OLD-FASHIONED TURKEY NOODLE SOUP

- Place the turkey carcass, bones from wings and drumsticks, neck bone, onion, carrots and garlic in a 15x10x1-in. baking pan coated with cooking spray. Bake, uncovered, at 400° for 1 hour, turning once., Transfer the carcass, bones and vegetables to an 8-qt. stockpot. Add 4 qts. cold water; set aside. Pour remaining cold water into baking pan, stirring to loosen browned bits. Add to pot. Bring to a boil. Reduce heat; cover and simmer for 3-4 hours. , Cool slightly. Strain broth; discard bones and vegetables. Set stockpot in an ice-water bath until broth cools, stirring occasionally. Cover and refrigerate overnight. , Skim fat from broth. Cover and bring to a boil. Reduce heat to a simmer. Meanwhile, in a Dutch oven, bring 3 qts. water to a boil. Add noodles and carrots; cook for 4 minutes. Add celery; cook 5-7 minutes longer or until noodles and vegetables are tender. Drain; add to simmering broth. Add cubed turkey; heat through. Stir in the parsley, salt, thyme and pepper.

- Place the turkey carcass in a large stockpot with a lid. Pour the chicken broth over the turkey to mostly cover. Drop in the onion, celery, and garlic. Bring to a boil over medium heat, cover, and simmer for 2 hours, turning the carcass occasionally.
- Remove the carcass from the stock and set aside to cool. Remove the onion, celery and garlic from the stock and drop them into a blender along with about 1/2 cup of the stock, filling the pitcher no more than halfway full. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the vegetable mixture moving before leaving it on to puree. Pour the pureed onion, celery, and garlic back into the stock.
- Remove as much cooked turkey meat from the carcass as possible and add the meat to the stock. Stir in the chopped turkey breast, frozen mixed vegetables, rice, canned kidney beans, salt, pepper, oregano, basil and paprika. Bring the soup to a boil, cover, and simmer until the rice is tender, 20 to 30 minutes.

- Place the turkey carcass into a large soup pot or stock pot and pour in the water; bring to a boil, reduce heat to a simmer, and cook the turkey frame until the remaining meat falls off the bones, about 1 hour. Remove the turkey carcass and remove and chop any remaining turkey meat. Chop the meat.
- Strain the broth through a fine mesh strainer into a clean soup pot. Add the chopped turkey to the strained broth; bring the to a boil, reduce heat, and stir in the potatoes, carrots, celery, onion, cabbage, tomatoes, barley, Worcestershire sauce, salt, parsley, basil, bay leaf, black pepper, paprika, poultry seasoning, and thyme. Simmer until the vegetables are tender, about 1 more hour. Remove bay leaf before serving.

- In a large stockpot or Dutch oven set over medium heat, add the butter. Once melted, add the celery and carrots. Saute for 3 minutes. Add the mushrooms and cook until browned, about 3 minutes. Add onion and garlic, continue cooking for an additional 2 minutes, stirring frequently.
- Pour in broth and add salt, pepper, and seasonings/herbs. Turn heat up and bring to a boil. Once boiling, add rice and cook covered, for 12 minutes. Remove lid and add turkey and thyme. Continue cooking for an additional 5 minutes or until rice is tender.
- Remove from the heat and serve immediately.

MOE'S TURKEY BONE SOUP
This is a recipe I think came from a local newspaper, but I'm not sure. I've been making it for over 10 years whenever I have the remains of a roast turkey.

Steps:
- Place the turkey carcass and whole onion in a soup kettle and cover with cold water.
- Bring to a boil and simmer, covered 2 hours or until carcass is falling apart.
- Stir in the bouillon cubes the last 1/2 hours of cooking.
- Remove from heat and cool.
- Pour everything from the soup kettle into a colander, discarding the onion.
- When cool enough to handle, reserve only the pieces of turkey meat, discarding bones, skin and gristle.
- Refrigerate the meat at once.
- Chill the strained broth.
- Discard fat and return the broth to the soup kettle and bring to a boil.
- Add rice and chopped vegetables. Season to taste and simmer until rice is done.
- Stir in reserve meat.
- Heat thoroughly. Do Not Freeze.

- Place the turkey carcass in a large stockpot and cover with cold water. Add the kosher salt, black pepper, thyme, and bay leaf. Bring to a boil. Skim the foam off the surface. Reduce the heat to medium-low so that the stock is at a gentle simmer. Cook, partially covered, for 3 hours.
- Remove the bones and the bay leaf and discard. Strain the stock through a strainer. Measure how much liquid you have - you should now have about 2 quarts of soup. If you have less, add enough water to get to 2 quarts. Wipe the stockpot clean with moist paper towels.
- In the clean stockpot, heat the olive oil over medium-high heat, about 2 minutes. Add the carrots, celery, and onion. Cook, stirring occasionally, until the vegetables are tender-crisp. You want the onions golden, not browned. If the bottom of the stockpot becomes too dry, add a splash of water.
- Skim the fat layer from the top of the broth if you wish, then add it back to the stockpot. Bring back to a simmer and cook just until heated through, about 5 more minutes.

- Boil a turkey carcass in water, once it’s at a boil, reduce to a simmer for 1 hour or until the meat easily falls off the bone. Take the carcass out and put it on a plate to cool. Strain the broth to strain out any pieces of skin or bone so that you just have the broth. When the carcass is cool enough to touch, with your cleaned fingers, pick apart the turkey meat from the bone. Discard the bones. Add the meat back into the broth. You can allow the soup to cool to room temperature and then cover and transfer to the refrigerator overnight or at 8 hours. Remove any solid fat from the surface and discard.
- Add the prepared carrots, celery and onions and 1-2 tablespoons of olive oil. Saute the vegetables in the bottom of the Dutch oven or large soup pot for 8-10 minutes or until the vegetables are tender. Add the fresh thyme, bay leaf and rosemary. Pour the prepared bone broth on top. Bring to a boil and then reduce heat to a simmer. Remove the sprigs of thyme, rosemary and bay leaf. Cook for 20-30 minutes. Enjoy!
