MOCK EGGNOG
This recipe is from Taste of Home's Holiday Recipe Card Collection magazine for 2003. This is a lovely recipe for winter and especially, holiday time. Take your cup of cheer to sit by the fireside, while watching your special holiday show. (Sugar-free-option, my change.)

Steps:
- 1. In a mixing bowl, beat milk and pudding mix (regular or sugar-free), on low speed for 2 minutes. Beat in the sugar (or sweetener), nutmeg, vanilla, and salt (if using).
- 2. In another mixing bowl, beat cream, until thickened, about 3 minutes. Stir into pudding mixture. Refrigerate, until serving.
- 3. Sprinkle with additional nutmeg, if desired. Makes 2 1/2 quarts, about 10 servings.

Steps:
- In a heavy saucepan, whisk together eggs, sugar and salt. Gradually add 4 cups milk; cook and stir over low heat until a thermometer reads 160°-170°, 30-35 minutes. Do not allow to boil. Immediately transfer to a large bowl., Stir in vanilla, nutmeg and remaining milk. Place bowl in an ice-water bath, stirring until milk mixture is cool. (If mixture separates, process in a blender until smooth.) Refrigerate, covered, until cold, at least 3 hours. , To serve, beat cream until soft peaks form. Whisk gently into cooled milk mixture. If desired, sprinkle with additional nutmeg before serving.
