2 lbs ground turkey
1/3 cup plain bread crumbs
2 Tbsp milk
2 tbsp olive oil
1 onion (diced)
2 eggs
1/4 bunch fresh parsley (chopped)
3 cloves garlic (pressed)
2 tsp salt
1 tsp ground pepper
1/2 tsp red pepper flakes
1 tbsp Italian seasoning
1/4 cup freshly grated parmesan cheese

Steps:

  • Preheat oven to 375˚F.
  • Combine the bread crumbs, salt, pepper, red pepper flakes, and Italian seasoning in a large bowl, then add the parmesan, eggs, onion, parsley, garlic. Pour in the milk and olive oil and mix to combine. Let sit for 5 minutes so that the dry ingredients start to soak up the wet ingredients.
  • Add the ground turkey into the mixture and work it in until it is evenly mixed. You might need to use your hands.
  • Form the turkey into 2 inch balls and place evenly spaced on a greased cookie sheet. Bake for 25-35 minutes or until cooked through (internal temp of 165˚F)
  • Remove from cookie sheet and serve over spaghetti or your favorite way. Enjoy!

24 oz pasta sauce

Steps:

  • Heat the oven to 350 degrees and line a large baking sheet with parchment paper. This will make clean up easy because the pan will be greasy.
  • Add your meat and ingredients to a large bowl.

1 1/2 lbs ground beef (a mixture of 1 pound ground beef and 1/2 pound ground pork will work well also)
1 large egg, slightly beaten
1/2 cup grated parmesan cheese
1/3 cup breadcrumbs (or use enough to hold the meat together (no dry breadcrumbs? just soak 3 slices of bread in the 1/3 )
1 -2 tablespoon fresh minced garlic (or use 1 teaspoon garlic powder or to taste)
1 -2 teaspoon salt (or to taste, I use 2 teaspoons seasoned salt)
1 teaspoon fresh ground black pepper
1/3 cup milk (can use up to 1/2 cup milk)
1/2 teaspoon dried oregano (optional, or to taste)
1/4 cup chopped fresh parsley (or 2 tablespoons dried parsley)

Steps:

  • Mix all ingredients together in a large bowl.
  • Shape into small meatballs (at this point you can place on a jelly-roll/baking sheet and freeze to use later, or cover with plastic wrap refrigerate up to 24 hours before using).
  • Drop the meatballs into simmering pasta sauce, do not stir for at least 20 minutes or you will risk breaking the meatballs.
  • Continue cooking in the simmering sauce for another 20 minutes (depending on how fast your sauce is simmering 40 minutes total should fully cook the meatballs).
  • After the 40 minutes cooking time continue cooking your sauce with the meatballs in for as long as desired.
  • **note** you may also bake the meatballs at 350 degrees F for 25 minutes or until cooked through.

The meat mixture is softer than you might expect, thanks to the addition of ricotta, but sacrificing a perfectly round shape is worth it. 2 tablespoons extra-virgin olive oil
2 tablespoons canola oil
3/4 cup finely ground fresh breadcrumbs (from 3 to 4 slices white bread, crusts removed)
1/2 cup milk
1 pound ground turkey (93/7 ratio)
1/2 cup whole milk ricotta cheese
2 tablespoons grated Parmesan
1 clove garlic, grated
1/4 cup packed parsley leaves, finely chopped (about 2 tablespoons chopped)
1 teaspoon dried oregano
Kosher salt and freshly ground black pepper
1 large egg, lightly beaten

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and drizzle the olive oil and canola oil in an even layer over the paper.
  • Pour the breadcrumbs into a large mixing bowl, pour the milk over top and stir to fully moisten the breadcrumbs. Add the remaining ingredients to the mixing bowl and mix with your hands just until combined.
  • Scoop 1/4-cupfuls of meatball mixture and place them evenly spaced on the prepared baking sheet; you should have 12 meatballs. Gently roll them into balls. Bake until bottoms are golden brown, about 15 minutes. Reduce the oven temperature to 325 degrees F and continue to bake for 15 to 20 minutes more until the meatballs are cooked through.

This is an adaptation of Kittencal's recipe#69173. I wanted to be able to enjoy meatballs without the fat and had not, until now, found a good recipe for turkey meatballs. I made her delicious ones for the kids and hubby, but changed it up with turkey and extras for me(and my waistline). They are not dry and the flavor is slightly sweet from the basil. I usually have these with homemade pasta sauce and ww pasta.

