MOCK ENGLISH TOFFEE

Mock English Toffee image

These are so good, that every one who has one wants the recipe. I actually have had someone pay me to make them three trays, so they could give them out as Christmas gifts to their friends and family. They could be a cookie or candy. Tastes somewhat like a Heath candy bar.

Provided by Susan Murray

Categories     Chocolate

Time 15m

Number Of Ingredients 5

2 stick butter
1 c brown sugar
25 saltine crackers
1 pkg ghiradelli milk chocolate chips
1/4 c chopped pecans or walnuts

Steps:

  • 1. Preheat oven to 375 Degrees.
  • 2. Line the bottom of 9X13 Pan with the Saltine Crackers. Make sure the entire bottom of the pan is covered with the crackers. (depending on your pan, it might take more of less of the Saltines) Mine is 5 across, 6 down. Put the lined pan aside.
  • 3. In a sauce pan, melt the butter and brown sugar, on medium heat, stirring constantly with a wire whisk. When it comes to a rolling boil, cook for 5 more minutes, while still stirring constantly with whisk.
  • 4. Remove pan from stove and pour the boiling mixture over the saltines, covering all the crackers.
  • 5. Place in oven and bake for 7 minutes, or until the it starts to bubble. No longer, or it will burn.
  • 6. Turn oven off and remove pan and place on counter. Pour the entire package of chocolate chips over the bubbling mixture. (The crackers may bubble out of place a bit, so adjust them with a fork and push them down so they go to the bottom of the pan.) Let the chocolate chips melt. They will turn shiny when then they are melted. (I put the pan back in the hot oven for only for a few seconds so they all melt) and spread the chocolate chips evenly covering the entire layer of crackers and butter/sugar mixture.
  • 7. Sprinkle the nuts over the chocolate, and let cool. Cut into squares and enjoy.

CRACKER TOFFEE RECIPE

Cracker Toffee Recipe image

What is tasty, easy to make, and serves as the easiest food gift during the holidays? Cracker Toffee. When saltine crackers came out in 1876, Southerners made sure they worked the soda cracker into a multitude of recipes. Alabama Firecrackers are all over the place during the summer, and many Southerners took a short cut when making toffee during the holidays. A saltine cracker is the perfect base for the chocolate and sugar confection. Of course, no one could actually agree on a name so this dessert has many: Cracker Toffee, Cracker Candy, Pine Bark, Toffee Bark, Faux Toffee, Saltine Sweeties, Fooler Toffee, and Christmas Crack. There are also many ways to make the toffee special by just switching up the ingredients. You can swap out the type of chocolate and/or nuts. How about dark brown sugar, butterscotch morsels, and toffee chips? Give your toffee a holiday touch with crushed candy canes in place of the nuts. All you have to do is maintain the concept and ratios and your toffee will turn out great. Most of the ingredients keep well in the pantry, so you can whip out a tray of this fine candy on short notice

Provided by Sheri Castle

Categories     Desserts

Yield Makes 8 to 12 servings

Number Of Ingredients 5

1 sleeve saltine crackers (about 48)
1 cup (2 sticks) butter
1 cup firmly packed light brown sugar
12 ounces bittersweet chocolate morsels
1/2 cup chopped pecans or other nuts

Steps:

  • Heat the oven to 325°F. Line a rimmed baking sheet with aluminum foil or parchment paper.
  • Arrange the crackers in a single layer on the pan.
  • Cook the butter and brown sugar in a small saucepan over medium-low heat until melted and smooth, stirring slowly. When it begins to bubble, cook for 3 minutes while stirring
  • Pour slowly and evenly over the crackers. The crackers might float a little, but that's fine, just move them back in place with the tip of a knife and make sure all of the crackers are covered in the sugar mixture.
  • Bake 15 minutes. Remove from the oven and sprinkle chocolate morsels evenly over the top. Return to the oven until the chips begin to melt and lose their shape, about 1 minute. Spread the melted chocolate evenly over the surface and sprinkle with pecans.
  • Let stand until nearly set and then chill until firm, at least 2 hours. Break into pieces. Store refrigerated in an airtight container.

