THE BEST MEATLOAF I'VE EVER MADE

The Best Meatloaf I've Ever Made image

When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

UNBELIEVABLY MOIST TURKEY MEATLOAF

Unbelievably Moist Turkey Meatloaf image

Our turkey meatloaf is full of flavor, moist in the middle, and has become a reader favorite! You would never guess this meatloaf is packed with mushrooms, but that's what makes it so darn delicious. Lots of finely chopped mushrooms add flavor and moisture, often missing from the typical turkey meatloaf. When choosing which mushrooms to add, white button mushrooms will work perfectly fine. For more flavor, try one or a combination of brown cremini, portobello, or shiitake mushrooms. The mushrooms need to be very finely chopped. You can do this by hand or use a food processor.

Provided by Adam and Joanne Gallagher

Categories     Dinner

Time 1h30m

Yield Makes 6 Servings

Number Of Ingredients 12

8 ounces mushrooms, trimmed and very finely chopped
1 medium onion, peeled and finely chopped
2 garlic cloves, peeled and minced
1 tablespoon oil
3/4 teaspoon fine sea salt
1/2 teaspoon ground black pepper
1 tablespoon Worcestershire sauce
7 tablespoons ketchup, divided, try our homemade ketchup
1 cup (60 grams) panko bread crumbs or use homemade bread crumbs
1/3 cup (80 ml) milk
2 large eggs, lightly beaten
1 ¼ pound ground turkey (92% lean)

Steps:

  • Heat oven to 400° Fahrenheit. Lightly oil a rimmed baking sheet (or use a 9-inch by 13-inch baking pan) lined with aluminum foil.
  • Heat oil in a large skillet over medium-low heat. Add the onion and cook, stirring occasionally, until softened; about 5 minutes. Add the garlic and cook until fragrant, about 1 minute. Stir in the mushrooms, a 1/2-teaspoon of salt, and a 1/4-teaspoon of pepper. Cook until the mushrooms give off their liquid and it boils away; about 10 minutes.
  • Transfer the onions and mushrooms to a large bowl, and then stir in the Worcestershire sauce and three tablespoons of the ketchup. Set aside to cool for 5 minutes.
  • Meanwhile, combine the breadcrumbs and milk in a small bowl. Stir the breadcrumb mixture and the eggs into the mushrooms and onions. Using a fork or your hands, gently mix in the turkey, a 1/4-teaspoon of salt, and a 1/4 teaspoon of pepper. The mixture will be very wet.
  • Form the meatloaf into a 9-inch by 5-inch oval in the middle of the prepared baking sheet. Spread the remaining four tablespoons of ketchup on top.
  • Bake the meatloaf until an instant-read thermometer inserted into the thickest part of the meatloaf registers 170 degrees F, about 50 minutes. Let stand 5 minutes before slicing.

MOIST AND FLAVORFUL MEATLOAF

Moist and Flavorful Meatloaf image

This recipe makes makes a moist and tender meatloaf without being mushy. I added fresh herbs I had on hand but you can use dried herbs, just use a little less. I made this for friends and family, not realizing some were not meatloaf lovers until they admitted after tasting mine that they were converts! I think the mixture of pork and ground beef makes a real flavor and texture difference. If you don't have creole seasoning (I put Tony Chachere's in almost everything) just sub seasoning or regular salt. The topping is borrowed from Paula Deen after reading rave reviews of her sauce. I was skeptical of the addition of mustard but you don't taste it at all. Be sure to let the loaf rest 5-10 min to set. I use that time to whip my potatoes and reheat my mushroom gravy. Serve with my oven roasted ratatouille also for an easy and complete meal!

Time 1h30m

Yield 8 serving(s)

Number Of Ingredients 19

1 1/2 lbs ground chuck
1 lb ground pork
1 onion, diced
2 garlic cloves, minced
1/2 bell pepper, diced
1 egg, beaten
1 cup fresh breadcrumb
2 tablespoons ketchup
2 tablespoons barbecue sauce (Bullseye Guinness BBQ, yum!!)
1/2 teaspoon kosher salt
1/2 teaspoon creole seasoning (like Tony Chachere's)
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 tablespoon fresh parsley, minced
1 teaspoon fresh sage, minced
1 cup whole milk
1/3 cup ketchup
2 tablespoons barbecue sauce
1 tablespoon brown sugar

Steps:

  • Preheat oven to 350 degrees.
  • Saute onion, bell pepper and garlic in a little oil over medium heat until translucent, about 3-5 minutes. Set aside to cool.
  • Put all ingredients except milk in a large bowl.
  • Stir to combine with one hand while you add milk with the other* until all ingredients are uniformly mixed. Do not squish the ingredients together, this may make the meatloaf tough and dense.
  • Form into a loaf placed in baking dish. Stir together topping ingredients and brush on meatloaf.
  • Bake 1 hours and 15 minute at 350 degrees.
  • Let rest 3-5 minutes before slicing.
  • *not sure if this is totally necessary, it's just what I did and I liked my texture, if it is too difficult just add all ingredients at once.

