MOZZARELLA STICKS
At the request of my lovely 12 year old daughter, I am posting these, one of her favorite foods. We searched for a recipe together and ended up adapting one to suit our tastes. Enjoy!

Steps:
- Whisk eggs and milk together.
- Coat each piece of cheese with flour, then dip in egg and then roll in bread crumbs.
- Dip in egg and crumbs again.
- Freeze before frying.
- Heat oil in skillet and cook sticks for about a minute on each side, or until golden and before cheese starts to leak.
- Drain on paper towels.
- Serve with sauce for dipping.

MOZZARELLA STICKS

Steps:
- Stir the bread crumbs, 1 cup of Parmesan and 1 teaspoon of salt in a medium bowl to blend. Dip the cheese in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the cheese in the bread crumb mixture, patting to adhere and coat completely. Place the cheese sticks on a baking sheet. Repeat dipping the cheese sticks in the egg and bread crumb mixture to coat a second time. Cover and freeze until frozen, about 2 hours and up to 2 days.
- Heat the oil in a large frying pan over medium heat. Working in batches, fry the cheese until golden brown, about 1 minute per side. Transfer the fried cheese to plates. Sprinkle with the remaining cheese and serve with the Marinara Sauce.
- In a large casserole pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaf. Season the sauce with more salt and pepper, to taste. (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)
HAM AND MOZZARELLA STICKS
I think this came from one of my Paula Deen recipes. My grandchildren love these but so does everyone that tries them.

- Preheat oven to 350. Line a baking sheet with parchment paper: set aside.
- Wrap each string cheese stick in 2 slices of ham, being sure to secure ends.
- Unroll phyllo dough. Brush 1 sheet evenly with melted butter. Top with a second sheet of phyllo, brushing evenly with butter. Roll prepared cheese in butter phyllo sheets, being sure to secure tightly.
- Brush tops and sides with melted butter. Tear 1 phyllo sheet into strips, and layer strips onto buttered sticks. Repeat procedure with remaining prepared cheese stick, ham, phyllo, and butter.
- Place on prepared baking sheet, and bake for 20 minutes, or until lightly browned.
BETTER-THAN-STOREBOUGHT MOZZARELLA STICKS
You'll never buy frozen mozzarella sticks again! These are easy and absolute delicious with none of the unhealthy additives of the commercial kind. I serve these with my own Angie's Bella Marinara sauce (with the spices punched up a little), but these would also be good with a creamy ranch-style dip. Vary the herbs in the breading if you like, but I like this combination with the marinara sauce.

- In a small bowl, combine egg and water.
- In a separate bowl, combine bread crumbs, garlic salt, oregano and basil.
- In a third bowl, combine flour and cornstarch.
- In a large heavy saucepan, heat oil to 375 degrees F.
- Moisten each mozzarella stick half in the egg mixture, then dip each one in the bread crumbs and finally the flour mixture.
- Repeat this 3-step process.
- By now your fingers are going to be a total mess; just hang in there, it's sooooo worth it!
- Carefully place breaded mozzarella sticks in the hot oil; don't overcrowd (only about 4 at a time).
- Fry until golden brown, about 30 seconds.
- Remove from oil with a slotted spoon or tongs and drain on paper towels.

I got this one off the back of a package of string cheese. It's simple and delicious! Eat it fresh, or the cheese will harden.

MOCK MOZZARELLA STICKS
This is something I used to make for my picky boys when they were very small and wouldn't eat anything I made! This was always gobbled up though! They still love it now that they are a little older and it's great food for sleepovers or anytime there are lots of kids around! (I love it too)!

- Spread bread with butter and place in heated frying pan.
- Top with sliced mozzarella cheese and place another slice of buttered bread over top just like a grilled cheese sandwich.
- Continue with rest of sandwiches.
- When sandwiches are done, slice lengthwise into 4"fingers" each and serve with pizza sauce for dipping.

My children always want cheese sticks when we go out to eat, so we came up with a quick and simple rendition of our own for home.

Steps:
- Mix garlic powder and Italian seasoning in a little dish.
- Place an egg roll wrapper on your work surface with a point facing you.
- Place a piece of cheese near the bottom corner.
- Sprinkle a pinch of seasoning mix over cheese stick and wrapper.
- Fold bottom corner of wrapper over cheese; roll up just until cheese is enclosed.
- Fold sides of wrapper over top.
- Using a pastry brush or your finger, wet the top corner of the wrapper with water.
- Roll up tightly to seal.
- Repeat with remaining wrappers and cheese sticks.
- In a large skillet heat oil to 375 degrees.
- Fry sticks a few at a time for 1 minute, or until golden; turning occasionally.
- Serve warm with marinara sauce.
