1/3 cup butter, softened
1/2 cup sugar
1/4 cup packed brown sugar
1 egg, lightly beaten
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 cup buttermilk
TOPPING:
1/4 cup packed brown sugar
1/4 cup finely chopped pecans
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg, optional

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg. Combine the flour, baking powder, baking soda and cinnamon; gradually add to creamed mixture alternately with buttermilk. beating well after each addition. , Spread into a greased 8-in. square baking pan. Combine topping ingredients; sprinkle over batter. Cover and refrigerate overnight. , Bake, uncovered, at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

Number Of Ingredients 12

3/4 cup soft butter
1 cup sugar
2 eggs
1 cup sour cream
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon nutmeg
1/2 teaspoon salt
3/4 cup brown sugar
1/2 cup chopped pecans
1 teaspoon cinnamon

Steps:

  • Cream butter and add sugar gradually.
  • Beat at medium speed until light and fluffy.
  • Add eggs one at a time and beat.
  • Add sour cream and mix well.
  • Combine flour and next 4 ingredients.
  • Add to creamed mixture and mix well.
  • Pour into greased and floured 13x9 pan.
  • Combine brown sugar, pecans and cinnamon.
  • Sprinkle evenly over batter.
  • Cover and chill 8 hours.
  • Uncover and bake at 350 degrees for 35 to 45 minutes or til wooden pick comes out clean.

375 Grams (3 Cups) All-Purpose Flour/ Plain Flour
1 1/2 Teaspoons Baking Powder
1/2 Teaspoon Baking Soda
1/2 Teaspoon Salt
4 Large Eggs, at room temp.
300 Grams (1 1/2 Cup) Granulated Sugar/ Caster Sugar
6oz (3/4 Cup) Unsalted Butter, at room temp.
2oz (1/4 Cup) Vegetable Oil
1.5 Tablespoons Instant coffee (adjust amount to your preference less or more)
1oz Hot water (more or less depending on how strong you want the coffee flavor)
8oz (1 Cup) Buttermilk, at room temp.
1 Batch Coffee Buttercream Recipe
4oz (1/2 Cup) Apricot Jam/ Preserves
4oz (1/2 Cup) Roasted Walnuts

Steps:

  • Preheat your oven to 350F/ 180C and grease two 8-inch cake pans, set aside.
  • In a large bowl whisk together the flour, baking powder, baking soda, and salt.
  • In another large bowl with a handheld mixer or your stand mixer fitted with the paddle attachment beat the butter for 2 minutes, add the oil and mix for an additional minute.
  • Add the sugar and beat for 2-3 minutes, until light and fluffy. Add the eggs.
  • In a small cup or bowl add the coffee granulates and hot water- stir until coffee granulates have disappeared. Add to the wet ingredients.
  • Gently fold in half of the flour mixture, then half of the buttermilk then repeat with remaining ingredients. Pour into prepared pan and bake for 20-25 minutes, or until you stick a toothpick in the center and only moist crumbs come out, no wet batter. Let cool on a wire rack for 20 minutes before inverting to cool completely.
  • Place one cake layer on a cake board or serving plate, spread about 4oz (1/2 Cup) of frosting on the cake, making the edges higher to create a frosting dam for the apricot jam. Spread jam within that frosting dam and place remaining cake layer on top bottom face up- this helps create a flat top. Spread frosting on the top layer and decorate with roasted walnuts.

STREUSEL TOPPING:
3/4 cup brown sugar
1/2 cup chopped pecans
1 teaspoon cinnamon
CAKE:
3/4 cup butter - softened
1 cup sugar
2 eggs
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon nutmeg
1/2 teaspoon salt
1 cup sour cream

Steps:

  • Grease the bottom and sides of a 9 x 13 cake pan. Combine all the streusel ingredients in a small bowl; stir together to mix evenly and then set aside. In a large mixing bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating each until well mixed. In a smaller bowl, combine the remaining ingredients except for the sour cream. Stir the dry ingredients with a fork just to mix evenly. Alternately, add the flour mixture and sour cream to the egg mixture; beat after each addition. Start with flour and end with flour. Beat until well blended. Pour batter into the greased cake pan and spread out evenly. Sprinkle the streusel over the top. Cover the pan with plastic wrap and place in the refrigerator for at least 8 hours. Bake within 18 hours. When ready to bake, preheat the oven to 350 degrees F. Bake for 30 to 35 minutes or until a toothpick poked in the middle comes out clean. Remove from the oven and allow to cool slightly but serve while warm if possible. It is also delicious at room temperature.

3 c flour

1/2 c shortening
1 c milk
6 tsp baking powde
2 tsp vanilla
filling;
1 c sugar
2 Tbsp flour
2 tsp cinnamon
1 c chopped walnuts
4 Tbsp melted butter

Steps:

  • 1. preheat oven 350, spray a 13 x 9 cake pan
  • 2. mix together first 8 ingredients to make batter. beat for 2 minutes, spread half of it in prepared pan
  • 3. now mix together the filling ingredients ( the next 5 ingredients) sprinkle half of it over batter in pan, then rest of batter and then rest of filling
  • 4. put a butter knife down thru and swirl
  • 5. bake 25 to 30 minutes

1-1/4 c sugar

1 15 oz container part-skim ricotta cheese
3/4 c chopped walnuts
1/2 c packed light brown sugar
2 Tbsp wheat germ
1 Tbsp cinnamon
1 tsp ground nutmeg

Steps:

  • 1. In lg bowl, combine the flours, baking powder and baking soda. In another bowl, beat butter for 30 seconds. Add sugar, beat until combined.
  • 2. Add eggs, one at a time, beating well after each addition. Beat in ricotta cheese. Beat in flour mix. Spread batter in a pan that has been lightly sprayed w/ cooking spray.
  • 3. In another bowl, combine nuts, brown sugar, cinnamon, wheat germ and nutmeg. Sprinkle over batter in pan evenly. Cover, refrigerate 24 hrs. The next day, pre-heat oven to 350. Uncover cake and bake for 35-40 mins, or until a toothpick inserted in center comes out clean.

Steps:

In a medium bowl, combine the flour, baking powder, baking soda, and 1/2 teaspoon cinnamon. Stir the flour mixture into the creamed mixture alternately with buttermilk. Spread evenly into the prepared baking pan.
  • In a small bowl, mix 1/4 cup brown sugar, walnuts, and 1/4 teaspoon cinnamon. Sprinkle over the batter. Cover, and refrigerate overnight.
  • The next day, preheat oven to 350 degrees F (175 degrees C). Bake the cake for 40 to 45 minutes in the preheated oven, or until a toothpick inserted in the center comes out clean.
