- Place crackers in a single layer in a foil-lined 15x10x1-in. baking pan. In a large saucepan, bring butter and sugar to a boil. Reduce heat; simmer, uncovered, for 5-6 minutes or until mixture is thickened and sugar is completely dissolved. Spread over crackers., Bake at 350° for 7-8 minutes or until bubbly. Sprinkle with chips. Bake 3-5 minutes longer or until chips begin to melt; spread chocolate evenly over top. , In a microwave, melt white chocolate and shortening; stir until smooth. Drizzle over toffee. Chill for 15-20 minutes or until set; break into pieces. Store in the refrigerator.

- Preheat oven to 400 degrees F (205 degrees C).
- Line cookie sheet with saltine crackers in single layer.
- In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.
- Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.

- Preheat ove to 350. Line a 13 x9 inch pan with Parchment paper for easy clean up. Arrange crackers evenly in pan.
- In saucepan over medium heat melt butter. Stir in brown sugar until melted and smooth. Bring mixture to a boil stirring constantly until mixture is smooth and bubbly. Boil for 2 minutes and then pour mixture evenly over cracker.

- Line an 11x7-inch pan with well-greased wax or parchment paper. Set aside.
- Melt the butter on low in a heavy saucepan. Stir in the sugar, syrup and water. Stirring constantly, use a candy thermometer and cook until the mixture reaches 305 degrees F.
- Pour the hot candy onto the prepared pan. Spread the mixture to the edges. Allow to sit until the mixture is stable but still hot. Spread the melted chocolate chips over the top. Sprinkle nuts over the top of the chocolate and gently press in.
- Allow the candy to cool and harden. Break into pieces and store in an airtight container.

MOCK ENGLISH TOFFEE
These are so good, that every one who has one wants the recipe. I actually have had someone pay me to make them three trays, so they could give them out as Christmas gifts to their friends and family. They could be a cookie or candy. Tastes somewhat like a Heath candy bar.

- 1. Preheat oven to 375 Degrees.
- 2. Line the bottom of 9X13 Pan with the Saltine Crackers. Make sure the entire bottom of the pan is covered with the crackers. (depending on your pan, it might take more of less of the Saltines) Mine is 5 across, 6 down. Put the lined pan aside.
- 3. In a sauce pan, melt the butter and brown sugar, on medium heat, stirring constantly with a wire whisk. When it comes to a rolling boil, cook for 5 more minutes, while still stirring constantly with whisk.
- 4. Remove pan from stove and pour the boiling mixture over the saltines, covering all the crackers.
- 5. Place in oven and bake for 7 minutes, or until the it starts to bubble. No longer, or it will burn.
- 6. Turn oven off and remove pan and place on counter. Pour the entire package of chocolate chips over the bubbling mixture. (The crackers may bubble out of place a bit, so adjust them with a fork and push them down so they go to the bottom of the pan.) Let the chocolate chips melt. They will turn shiny when then they are melted. (I put the pan back in the hot oven for only for a few seconds so they all melt) and spread the chocolate chips evenly covering the entire layer of crackers and butter/sugar mixture.
- 7. Sprinkle the nuts over the chocolate, and let cool. Cut into squares and enjoy.

- Preheat oven to 350 F.
- Line a jelly roll pan with foil. Spray with a non-stick cooking spray.
- Fill the bottom of the cookie sheet with crackers. Set the pan aside.
- In a sauce pan melt the butter over low-medium heat. Add brown sugar once butter is completely melted and stir to combine. Bring to a boil and continue boiling for 3 minutes.
- Immediately remove from heat and pour bubbly mixture over crackers covering the crackers completely.
- Place pan in the oven for 4-5 minutes, or just until edges of brown sugar mixture gets bubbly.
- Remove pan from oven and immediately and sprinkle the chocolate chips on top of the crackers.
- Allow the crackers to sit for 5 minutes to melt the chocolate. Then use a spatula to spread the melted chocolate over the cracker layer.
- Sprinkle chopped pecans or your favorite topping over the melted chocolate (optional).
- Place the pan in the refrigerator to allow the toffee to harden.
- Then remove the toffee from the pan and break it apart. Enjoy!

What is tasty, easy to make, and serves as the easiest food gift during the holidays? Cracker Toffee. When saltine crackers came out in 1876, Southerners made sure they worked the soda cracker into a multitude of recipes. Alabama Firecrackers are all over the place during the summer, and many Southerners took a short cut when making toffee during the holidays. A saltine cracker is the perfect base for the chocolate and sugar confection. Of course, no one could actually agree on a name so this dessert has many: Cracker Toffee, Cracker Candy, Pine Bark, Toffee Bark, Faux Toffee, Saltine Sweeties, Fooler Toffee, and Christmas Crack. There are also many ways to make the toffee special by just switching up the ingredients. You can swap out the type of chocolate and/or nuts. How about dark brown sugar, butterscotch morsels, and toffee chips? Give your toffee a holiday touch with crushed candy canes in place of the nuts. All you have to do is maintain the concept and ratios and your toffee will turn out great. - Heat the oven to 325°F. Line a rimmed baking sheet with aluminum foil or parchment paper.
- Arrange the crackers in a single layer on the pan.
- Cook the butter and brown sugar in a small saucepan over medium-low heat until melted and smooth, stirring slowly. When it begins to bubble, cook for 3 minutes while stirring
- Pour slowly and evenly over the crackers. The crackers might float a little, but that's fine, just move them back in place with the tip of a knife and make sure all of the crackers are covered in the sugar mixture.