  • Preheat the oven to 350°F. Line a rimmed baking sheet with heavy duty aluminum foil, making sure the foil goes up and over the edges, and top with a sheet of parchment paper.
  • Cover the baking sheet with the matzos, cutting and piecing them together as necessary to fill the entire pan.
  • Make the toffee: Combine butter and brown sugar in a medium saucepan. Cook over medium heat, stirring constantly with a whisk, until the mixture comes to a boil. (If it looks like it’s separating, just keep stirring; it will come together.) Once the mixture comes to a boil, continue cooking and stirring for another 3 minutes until foamy and thickened. (Be extra careful -- the toffee will be very hot!) Immediately pour the toffee over the matzos and, using a spatula, spread into an even layer.
  • Put the pan into the oven and bake for 8 to 10 minutes, or until the toffee topping is crackled and bubbling all over. Remove the pan from the oven and place on wire cooling rack on the counter. Immediately scatter the chocolate chips evenly over top. Wait 3 to 5 minutes for the chips to soften, then use an offset spatula to spread the chocolate into an even layer. Sprinkle with the pecans and sea salt. Refrigerate until the chocolate is firm, about 45 minutes. Don't leave it in the fridge too much longer, otherwise it will be hard to cut.

  • Line a half sheet pan or 9X13-inch pan (for thicker toffee) with parchment paper - no need to butter or grease the parchment. Sprinkle chopped nuts in an even layer over the parchment. Set aside. (I like nuts on the bottom of the toffee, but you can skip this step and sprinkle nuts on top of the toffee after the chocolate melts.)
  • In a heavy-bottom 4-quart saucepan on medium-low heat, add the butter, sugar and salt. Cook, stirring, until the butter is melted. Clip a candy thermometer to the side of the pot, if using.
  • Increase heat to medium, and bring the mixture to a steady boil. Stir only occasionally (not constantly) and avoid scraping down the sides of the pan. Stirring too quickly or too often can cause the toffee to separate. Moderate the heat as needed - turn it down if the toffee is boiling or cooking too fast so it doesn't burn.
  • Cook until the toffee registers 285-290 degrees on an instant-read or candy thermometer and is deep amber brown in color, about 20-25 minutes.

  • Preheat oven to 350F. Line a 9 x 13 pan or similar with aluminum foil and spray it very well with cooking spray. Do not try to make this without using foil; you will hate yourself.
  • Place saltine crackers in a single layer on the bottom of the pan. Some recipes suggest using a jelly roll pan which may allow for a slightly bigger batch, i.e. 40 crackers, but it’s a bit too shallow for my comfort zone and didn’t want any bubble-overs.
  • In a saucepan on the stovetop, combine butter and sugar and bring to a boil while stirring constantly.
  • Once a boil is reached, reduce the heat and simmer, uncovered, for 3 to 5 minutes or until mixture has thickened some. Take care not that your simmer is not too fast/too high because it will be prone to bubbling over or scorching. Stir mixture frequently while it simmers to avoid bubbling over or scorching. The taste of burnt butter and sugar is awful so don’t burn it.

  • Preheat oven to 350 degrees F. Line a large baking sheet with a Silpat baking mat, parchment paper, or aluminum foil. If you are using aluminum foil, spray lightly with nonstick cooking spray. Place graham crackers in a single layer, touching, on the large baking sheet. Set aside.
  • In a medium saucepan, melt butter and brown sugar together over medium-high heat. Bring butter and brown sugar mixture to a boil. Simmer for 4 minutes, stirring constantly. Pour mixture evenly over graham crackers. Bake for 8 minutes.
  • Remove the pan from the oven and immediately sprinkle chocolate chips evenly over the top of the graham crackers. Let the chocolate chips sit for 2 minutes so they have a chance to melt. Spread melted chocolate with a knife or rubber spatula. Sprinkle almonds or pecans on top.
  • Let the graham cracker toffee sit for about 2 hours or until the chocolate hardens. If you are in a hurry, you can refrigerate the toffee for an hour, or freeze for 30 minutes. When chocolate is set up, break the toffee into pieces and enjoy!

2019-11-08 Recipe is not quite right. The toffee was overdone (was better with about 3 min boiling). I personally prefer putting the nuts on top of the chocolate, that way it’s easier to spread and I can keep the chocolate layer even. Otherwise having the nuts in the toffee made the chocolate layer too thick in places. Reply . Deb Foerch says: December 26, 2021 at 1:11 pm. …
