your own pastry for a 2 crust =9 inch pie
1/4 c butter, melted
1/2 c sugar
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
dash of salt
10 c peeled and thinlly sliced apples
1/2 c molasses
1/4 c water
3 Tbsp melted butter

Steps:

  • 1. Roll out your pastry to a 15x11 inch rectangle, brush with some of the 1/4 inch cup of melted butter.Fold in half. Brush with more butter, fold again and seal the edges. Repeat rolling again,brushing with butter and folding. Chill pastry. Mix together the sugar,cinnamon, nutmeg and salt, toss it with the apple slices., and place in a 13x9x2 inch baking dish. Combine molasses, water, and the 3 Tablespoosof melted butter. Pour over the apples. Roll pastry to a 15x11 inch rectangle. Place over apples, turn edges in and flute. Bake at 400 for 10 minutes. Reduce heat to 325 and bake 30 minutes more. Remove from oven and "DOWDY" the crust by cutting through the crust and apples with a sharp knife.. Return pandowdy to oven for 10 minutes more. Serve warm. Serves 6-8

This recipe produces a very red, shiny candied apple. You can substitute a drop of cinnamon oil for the candies. After the apples are cooled, you can wrap them in colored plastic wrap and tie shut with curling ribbon. Makes a nice Halloween party treat.

8 apples
3 cups white sugar
½ cup white corn syrup
½ cup water
8 cinnamon red hot candies
1 teaspoon red food coloring

Steps:

  • Insert a wooden craft stick into the bottom of each apple. Butter a baking sheet and set aside.
  • Combine sugar, corn syrup and water in a heavy saucepan over medium heat. Heat, without stirring, to 270 to 290 degrees F (132 to 143 degrees C), or until a small amount of syrup dropped into cold water forms hard but pliable threads. Remove from heat and stir in candies and food coloring until just mixed.
  • Holding each apple by its stick, quickly twirl in syrup, tilting pan to cover apple. Lift out of syrup, turning to allow drips to adhere to apple. Place apples on prepared baking sheet to cool completely.

10 apples (use strongly flavored apples, such as Winesap or Mackintosh)
1 cup sugar
1 cup corn syrup
10 wooden popsicle sticks

Steps:

  • Wash apples, remove stems and replace with popsicle stick pushed halfway into the apple.
  • Combine sugar and corn syrup in a deep pan and stir slowly over low heat until thoroughly dissolved.
  • Let boil to 300F on candy thermometer or until a small quantity becomes brittle when dropped into cold water.
  • Remove pan from heat and place over boiling water (to keep the candy from hardening too quickly).
  • Dip apples in the candy syrup and twirl in a circular motion until completely covered.
  • Place on a buttered pan with the sticks upright and permit to cool.

6 1/2 cups granny smith apples, peeled and chopped (about 2 pounds)
1 1/4 cups apple cider
3/4 cup brown sugar, packed
3/4 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger

Steps:

  • Combine apples and cider in a large saucepan or Dutch oven. Bring to a boil; cover, reduce heat, simmer 40 minutes or until tender. Place apple mixture in a blender or food processor; process until smooth.
  • Combine pureed apple mixture, sugar, and remaining ingredients in pan; bring to a boil. Reduce heat, and simmer, uncovered, 25 minutes or until mixture is thick, stirring frequently. Cool. Store butter in an airtight container in refrigerator up to 2 months.

30 small red apples
5 cups white sugar
½ cup golden syrup
1 ½ cups mineral water
2 teaspoons black currant syrup

Steps:

  • Place lollipop sticks or wooden craft sticks into each apple at the stem end. Set aside.
  • In a heavy saucepan, mix together the sugar, golden syrup and water. Bring to a boil, then reduce the heat to medium and continue to cook until the mixture reaches 300 to 310 degrees F (149 to 154 degrees C), or until a small amount of syrup dropped into cold water forms hard, brittle threads. This will take a good 45 minutes!
  • Remove the sugar mixture from the heat and stir in the black currant syrup. Quickly dip all of the apples, holding them by the stick. You can let them cool by inserting the other end of the stick into a thick sheet of foam board. If that is not available, set the coated apples onto waxed paper or aluminum foil. Make sure they don't touch each other.

Cinnamon candies give these treats a more sinister bite than your average candied apple.

2 cups granulated sugar
1/2 cup light corn syrup
1/2 cup cinnamon candies
8 tart apples, such as Granny Smith, stems removed
15 drops red food coloring

Steps:

  • In a small saucepan set over medium heat, combine sugar, corn syrup, and 1/2 cup water. Gently stir with a fork just until sugar is dissolved. Raise heat to medium-high and bring to a boil.
  • Add cinnamon candies to pot and continue boiling, washing down the sides of the saucepan with a wet pastry brush occasionally to prevent sugars from crystallizing.
  • When mixture registers 302 degrees (hard crack) on a candy thermometer, remove from heat and stir in food coloring. Let stand until candy stops boiling and settles in bottom of saucepan, 1-2 minutes.
  • Line a rimmed baking sheet with foil and coat with nonstick cooking spray. Insert candy apple sticks or wooden craft sticks into stem end of apples. Carefully tilt pan and dip apples into candy, swirling to coat all sides. Allow excess candy to fall back into saucepan; transfer apples to prepared baking sheet to cool and harden.

6 medium apples, peeled and quartered (3 pounds)

Steps:

  • Place the apple juice, sugar, cinnamon and cloves in a blender; cover and process until blended. Adding 3-4 apple pieces at a time, cover and process until smooth. , Pour into a saucepan. Bring to a boil. Reduce heat; cover and cook over low heat for 1 hour, stirring occasionally. , Uncover and cook 1 to 1-1/2 hours longer or until thickened. Store in airtight containers in the refrigerator.
