This is my mom's recipe for banana bread with canned pineapple. It comes out nice and moist, but not overly oily as some banana breads do.

3 cups all-purpose flour
2 cups white sugar
2 cups mashed bananas
1 cup vegetable oil
½ cup unsweetened applesauce
1 (8 ounce) can crushed pineapple
3 large eggs
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 teaspoon salt

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and flour 2 loaf pans.
  • Mix flour, sugar, bananas, oil, applesauce, pineapple, eggs, cinnamon, baking soda, and salt together in a large bowl until blended. Pour into the prepared loaf pans.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, 50 to 60 minutes.

1 1/2 cups all purpose flour
1/2 tsp salt
1 tsp baking soda
8 Tbsp (1 stick) unsalted butter
1 cup granulated sugar
2 large eggs, lightly beaten
1 cup very ripe mashed banana (about 2 large or 3 medium)
1/2 cup sour cream
1/2 tsp vanilla extract

Steps:

  • Make sure all ingredients are room temperature before you begin.
  • Preheat oven to 350˚F. Line a standard 9-by-5-inch loaf pan with parchment paper, letting the paper drape over the sides to create a sling.
  • In a medium-sized bowl, thoroughly whisk together the flour, salt, and baking soda.
  • In the bowl of an electric stand mixer using the paddle attachment, cream together the butter and sugar, beating it on high speed until the mixture lightens in color and texture.
  • Add the flour mixture gradually to the butter mixture in three additions, beating on low speed until just combined after each addition.
  • Gradually beat in the lightly beaten eggs.
  • Add mashed bananas, sour cream, and vanilla extract. Fold in with a spatula until just combined.
  • Scrape the mixture into the pan and spread evenly.
  • Bake 50-60 minutes, until a toothpick inserted in the center comes out clean.
  • Let cool in the pan on a rack for 5-10 minutes before unmolding to cool completely on the wire rack.

This is the best banana bread I have ever had. I buy really ripe bananas just so I can make this :-) Got the recipe years ago from my friend Rachel. We used to beg her to make this for us in college! I think the moistness is due to the 1/2 cup of oil - I didn't say it was the healthiest banana bread around, but it is worth the extra time on the treadmill!

  • Combine the oil, eggs, sugar, milk, vanilla, and mashed bananas.

2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
3 eggs
1-1/4 cups canola oil
2 teaspoons vanilla extract
1 can (8 ounces) crushed pineapple, drained
2 cups mashed ripe bananas (4 to 5 medium)

Steps:

  • In a large bowl, combine the flour, sugar, salt, baking soda and cinnamon. In another bowl, whisk the eggs, oil and vanilla; add pineapple and bananas. Stir into the dry ingredients just until moistened. Pour into two greased 8x4-in. loaf pans., Bake at 350° for 60-65 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

2 c sugar
1 1/2 tsp cinnamon
3 c flour
1 tsp each - baking soda & salt
1 c chopped pecans or your favorite
3 eggs, beaten
1 1/4 c vegetable oil
2 c smashed banana
1 - 15 oz crushed pineapple - drained
2 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 degree F. Spray two 9.5 x 5 bread pans with bakers joy or grease well. In a large bowl, whisk together the flour, sugar, salt, cinnamon, baking soda, salt and nuts.
  • 2. In another bowl, beat together the eggs, oil, vanilla, banana and pineapple. Make sure it's mixed well.
  • 3. Pour the wet ingredients into the dry and mix with a wooden spoon or spatula, only until you no longer see dry ingredients.
  • 4. Divide batter between two greased 9.5 x 5 bread pans. ( Can also make mini loaves of bread if desired.) I've done both. Baking time will vary, depending on size of pan.
  • 5. Bake for 50 minutes to 1 hour. Check center and pick should come out clean. Let cool for 5 minutes then remove from pans and finish cooling on racks.
  • 6. Enjoy! It's delicious! Freezes well too!
