WILD RICE CRANBERRY BREAD
A delicious hearty yeast bread full of holiday flavours. Cranberries, wild rice and rosemary are combined to create one flavour packed slice. This bread will remind you of a holiday feast and will be perfect for those beloved leftover turkey sandwiches.

- Thoroughly cook the wild rice the day before and let it sit in the refrigerator overnight. Pull out of the fridge an hour before you want to start baking, so it reaches room temperature.
- The day you want to bake, start by gently mixing together a half cup of the warm water with the yeast and two teaspoons of sugar. Let this proof for about 10 minutes.
- In a large bowl, using a wooden spoon mix together the yeast mixture, remaining water, sugar, salt, shortening oil, molasses and four cups of flour. Mix until just combined. Stir in another three cups of flour, wild rice, cranberries and rosemary. You may need to add a bit more flour if the dough is sticky. You're looking for a tacky feel here.
- Spread a cup of flour onto a flat surface making a large well. Turn the dough out into the well and knead for about 7-10 minutes or until the dough is elastic and smooth. You may have to add another 1 to 1 1/2 cups of or more to reach this stage.
- Grease the bowl, and place the dough inside, turning it to coat all sides. You may have to add a bit more oil to cover everything. Cover with a loose tea towel and place this in a draft-free area and let rest until doubled in size, about an hour.
- Punch the dough down. Cut the dough in half and spread one half into a large rectangle, about 9 x 12 or so. Starting on the short end roll the dough tightly, pinching the seam and folding the ends under. Place into a greased bread pan and gently and lightly oil the tops. Repeat with remaining dough. Let these rise for another hour.
- Preheat the oven to 350 degrees F. Bake for 27-32 minutes or until hollow sounding when knocked and golden brown. Butter the tops of the loaves and remove from the pans immediately. Cool completely before cutting.
BROWN RICE BREAD
This recipe is for a bread machine. The bread has a crunchy crust, but a light, moist middle.

- In a saucepan bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 15 minutes.
- Place 1/2 cup of cooked rice in a two cup measuring cup. Add oil and enough warm water to equal 1 1/2 cups. Add this mixture to pan of bread machine. Add flour, sugar, salt and yeast. Select cycle; press Start.

MINNESOTA WILD RICE BREAD

- Bring water to a boil in a small saucepan. Add rice to boiling water and cover. Cook over very low heat until water is absorbed and rice is tender. Cool.
- Preheat oven to 375 degrees F.
- Stir yeast into 1/3 cup warm water and let stand 5 minutes. Stir together milk, butter, honey, salt and oats. Add cooled wild rice to milk mixture.
- Stir together rye flour, whole-wheat flour, bran and 3 1/2 cups of the unbleached flour, using a wooden spoon. Stir in milk and yeast mixture until soft dough forms. Add more of the unbleached flour as needed.
- Turn the dough out onto a floured board and knead until soft and elastic, about 10 minutes. Place dough in greased bowl and turn so that the top is greased. Let rise 2 hours. Punch dough and shape into two loaves. Place in 2 greased 9 1/2 by 5 1/2-inch pans. Let rise again, about 1 hour. Bake for 45 minutes. During last 15 minutes of baking, brush loaves with 1 beaten egg mixed with 1 tablespoon of water and sprinkle with sunflower seeds.
WILD RICE BREAD
A recipe that was printed in the local newspaper back many years . I received this recipe from my SIL and later found it in a Christmas booklet. It is extremley moist,healthy and so very tasty.Serve it with butter,a slice of cheese or a sandwich. Certainly a favorite at our house.

- In a saucepan boil rice in 4 cups water and cook until rice is tender(approx 40-50 minutes).
- Drain and cool.
- Dissolve yeast in 1/2 cup of lukewarm water and 1 teaspoon sugar.
- Add enough flour to make a thin paste.
- Set in a warm place for about 10-15 minutes.
- In a large bowl mix: 4 cups warm water.1/4 cup sugar,molasses,shortening,salt,natural bran,sunflower seeds.
- Add yeast mixture,the cooled rice,sunny boy cereal and rolled oats.
- Add approximately 10 cups white flour,( starting with less) or sufficient to make bread dough and knead the dough well.
- Let rise until double in size (about 2 hours).
- Punch down and form into loaves and again let rise until double in size.
- Bake in 375degreeF for 25-30 minutes or until bread is done. Check by tapping on the base of the loaf with knuckles. If bread sounds hollow it will be done.
- Recipe should make about 4-6 loaves depending on size and shape.
- Note; recipe can be halved using still 1 tablespoon yeast but halving all other ingredients.
- Prep time includes cooking and standing time,approx.

- In a 2 1/2- to 3-quart pan over high heat, bring 1 1/2 quarts water to a boil. Rinse and drain wild rice and add to water. Return to a boil, cover, reduce heat, and simmer until rice begins to split, 40 to 45 minutes. Drain.
- Meanwhile, put nuts in a 10- by 15-inch baking pan. Bake in a 325° (if roasting turkey at that temperature) or 350° (if using a different oven than one for turkey) regular or convection oven until lightly browned, 15 to 20 minutes.
- In a 5- to 6-quart pan over medium-high heat, stir celery and onion in butter until onion is limp, 7 to 10 minutes. Add white rice and stir until edges turn opaque, 3 to 4 minutes. Add broth, apricot nectar, brandy, thyme, sage, nutmeg, and pepper. Bring to a boil, cover, reduce heat, and simmer until rice is tender to bite, 15 to 20 minutes. Stir in bread-cube stuffing, apricots, wild rice, and toasted nuts. Add salt and more pepper to taste. Cover and cook over low heat, stirring occasionally, until bread cubes are evenly moist, 7 to 12 minutes. Pour into a 3-quart casserole and cover tightly.
- Bake in a 325º (if roasting turkey at that temperature) or 350º (if using a different oven than one for turkey) regular or convection oven until dressing is hot in the center, 30 to 40 minutes. For a crustier top, uncover casserole for the last 15 to 20 minutes. Sprinkle with parsley, if desired.