  • Preheat oven to 350F, with rack on middle position. Place large pan of water on lower rack underneath.
  • In a large heavy saucepan, saute onion and garlic in olive oil until soft. Add a pinch of kosher salt, pinch of pepper, and the thyme. Saute 30 seconds more, and transfer to large bowl.
  • Add 1 tsp kosher salt, 1 tsp black pepper, Worcestershire sauce, eggs, beef broth, and bread crumbs. When I made this meatloaf for Lenny recently, I wanted to make sure there weren’t any large chucks of bread or onion so, I toasted about three slices of whole grain bread and then pulsed it to a nice crumb consistency in my food processor. I also processed the onion in the food processor. (By the way, this is a great trick for incorporating onions in dishes that all those picky eaters won’t even notice.)

  • Mix It Up. If you’ve always made your meatloaf with beef, try mixing it up by adding another meat! Substitute up to half of your beef for ground pork or sausage to enhance the overall flavor and texture of your loaf.
  • Fill It With Cheese. This one is self-explanatory: fill your meatloaf with cheese. It gets all melty and gooey in the oven, and gives the finished meatloaf a very “cheeseburgers on the grill in the summertime” sort of vibe.
  • Boost The Flavor. Wet ingredients can add moisture and flavor to your finished meatloaf. Try adding a bit of ketchup, BBQ sauce, Worcestershire sauce, soy sauce, mustard, A1 sauce, or even V8 juice to your meat mixture!
  • Respect The Breadcrumbs. Far from being a “filler ingredient,” breadcrumbs are crucial to the alchemy of meatloaf-making. When mixed into the meat, the breadcrumbs absorb and retain the fat and juices that might otherwise seep out and leave it bone-dry.
  • Give It A Glaze. Finishing off a meatloaf by covering it in a sticky glaze is a time-honored tradition. Many use a mixture of ketchup and brown sugar, but you could use canned tomato soup, Heinz 57, or even brown gravy instead.
  • Ditch The Pan. A lot of people rely on loaf pans to provide their meatloaf with shape and structure, but the pan isn’t necessary. Try a more rustic approach by forming it by hand on a sheet pan!
  • Get Hands On. When it comes to mixing meatloaf, your hands are the best tools for the job! Incorporate the ingredients carefully and avoid compressing them too much.
  • Handle With Care. Along the same line as the previous tip, be careful with your meat mixture when you’re loading it into your loaf pan. Packing it down or squishing it too much will make it tough and dense!
  • Let It Rest. Always let your meatloaf rest for at least 10 minutes after taking it out of the oven. Cutting into it too early will cause all the moisture to seep out, leaving you with dry and underwhelming meatloaf.
  • Do A Taste Test. In order to know that your meatloaf is properly seasoned, you have to taste it before you cook it. There’s an easy way to check the taste of your meatloaf before putting it in the oven (and don’t worry, it doesn’t involve eating raw meat!)

  • Prepare Meat Loaf Ingredients. Our meat loaf recipe uses a combination of mushrooms, onion, carrot, and garlic. Not only do these vegetables add nutrients, flavor, and moisture, but they also extend the meat loaf mixture.
  • Gently Mix the Ingredients. In a large mixing bowl combine eggs, milk, ketchup, mustard, and Worcestershire sauce, and salt. Add the veggie mixture and bread crumbs, stirring until evenly moistened.
  • Shape Meat Loaf. To prevent the meat mixture from sticking to your hands, moisten hands with cold water before shaping. Gently pat and shape the meat mixture into an oblong loaf (about 9x5-inch) that is slightly smaller than your baking dish.
  • Make a Meat Loaf Glaze. You can't enjoy meat loaf without that saucy glaze (at least we can't). Our classic glaze includes a mixture of ketchup, brown sugar, and mustard, but you can easily sub your favorite.
  • Bake Meat Loaf. Bake the meat loaf for approximately 1 hour or until done (use these tips for how to tell if it is done), spooning the glaze over the meat loaf in the last 25 minutes of baking.
