1 cup vegetable oil, plus extra for the pan (see Cook's Note)
3 extra-large eggs
2 teaspoons pure vanilla extract
2 cups grated carrots, unpeeled and grated on a box grater
1 Granny Smith apple, unpeeled and grated on a box grater
1 (8-ounce) can crushed pineapple, drained
1/2 cup pecans, roughly chopped
1/2 cup sweetened shredded coconut
1/2 cup raisins
2 1/4 cups all-purpose flour
1 1/4 cups sugar
1 tablespoon ground cinnamon
2 teaspoons baking soda
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F and arrange two racks evenly spaced in the oven. Line two muffin pans with paper muffin cups.
  • In a large bowl, whisk together the eggs, oil, and vanilla. Add the carrots, apple, pineapple, pecans, coconut, and raisins and stir together. In a medium bowl, sift together the flour, sugar, cinnamon, baking soda, and salt. Add the dry ingredients to the wet ingredients and stir just until combined. Scoop the batter with a standard (2 1/4-inch) ice cream scoop (I use rounded scoops of batter) into the prepared muffin cups. Bake for 30 to 35 minutes, until a toothpick comes out clean. Place the pans on a baking rack to cool and serve the muffins warm or at room temperature.

1 medium tart apple, peeled and grated
1 can (8 ounces) crushed pineapple, drained
1/2 cup sweetened shredded coconut
1/2 cup raisins
1/2 cup chopped walnuts

Steps:

  • In a large bowl, combine the first five ingredients. In another bowl, combine the eggs, applesauce, oil and vanilla. Stir in carrots, apple, pineapple, coconut, raisins and nuts., Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 20-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

1 cup uncooked quick-cooking oats
3/4 cup sugar
3/4 cup sweetened flaked coconut

3/4 cup Land O Lakes® Butter melted
3 medium (1 1/2 cups) carrots, peeled, shredded
1 large (1 1/2 cups) apple, peeled, chopped
3 large Land O Lakes® Eggs slightly beaten
Land O Lakes® Butter with Canola Oil

Steps:

  • Combine flour, oats, sugar, coconut, cinnamon, baking soda and salt in bowl; mix well.
  • Combine butter, carrots, apple and eggs in another bowl; mix well. Add butter mixture to flour mixture; stir just until moistened.
  • Spoon batter evenly into prepared pan. Bake 18-23 minutes or until toothpick inserted in center comes out clean. Serve warm with Light Butter with Canola Oil.
  • Heat oven to 375°F. Lightly grease 12 muffin pan cups; set aside.
  • Serve with Land O Lakes Butter with Canola Oil, if desired.

1 cup Sugar
1 Tbsp Cinnamon
1 1/2 tsp Baking Soda
1 cup Grated Carrots
3/4 cup Raisins
3/4 cup Shredded Coconut
3/4 cup Chopped Pecans
1 cup Zucchini, grated
1 Apple, peeled and grated
4 Eggs
1/3 cup Vegetable Oil
1 Tbsp Vanilla

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, whisk together flour, sugar, cinnamon, and baking soda.
  • Into another large bowl, combine carrots, raisins, coconut, pecans, zucchini and apples, eggs, vegetable oil and vanilla. Mix with a hand mixer until combined thoroughly.
  • Pour the wet mixture into the flour mixture, gently folding it together with a rubber scraper or spatula.
  • Prepare a loaf pan with non-stick spray. Line the pan with a parchment paper sling, and lightly spray again with non-stick spray. Pour the batter 3/4 the way up the pan. Bake on the middle rack of the oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean. Cool on a wire rack in the tin for 10 minutes, prior to removing the loaf to cool completely before slicing and serving.

  • In a separate bowl, beat together eggs, oil, and vanilla. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups.
  • Bake in preheated oven for 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
