TRADITIONAL MEATLOAF RECIPE
Cue one of the most comforting dinners of them all - the traditional meatloaf recipe. Moist and tender, this 2lb meatloaf recipe is easy to make and features a delicious combination of savory meat, meatloaf seasonings and a tangy glaze. This family favorite meal features meatloaf spices like onion powder, garlic powder, a dash of salt and French's® Tomato Ketchup. You can add a special twist by making a meatloaf with breadcrumbs, using a combination of meats like pork and beef, adding a dash of French's® Worcestershire Sauce or mixing in a chopped vegetable like green bell peppers or jalapeño. Throw the ingredients into a bowl, combine together and then transfer to a well-greased loaf pan or shape it into a loaf on a shallow baking pan. The best part of this simple recipe for meatloaf is that you can use the leftovers (if there are any!) as meal prep for a tasty meatloaf sandwich for tomorrow's lunch. Want to serve a crowd? Try making our Meatloaf Bombs and sticking toothpicks in them for easy finger food. Steps:
- Preheat oven to 350 F.
- Heat olive oil in a large skillet.
- Add onions, peppers and celery and saute until tender.
- Add garlic and cook just until fragrant.
- Remove from heat and let cool. Set aside.
- In a large bowl, add breadcrumbs and just enough milk to moisten the crumbs.
- Add remaining ingredients, except for the beef.
- Mix these ingredients well.
- Add the beef. Use your hands to mix it in. Don't be alarmed if the mixture seems a bit too wet at first. Handle the beef as little and as gently as possible to prevent it from becoming tough when baked. Mix JUST until everything is combined.
- Optional: Fry a tiny piece of the mixture to check the taste and adjust the seasonings if desired.
- When all of the ingredients are well combined, spoon the mixture into a loaf pan and smooth to an even layer. Set aside.
- To make the glaze, combine all glaze ingredients and spread half on top of meatloaf.
- Bake for 30-35 minutes and then top with remaining glaze. ( you don't have to use all of the glaze. You can save some to use when serving the meatloaf of desired)
- Continue baking for another 30-35 minutes or until internal temperature reaches 160 F. or to your desired (safe) doneness. ( I like to flip the oven to broil for the last few minutes to get the glaze a bit sticky but watch it carefully if you decide to do this)
- Remove from oven, drain off the fat and let meatloaf rest before slicing. (If meatloaf is steaming hot when you cut into it, it will fall apart)

- Preheat oven to 350F, with rack on middle position. Place large pan of water on lower rack underneath.
- In a large heavy saucepan, saute onion and garlic in olive oil until soft. Add a pinch of kosher salt, pinch of pepper, and the thyme. Saute 30 seconds more, and transfer to large bowl.
- Add 1 tsp kosher salt, 1 tsp black pepper, Worcestershire sauce, eggs, beef broth, and bread crumbs. When I made this meatloaf for Lenny recently, I wanted to make sure there weren’t any large chucks of bread or onion so, I toasted about three slices of whole grain bread and then pulsed it to a nice crumb consistency in my food processor. I also processed the onion in the food processor. (By the way, this is a great trick for incorporating onions in dishes that all those picky eaters won’t even notice.)

- Choose your meat carefully. It is best to use a blend of meat in your recipe. A mixture of ground beef and pork sausage is ideal to produce a moist and delicious meal.
- Saute your veggies. Whatever vegetables that you choose to use, be sure to saute them in olive oil or butter before adding them to your meat mixture.
- Soak your breadcrumbs/oatmeal. The biggest debate when cooking meatloaf centers around breadcrumbs vs. oatmeal. The only thing that can be agreed upon is that a dry ingredient is needed to help bind the mixture.
- Don’t overmix! Most people prefer to mix the ingredients with their hands. It is just easier. Although this is a great method, most individuals tend to squeeze and mash the mixture together too much.
- Do NOT use a loaf pan. I grew up watching my parents make meatloaf and cooking it in the same loaf pan as we used when we made bread. It made total sense to me.
- Let it rest. After removing it from the oven, even the best meatloaf needs to rest. Simply cover it with foil and allow it to rest for about 10 minutes.
