BANANA-PINEAPPLE BREAD
This is my mom's recipe for banana bread with canned pineapple. It comes out nice and moist, but not overly oily as some banana breads do.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease and flour 2 loaf pans.
- Mix flour, sugar, bananas, oil, applesauce, pineapple, eggs, cinnamon, baking soda, and salt together in a large bowl until blended. Pour into the prepared loaf pans.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 50 to 60 minutes.

- Make sure all ingredients are room temperature before you begin.
- Preheat oven to 350˚F. Line a standard 9-by-5-inch loaf pan with parchment paper, letting the paper drape over the sides to create a sling.
- In a medium-sized bowl, thoroughly whisk together the flour, salt, and baking soda.
- In the bowl of an electric stand mixer using the paddle attachment, cream together the butter and sugar, beating it on high speed until the mixture lightens in color and texture.
- Add the flour mixture gradually to the butter mixture in three additions, beating on low speed until just combined after each addition.
- Gradually beat in the lightly beaten eggs.
- Add mashed bananas, sour cream, and vanilla extract. Fold in with a spatula until just combined.
- Scrape the mixture into the pan and spread evenly.
- Bake 50-60 minutes, until a toothpick inserted in the center comes out clean.
- Let cool in the pan on a rack for 5-10 minutes before unmolding to cool completely on the wire rack.

MOIST AND DELICIOUS BANANA BREAD
This is the best banana bread I have ever had. I buy really ripe bananas just so I can make this :-) Got the recipe years ago from my friend Rachel. We used to beg her to make this for us in college! I think the moistness is due to the 1/2 cup of oil - I didn't say it was the healthiest banana bread around, but it is worth the extra time on the treadmill!

- 1. Preheat oven to 350 degree F. Spray two 9.5 x 5 bread pans with bakers joy or grease well. In a large bowl, whisk together the flour, sugar, salt, cinnamon, baking soda, salt and nuts.
- 2. In another bowl, beat together the eggs, oil, vanilla, banana and pineapple. Make sure it's mixed well.
- 3. Pour the wet ingredients into the dry and mix with a wooden spoon or spatula, only until you no longer see dry ingredients.
- 4. Divide batter between two greased 9.5 x 5 bread pans. ( Can also make mini loaves of bread if desired.) I've done both. Baking time will vary, depending on size of pan.
- 5. Bake for 50 minutes to 1 hour. Check center and pick should come out clean. Let cool for 5 minutes then remove from pans and finish cooling on racks.
- 6. Enjoy! It's delicious! Freezes well too!