2 green onions (thinly sliced (or 2 tablespoons finely chopped white onion))

Steps:

  • Preheat broiler. Line a baking sheet with parchment paper and spray with cooking spray.
  • In a bowl, add ground turkey, cumin, oregano, onion powder, garlic powder, parsley, egg, sesame oil, and green onions. Gently mix until well combined. Careful not to overmix or the meatballs won't be moist and tender.
  • Form the mixture into meatballs. Place on lined baking sheet. Using a medium cookie scoop makes 15 meatballs, 1-inch in diameter. You can definitely make them in whatever size you'd like, just make sure they are all the same size so they cook evenly.

1 lb. Ground turkey thighs ((93% lean; ground turkey breast is too lean))
1 tablespoon mayonnaise ((I use avocado oil mayonnaise))
1 tablespoon Dijon mustard
1 teaspoon Diamond Crystal kosher salt ((or 1/2 teaspoon fine sea salt))
1/4 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
½ cup chopped fresh parsley
4 tablespoons olive oil for frying*

Steps:

  • In a medium bowl, mix together all the ingredients except for the oil.
  • Using a 1.5-tablespoon cookie scoop, the same one you would use for cookies, scoop out even portions of the mixture into a plate. I usually end up with 16 meatballs.
  • With wet hands for easier handling, shape each portion into a round meatball.
  • Heat the olive oil in a very large (12-inch) lidded skillet over medium-high heat until the oil shimmers and becomes fragrant, about 2 minutes.
  • Add the meatballs in a single layer and cook them uncovered, turning frequently, until golden brown, about 5 minutes.
  • Add 1/4 cup of water to the bottom of the skillet. Cover with the lid and cook until the meatballs are cooked through (their internal temperature should be 165° F), about 3 more minutes.
  • Remove the meatballs from the skillet to a serving plate using a slotted spoon. Serve immediately.

1 green onion, thinly sliced
1 minced clove of garlic
1 egg, lightly beaten
1-ounce fresh bread crumbs
2 tablespoons grated Parmesan cheese, plus extra to serve on the side for grating
1 pound ground turkey or chicken
5 tablespoons olive oil
2 cups tomato sauce (recipe above)
1 pound perciatelli pasta
Salt and pepper to taste
Parmesan cheese-to serve on the side for grating

Steps:

  • Bring a large pot of salted water to a boil for the pasta. In a bowl mix together; green onion, garlic, egg, bread crumbs and Parmesan cheese. With a fork stir in ground turkey or chicken and season to taste with salt and pepper. (You can crumble some in a skillet, cook, taste, and then adjust seasoning). Shape mixture into small meatballs. In a large skillet heat olive oil. Add meatballs in a single layer and let them cook for 2 to 3 minutes a side, without disturbing. If they stick, loosen with a slotted spoon. Stir in tomato sauce into the skillet, cover and simmer 10 to 15 minutes (while spaghetti is cooking) to reheat sauce and cook meatballs through. Drain pasta and then return to the pot and toss with remaining 2 tablespoons of olive oil. Dish out a portion of pasta on each plate and spoon some meatballs and sauce in center.

1 slice whole wheat bread (crust removed)
1 pound ground turkey
1 yellow onion (grated)
3 garlic cloves (minced)
1/2 cup feta cheese (crumbled)

1 tablespoon extra virgin olive oil

Steps:

  • Preheat the oven to 400 degrees F.
  • Toast the bread until just brown then transfer it to a bowl and add water to cover. Allow it to soak for about 5 minutes or until very tender. Discard the water and squeeze the bread very dry and crumble it a bit with your hands.
  • In a skillet heat 1 tablespoon extra virgin olive oil. Add the spinach and cook briefly over medium heat until just wilted. Remove from the heat and let cool briefly.
  • Make the meatball mixture. In a large mixing bowl, add the ground turkey, onions, garlic, crumbled feta, egg, parsley, and mint. Add the bread and wilted spinach. Season with a big pinch of kosher salt and black pepper. Mix well to combine.
  • Form the mixture into balls (golf ball size) and arrange them on a large lightly oiled sheet pan.
  • Bake in the heated oven for about 30 minutes or until fully cooked through.
  • Transfer to the top rack and turn the broiler on for just a couple of minutes or until the tops are browned.
  • Serve immediately with salad of your choice.
