This recipe is from the Ruthven, Iowa United Methodist Cookbook, contributed by the late Irene Samek (dietician, minister's wife). As president of the United Methodist Women, I believe I can give permission to print this. We re-issued the cookbook last year and would appreciate the mention!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl combine eggs, brown sugar, and white sugar. Beat well. Stir in vanilla extract and melted butter or margarine. Mix thoroughly. Fold in oats and coconut. Pour into pie shell.
- Bake in preheated oven for 30 minutes. Cool before serving. Top with whipped cream if desired.

- In a bowl, beat together the sugar, butter, vanilla and eggs. Stir in beans. Pour into pie shell. , Bake at 350° for 45-50 minutes or until a knife inserted in the center comes out clean. Serve warm or chilled with whipped cream or ice cream.

AMISH MOCK PECAN PIE
Amish Mock Pecan Pie has all the flavors of a traditional pecan pie, but it uses oats in place of pecans!

Steps:
- Preheat the oven to 350 degrees F.
- Unroll the pie crust and place in a greased and floured pie pan.
- Flute edges.
- In a medium mixing bowl, combine melted butter, sugar and eggs.
- Add corn syrup, and oats and combine.
- Pour into pie shell and bake for 1 hour until thickened inside and golden brown on top.
- Let cool completely on a wire rack. Serve at room temperature.

- 1. PREHEAT OVEN TO 350 DEGREES F.Mix flour with sugar in a medium size bowl. Then add eggs, & salt to sugar mixture and beat till mixed. Pour in melted butter and beat again.
- 2. Spray measuring cup with non stick cooking spray. Add corn syrup, pour into egg mixture and beat until blended.
- 3. Stir in oats. Whisk together to blend, and pour into unbaked pie crust.
- 4. Bake in pre heated 350 degree F. oven for 50 minutes to one hour., or until knife inserted half way between outside and center of filling comes out clean. Cool completely before slicing. Top with a dollop of cool whip or a scoop of your favorite ice cream and serve.
- 5. Note: You can also use crushed pretzels in this recipe, what ever you have on hand, either will be chewy , and look like the real thing. Enjoy
CLASSIC PECAN PIE BARS
Steps:
- Heat oven to 350°F.
- Combine 1 3/4 cups flour, butter and sugar in bowl. Beat at medium speed, scraping bowl often, until mixture resembles coarse crumbs. Stir in 1/3 cup pecans.
- Press crust mixture evenly onto bottom of ungreased 13x9-inch baking pan. Bake 18-22 minutes or until edges are very light golden brown.
- Combine brown sugar, 6 tablespoons flour, and salt in large bowl; whisk until mixed. Add corn syrup, eggs and vanilla; mix well. Stir in 1 1/2 cups chopped pecans. Spread evenly over hot, partially baked crust. Bake 30-35 minutes or until filling is set and knife inserted 1-inch from edge comes out clean.
- Cool completely. Refrigerate 30 minutes. Cut into bars.

RITZ CRACKER PECAN PIE-MOCK PECAN PIE
Steps:
- Gather the ingredients.
- Preheat the oven to 325 F. Butter a 9-inch pie plate.
- Mix together the Ritz cracker crumbs and baking powder.
- Beat the egg whites until stiff, then very slowly add the sugar, continuing to beat. Add the vanilla and blend thoroughly.
- Fold the egg whites and cracker crumbs together. Spread the filling mixture in the prepared 9-inch pie plate. Arrange the pecans over the top of the pie filling.
- Bake in the preheated oven for 30 minutes.
- Remove from the oven and sprinkle the pie with the grated chocolate.
- Place it back in the oven (or under the broiler) for just long enough to melt the chocolate. If you place it under the broiler, watch it closely so that the chocolate melts but does not burn.
- Serve with ice cream or whipped cream, as desired.
