1 cup cubed seeded watermelon
1 cup seedless grapes
1 cup cubed cantaloupe
1 cup hulled and quartered strawberries
1 cup peeled and quartered kiwi
1 cup fresh blueberries
3 sprigs fresh mint
2 teaspoons white sugar
3 tablespoons fresh lime juice

Steps:

  • Mix the watermelon, grapes, cantaloupe, strawberries, and kiwi in a bowl with a tight-fitting lid; top with the blueberries.
  • Stir the mint, sugar, and lime juice together in a bowl, crushing the mint with the back of a spoon while mixing to extract flavors; pour over the fruit mixture. Seal the bowl with lid and refrigerate at least 1 hour.
  • Just before serving, gently flip the sealed bowl several times to coat the fruit with the dressing.

2 limes
1 1/2 lb assorted melons, cut into 1-inch cubes (about 5 cups)
1/3 cup sugar
1/3 cup dark rum, if desired
3 tablespoons finely chopped fresh mint leaves
12 bamboo skewers (5 or 6 inch)

Steps:

  • Grate 2 tablespoons peel from limes. Cut each lime in half crosswise; squeeze halves over small bowl to remove 6 tablespoons juice.
  • Place melon cubes in 1-gallon resealable food-storage plastic bag. Sprinkle lime peel and pour lime juice over melon. Add sugar, rum and mint. Seal bag; turn to coat melon.
  • Refrigerate at least 1 hour to blend flavors but no longer than 24 hours. To serve, thread 4 or 5 melon cubes on each skewer. Discard marinade.

1/2 cup light rum
2 tablespoons lime juice
1 teaspoon grated lime zest
2 cups each cantaloupe, honeydew and seedless watermelon balls or chunks
2 cups cubed fresh pineapple
3 mint sprigs
Fresh mint leaves, optional

Steps:

  • In a small saucepan, combine sugar and water; cook and stir over medium heat until sugar is dissolved. Remove from heat. Stir in rum, lime juice and zest. Cool completely., In a large bowl, combine melons, pineapple and mint sprigs. Add rum mixture; toss to coat. Refrigerate, covered, overnight., Discard mint sprigs. Spoon fruit with syrup into serving dishes. If desired, top with mint.

¾ cup fresh lime juice
½ cup plus light rum
2 tbsp. light rum
½ cup chopped fresh mint
6 tbsp. mint syrup
1 tbsp. vegetable oil
1 tbsp. coarse kosher salt
6 about 5 lb., halves with skin and bones chicken breast
3 large quartered lengthwise limes
fresh mint sprigs

Steps:

  • Whisk lime juice, 1/2 cup rum, and next 4 ingredients in bowl.
  • Place chicken in resealable plastic bag.
  • Pour marinade over; seal bag.
  • Turn bag to distribute marinade.
  • Chill 4 hours, turning bag twice.
  • Place lime quarters in shallow bowl.
  • Pour remaining 2 tbsp. rum over, tossing to coat.
  • Let stand at room temperature.
  • Prepare barbecue (medium heat).
  • Grill chicken until cooked through, about 15 minutes per side.
  • Transfer to platter.
  • Grill limes until soft and slightly charred, about 5 minutes.
  • Garnish platter with mint sprigs.
  • Squeeze grilled limes over chicken and serve.
  • Garnish with grilled pineapple slices cut into star shapes, if desired.

2 tablespoons garlic, chopped
1/4 cup onion, chopped
1 cup fresh orange juice
1/4 cup fresh lime juice
1 small chipotle pepper, chopped (optional)
1/4 cup olive oil
2 teaspoons kosher salt
1 1/2 teaspoons black pepper
1 teaspoon ground cumin
1 teaspoon dried oregano
1 1/2 teaspoons fresh cilantro, chopped

Steps:

  • Mix together the garlic, onions, orange juice, and lime juice in a bowl.
  • Heat the olive oil in a large saucepan til just smoking.
  • CAUTION: slide the contents of the bowl into the hot oil - be very careful because the liquid could splatter. You might want to use oven mits.
  • Simmer for 5 minutes to soften the onions and garlic. Season the marinade with the rest of the ingredients.
  • CAUTION: Pour everything into a blender (remove lid for hot air to release) or food processor and pulse 3 times to blend (another alternative is to use an immersion blender). Which ever method you use, just use caution with the hot liquids.
  • Pour into a glass container and cool to room temperature; cover and refrigerate.
  • Mojito Marinade keeps for up to 2 weeks.

8 mint leaves
1 Tbsp cane sugar (10 g)
1 shot white rum (1.5 fl oz or 50 mL)
¼ cup fruit of choice (mango, red berries, and passion fruit all work well) (20 g)
A few ice cubes
½ cup club soda (120 mL)
½ lime, juiced (optional)

Steps:

  • Muddle: Add mint leaves to the glass and gently muddle to release oils*. Add sugar, rum, and fruit, muddling again to roughly break down the fruit.
  • Serve: Add ice then top with club soda, optionally squeezing in the juice of half a lime (if it suits the fruit you're using).

1 tablespoon chopped fresh cilantro

Steps:

  • Mix together the garlic, onions, orange juice, and lime juice in a bowl. Heat the olive oil in a large saucepan til just smoking. Now cover up your arms and put some potholder mitts on your hands because you're about to do something that is contrary to good cooking practice but produces great flavor release. Slide the contents of the bowl into the hot oil - be very careful because the liquid will splatter. Simmer for 5 minutes to soften the onions and garlic. Season the marinade with the rest of the ingredients. Pour everything into a blender or food processor and pulse 3 times to combine.
