juice of 1 lime
1 tsp granulated sugar
small handful mint leaves, plus extra sprig to serve
60ml white rum
soda water, to taste

Steps:

  • Muddle the lime juice, sugar and mint leaves in a small jug, crushing the mint as you go - you can use the end of a rolling pin for this. Pour into a tall glass and add a handful of ice.
  • Pour over the rum, stirring with a long-handled spoon. Top up with soda water, garnish with mint and serve.

12 mint sprigs, or spearmint, 8 roughly broken apart
6 tablespoons fresh lime juice
4 tablespoons sugar
Club soda
4 slices lime

Steps:

  • Place ice in beverage shaker then add in the rum, 8 broken up mint sprigs, lime juice and sugar. Shake well and serve over ice in a high ball glass. Top off each glass with a splash of club soda.
  • Garnish each with a slice of lime and a sprig of mint.

  • CHURN (stir) with bar spoon and then FILL glass with more crushed ice
  • TOP with splash of soda, briefly stir and serve

2 parts Bacardi Carta Blanca
1 whole lime, sliced
1 bunch of mint leaves
2 heaped bar spoons caster sugar
1 dash of soda water
ice, cubed & crushed

Steps:

  • 1. Put the four lime wedges into a glass, then add the sugar and muddle (squish everything together) to release the lime juice
  • 2. Put the mint leaves on one hand and clap. This bruises the leaves and releases the aroma. Rub the mint leaves around the rim of the glass and drop them in. Use a muddler, bar spoon (or even a rolling pin) to gently push the mint down into the lime juice 3. Half fill the glass with crushed ice and pour in the Bacardi Carta Blanco. Stir the mix together until the sugar dissolves 4. Top up with crushed ice, a splash of the soda water and garnish it with a sprig of mint

6 to 8 fresh mint leaves
2-3 ounces club soda (divided; to taste)
1 lime (cut in half)
2 ounces light rum
Garnish: mint sprig

Steps:

  • Gather the ingredients.
  • In a highball glass, add the sugar, mint leaves, and a splash of the club soda.
  • Muddle just enough to dissolve the sugar and release the flavor of the mint.
  • Squeeze the juice from the 2 halves of lime into the glass. Drop 1 squeezed half into the glass if you like.
  • Add the rum and stir well.
  • Fill the glass with ice cubes and top with club soda.
  • Garnish with a mint sprig. Serve and enjoy.

30 ml (1 oz) Citrus Vodka
60 ml (2 oz) White Rum
15 ml (1/2 oz) Lemon Juice
15 ml (1/2 oz) Sugar Syrup
5 + 1 Mint Sprigs
1 cup Crushed Ice

Steps:

  • Directions:Add lemon juice, sugar syrup and 5 mint sprigs in martini shaker. Muddle mint sprigs to release its essence oils.Fill up 2/3 of cocktail shaker with crushed ice and pour white rum and vodka over it. Shake well until completely chilled.Strain and pour mixed drink into chilled martini glass.Drop mint leaves, lime wedge and few pieces of ice, gently stir and serve

This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

1 oz. Grand Marnier

Two dashes Angostura bitters

Steps:

  • First chill a 10-ounce martini glass. Then, in a 16-ounce pint glass, build the lime and orange with 16 mint leaves. Muddle until mint is aromatic and citrus are juicy. Shake vigorously with fresh ice until shaker is frosted. Add rum, Grand Marnier and simple syrup and then strain into chilled martini glass. Finish with bitters. Float mint leaf on top.

1 cup vodka, chilled
1/4 cup fresh lime juice (from 2 to 3 large limes)
1 cup club soda, chilled

1 cup sugar
1 cup water
1 packed cup fresh mint leaves

Steps:

  • In a pitcher, combine the Simple Syrup, vodka, lime juice, and club soda. Pour into ice-filled glasses and garnish with mint sprigs.
  • In a small saucepan, over medium heat, combine the sugar, water, and mint leaves. Bring to a boil, reduce the heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool for 20 minutes. Strain before using, pressing on the mint leaves to extract as much syrup as possible.
