This is a chickpea spread that tastes like tuna salad! No kidding! Great served in a sandwich.

1 (19 ounce) can garbanzo beans (chickpeas), drained and mashed
2 tablespoons mayonnaise
2 teaspoons spicy brown mustard
1 tablespoon sweet pickle relish
2 green onions, chopped
salt and pepper to taste

Steps:

  • In a medium bowl, combine garbanzo beans, mayonnaise, mustard, relish, chopped green onions, salt and pepper. Mix well.

MOCK HUMMUS BI TAHINI (CHICKPEA & SESAME SEED PASTE)



Mock Hummus Bi Tahini (Chickpea & Sesame Seed Paste) image

An adaptation of the famous Middle Eastern favorite called "hummus bi tahini". This is a more convenient and quick, yet equally tasty, garlicky, pureed vegetarian dip served as an hors d'oeuvres eaten with pocket bread or diced tomatoes. This American adaptation seems to work well by making it with a food processor and substituting peanut butter for the traditional sesame seed paste. The flavor comes out a little bit different but it is still equally tasty and for the average shopper, easier and cheaper to make.

2 (10 1/2 ounce) cans garbanzo beans
2 -3 tablespoons smooth not chunky all natural-style peanut butter (no sugar added)
1/2 cup lemon juice (or to taste)
2 -3 large garlic cloves (to taste)
2/3 cup dark green extra virgin olive oil
salt

Steps:

  • In a food processor, finely chop the garlic cloves. While processor is running, through the lid, gradually add 3 tablespoons of the olive oil to the garlic and mix garlic into the oil. Stop food processor. Open lid and add the peanut butter. Close and start processor. Beat until peanut butter, oil and garlic start to mix. While processor still running, gradually add through the lid the lemon juice homogenizing it into the peanut butter mixture. Stop processor.
  • Open garbanzo beans. Drain liquid off the garbanzos but retain a few tablespoons of the liquid and set aside.
  • Open lid and add the garbanzos to the peanut butter mixture. Close processor lid and start processor.
  • Puree the garbanzos homogenizing them into the peanut butter mixture with the food processor running. Only if it is too thick, add, a tablespoon at a time, some of the retained garbanzo liquid until the hummus is a smooth, thick texture. You don't want it too soupy.
  • As processor is still running add salt.
  • Stop processor and test the hummus for proper balance of lemon juice, olive oil, garlic and salt. The tanginess should balance with the flavor of the peanut butter and garbanzo. Adjust to taste. One note: be careful with the lemon juice. It quickly overwhelms the other flavors if you're not careful.
  • To serve, spread hummus into a shallow serving dish and pour remaining olive oil over the top and swirl it backward gently with a spoon to spread it over the surface of the hummus.
  • Garnish as desired. Traditionally, in addition to the olive oil poured over the top of the finished hummus other garnishes are sometimes added over the top of oil. Example of some finishing garnishes are finely chopped parsley and/or paprika.
  • Also, often for color, and because they taste good with hummus, tomato wedges are placed around the edge of the hummus, inside the serving bowl (on top of hummus around rim of dish).
  • It is eaten usually dipping pocket bread into the hummus.

Tahini is either too expensive, unavailable where you live or you don't have the time to make it from scratch... Although I always prefer the real deal, there have been a few times that I've run out of tahini and had to use this emergency substitute.

1/2 cup brown sesame seeds, either toasted (white sesame seeds will do in a pinch) or 1/2 cup untoasted sesame seeds (white sesame seeds will do in a pinch)
2 -3 tablespoons regular sesame oil
1/2 teaspoon toasted sesame oil (the toasted sesame oil will give the sesame seeds "depth", especially if you choose not to toast)

Steps:

  • If you have the time, lightly toast the sesame seeds and allow to cool then proceed. If pressed for time, bypass the toasting.
  • In food processor or blender combine all *ingredients and blend until relatively smooth. Add more oil if necessary to aid in blending. There definitely will be whole seeds remaining no matter how well you blend, and that's okay.
  • Mixture will be very oily and not very smooth. (Remember, this is an emergency!) ;).
  • If time permits, allow tahini to set for 30 minutes.
  • NOTE: If you don't have any time available to toast or blend the seeds then omit those steps and add the whole seeds and oil directly into your recipe, depending of course on what you are preparing. It's a judgment call.
  • Very important to be sure your sesame seeds are fresh before starting this recipe! If not, your tahini will taste rancid. ALWAYS keep sesame seeds refrigerated!
  • Refrigerate any leftover tahini.
  • *Bear in mind that my measurements are approximated. Adjust amounts accordingly.

  • Add all of the ingredients, except the cornstarch, to a small pot and whisk until completely mixed. Now, whisk in the cornstarch until it's 100% incorporated and there are no lumps.
  • Turn the heat to medium-low. Once it starts to bubble well around the edges, whisk continually around the edges and within the pot for 2-3 minutes until it has thickened to a creamy dressing consistency. You do not want to walk away, you need to whisk the 2 minutes because it will thicken quickly. Don't cook too long, as it will just get thicker and thicker and keep in mind, it will thicken more in the fridge.
  • Remove from the heat, whisk well and pour into a glass jar and store covered in the fridge overnight. It will not have the final amazing flavor until after it sits and chills overnight, so judge it the next day! Trust me on this. Hot tahini sour dressing does not taste good, but chilled and marinated overnight, does. After it has chilled 24 hours, taste and if you want it sweeter, saltier or more sour, feel free to adjust with more salt, lemon juice or syrup. It will get thick overnight, so if necessary add a touch more water or lemon juice. I added just a bit more lemon juice. Enjoy over salads, potatoes, veggie bowls or even my Falafel!
