspoon salt
1/4 teaspoon pepper
1 bone-in pork shoulder butt roast (5 to 5-1/4 pounds)
MOJITO SAUCE:
3/4 cup canola oil
1 medium onion, finely chopped
6 garlic cloves, finely chopped
1/3 cup lime juice
1/2 teaspoon salt
1/4 teaspoon pepper
Additional chopped onion and lime wedges, optional

Steps:

  • Place onions and garlic in a food processor; process until finely chopped. Add mojo marinade, lime juice, salt and pepper; process until blended. Pour half of the marinade into a large resealable plastic bag. Cut roast into quarters; add to bag. Seal bag and turn to coat. Refrigerate 8 hours or overnight. Transfer remaining marinade to a small bowl; refrigerate, covered, while marinating meat., Drain pork, discarding marinade in bag. Place pork in a 5-qt. slow cooker coated with cooking spray. Top with reserved marinade. Cook, covered, on low 8-10 hours or until meat is tender., For sauce, in a small saucepan, heat oil over medium heat 2-1/2 to 3 minutes or until a thermometer reads 200°. Carefully add onion; cook 2 minutes, stirring occasionally. Stir in garlic; remove from heat. Stir in lime juice, salt and pepper., Remove pork from slow cooker; cool slightly. Skim fat from cooking juices. Remove meat from bone; discard bone. Shred pork with two forks. Return cooking juices and pork to slow cooker; heat through., Transfer pork to a platter; serve with warm mojito sauce, stirring just before serving. If desired, sprinkle pork with chopped onion and serve with lime wedges.

A traditional Cuban roasted pork recipe that is very simple, yet packed with tons of flavor! There is nothing to this pork except an amazing marinade, but it is honestly some of the best meat I've ever put in my mouth. Just look at that crust!

3/4 cup extra-virgin olive oil
1 tablespoon orange zest
3/4 cup fresh orange juice
1/2 cup fresh lime juice
1 cup cilantro (finely chopped)
1/4 cup lightly packed mint leaves (finely chopped)
8 garlic cloves (minced)
1 tablespoon minced oregano (2 teaspoons dried oregano)
2 teaspoons ground cumin
Kosher salt and pepper
3 & 1/2 pounds boneless pork shoulder (in one piece*)

Steps:

  • If you have a food processor: Add the orange juice, cilantro leaves, mint leaves, and smashed (not minced) garlic cloves, and pulse until everything is finely chopped. Add this mixture to a ziplock bag, along with the rest of the oil, zest, lime juice, oregano, and cumin.
  • If you don't have a food processor: In a large ziplock bag, combine olive oil, orange zest, orange juice, lime juice, chopped cilantro, chopped mint, minced garlic, oregano, and cumin. Shake it around a bit to mix it up, then add the pork shoulder.
  • Place the zipped up bag in a baking dish, and put it in the fridge overnight, or several hours at least.
  • Preheat oven to 425 degrees F. Place a wire rack (I used a cooling rack) over a rimmed baking sheet.
  • Place the pork on the rack and discard the marinade. Salt and pepper the pork well.
  • Roast the pork for 30 minutes. It should be lightly browned.
  • Turn the oven down to 375 degrees F. Roast for another 1 hour and 20-30 minutes, or until a meat thermometer reads 160.
  • Transfer to a cutting board, cover with aluminum foil and let rest at least 20 minutes.
  • Carve against the grain and serve.

1 boneless pork shoulder roast (4 to 5 pounds)
2 teaspoons salt
2 teaspoons each oregano, ground cumin, paprika and pepper
1 bunch fresh cilantro, divided
2 medium onions, halved and sliced
1/4 cup canned chopped green chiles
4 garlic cloves, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
2/3 cup orange juice
1/2 cup lime juice
16 sandwich buns, split
Barbecue sauce and pickle chips

Steps:

  • Cut roast in half. Combine the salt, oregano, cumin, paprika and pepper; rub over pork. Place in a 4- or 5-qt. slow cooker., Mince cilantro to measure 1/4 cup; set aside. Trim remaining cilantro, discarding stems. Add the whole cilantro leaves, onions, chiles and garlic to the slow cooker. Combine the broth, orange juice and lime juice; pour over roast. Cover and cook on low for 7-9 hours or until meat is tender., Remove roast; cool slightly. Skim fat from cooking juices; set aside 3 cups juices. Discard remaining juices. Shred pork with 2 forks and return to slow cooker. Stir in minced cilantro and reserved cooking juices; heat through. Spoon 1/2 cup meat onto each bun. Serve with barbecue sauce and pickle chips.

1 (4-pounds) pork shoulder or pork butt ((bone-in or boneless)
1 1/2 teaspoons salt
1 teaspoon ground black pepper
3/4 cup orange juice, freshly squeezed
1/2 cup lime juice, freshly squeezed
Zest of 1 orange
Zest of 1 lime
1/2 cup olive oil
8 cloves garlic, chopped finely
2 teaspoons dried oregano
2 teaspoons ground cumin
1/4 cup chopped cilantro ((lightly packed))

Steps:

  • Using a paring knife, make a few slits all over the surface of the pork. (See Note 1)
  • Place the pork roast in the slow cooker and add the rest of the ingredients. Make sure the pork gets coated with the marinade.
  • Cover and cook on high for 5 - 6 hours or on low for 8 or until tender.
  • At this point, the pork is fully cooked and can be served with the cooking juices or you can make a quick sauce (see Note 2)
  • To crisp up the top, carefully remove the pork from the slow cooker and place it onto an aluminum foil lined baking sheet. Bake on a preheated 400 degrees F oven for about 15 to 20 minutes or until nicely browned.
  • Remove from the oven and let it rest for 10 minutes before serving. You will be able to shred the meat with a couple of forks. Yes, it will be that tender!
  • Serve with the remaining juices from the slow cooker or sauce. (See Note 2)

To make it easy I subbed limes and oranges, using both the juices and the zest. Serve with black beans and white rice for a complete meal. Plan ahead because this roast is marinated from 6 hours to overnight.

1 ½ teaspoons salt
1 teaspoon ground black pepper
¾ cup freshly squeezed orange juice
½ cup freshly squeezed lime juice

Steps:

  • Score fat side of the pork in a crosshatch pattern, cutting about 1/8 inch deep. Season with salt and pepper. Set aside.
  • Combine orange juice, lime juice, olive oil, cilantro, garlic, orange zest, lime zest, bay leaves, oregano, and cumin in a large resealable bag. Add pork butt and marinate in the refrigerator for at least 6 hours. Flip the bag over occasionally and rub over roast to evenly distribute marinade.
  • Place roast and marinade in the slow cooker. Cook on Low until meat is fork-tender, 7 to 8 hours.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Transfer pork into a roasting pan, fat-side up. Broil until lightly browned and the skin has crisped, 4 to 5 minutes.

  • Cut the pork into four equally sized pieces. In a well-oiled skillet over medium heat, cook the pork in batches as needed until it is fully browned on both sides, about 7 – 10 minutes per side. Add the browned pieces to the stainless steel insert of the Instant Pot, making sure they sit below the max fill line.
  • Add all of the remaining ingredients for the pork except the bay leaves to a wide mouth Mason jar or blender pitcher. Blend until completely smooth in the jar with an immersion blender or using your blender.
  • Nestle the bay leaves in with the pork and pour the marinade over the top. Close the Instant Pot lid and set the cook time for 60 minutes at high manual pressure with the “keep warm” feature set to “off”. Once the cooking time is complete, let the pork natural release for 30 minutes, then manually release the very little remaining pressure.
  • Use tongs or a slotted spoon to transfer the cooked pork to a plate carefully, since it will be very tender and likely to break up as you attempt to remove it from the cooking liquid. Let the meat rest for 10 minutes or so, until cool enough to handle. (I like to use that time to make the extra mojo dipping sauce). Using gloved hands or two forks, gently pull apart the pork until it is in chunks or as shredded as you like, transferring it to a mixing bowl as you go.
