WHITE CASTLE SLIDERS COPYCAT RECIPE

- In a large bowl mix the ground beef, Lipton onion soup mix, peanut butter, and milk.
- Spread the meat mixture on a cookie sheet. Use a rolling pin to roll over the meat to smooth it out. Bake at 350 degrees for about 10 minutes. The meat will shrink. Take it out of the oven and put the diced onions all around the edges, this will give the meat a great flavor, and bake for 15 more minutes.
- Remove from oven, then spoon the onions from the edges all over the top of the meat and layer with cheese slices. Bake another 7-10 minutes (until cheese is melted).
- Remove from oven and add the tops of the rolls (the bottom part of the rolls will just sit on the counter) and place back in the oven for about 5 more minutes.
- Take it out of the oven. Slice the meat with a pizza cutter and pick up the slider/top bun with a spatula and set it on the bottom bun.

THEY COULD BE SLIDERS (IF EATEN WITH EYES CLOSED) - WHITE CASTLE
A slightly "mock" rendition of White Castles sliders, but we think only better. Great "kid" sized burgers or even better for "adult" sized snacks! NOTE: since posting this recipe I have found out that Pepperidge Farm no longer makes the small rolls in the pans so therefore use your own disgression on which rolls are available to you but I do suggest that you use a small size like a dinner roll in order to get the full "White Castle" affect!

- Stir in cheese, soup and onion, til cheese melts.
- Cut buns in half.
- Spread burger mixture on buns.
- Wrap in foil.
- Bake 350 for 15-20 minutes.
- Open from foil and top each with pickle slice.

MOCK HAMBURGERS
This is a money saving recipe from Grandma Margaret that was featured in Woman's World magazine, 7/19/10 issue which hit the stands this week-end. The description said they are crisp and crusty on the outside and moist on the inside. I am posting the recipe here for safe keeping as I haven't yet made it.

Steps:
- In a large bowl, add the mashed beans, breadcrumbs, eggs, onion, ketchup, Worcestershire sauce, garlic powder and pepper.
- Mix together all above ingredients .
- Shape into 6 (3/4-inch) patties.
- Heat 2 tablespoons oil in large heavy skillet over medium heat.
- Add 3 patties; cook, turning them once, about 5 minutes per side, until browned on both sides and cooked though. Remove and reserve on plate.
- Repeat with remaining 2 tablespoons oil and remaining patties.
- Place patties on buns with lettuce and tomato. If desired serve with ketchup or mustard.

MOCK SWISS STEAK
This is a variation of Swiss Steak using hamburger. I made a Swiss steak recipe with both chuck steak and hamburger since that's what was in the freezer. The hamburger part actually turned out better. Give it a try.

Steps:
- Preheat oven to 325.
- Form beef into 4 large round patties. (It's fine to use frozen.).
- Heat oil in a Dutch oven on top of the stove.
- Brown the patties on both sides and then remove from the pan. You may need to do this in two batches.
- Add the onion and cook about 5 minute.
- Add the garlic and thyme and cook another minute.
- Add the tomato paste and flour and cook another minute.
- Stir in the canned tomatoes, chicken broth and parsley and bring to a boil.
- Put the browned beef patties back into the pan and cover.
- Put in the oven and bake until beef is cooked through. This will be about 2 hours for fresh hamburger or 3-4 hours if it was frozen.

ALMOST WHITE CASTLE HAMBURGERS
These are really close to the real thing. My family was in heaven! They're great for dinner, football parties, or kid's birthday parties. I'm not real fond of White Castle myself but I gobbled these up. Note: To freeze: Assemble hamburgers less the condiments. Flash freeze, wrap in plastic wrap, put in a ziplock bag and label. To heat: Microwave until heated through.

- Preheat oven to 400°F.
- Hamburgers: Mix first 6 ingredients and press into an ungreased 10 by 15 inch jelly roll pan.
- Prick with a fork.
- Bake for 10 minutes.
- Drain off juices (if there's a lot of excess).
- Cool.
- Cut into 24 squares.
- Place squares on dinner rolls.
- Combine mustard and ketchup and spread on rolls.
- Top with pickles and cheese, if desired.

ALMOST WHITE CASTLE® HAMBURGERS

- Preheat oven to 400 degrees F (200 degrees C).
- Combine ground chuck, bread crumbs, egg, onion soup mix, water, and black pepper in a bowl; press into a 10x15-inch jelly roll pan. Prick holes through the chuck mixture for ventilation while cooking.
- Bake in the preheated oven until browned and cooked through, about 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Drain excess grease.
- Cut chuck mixture into squares the size of the rolls. Place 1 chuck patty in each roll.

Steps:
- Mix the dried onion with the boiling water and let sit until re hydrated and no longer dry & crunchy.
- Roll ground beef into a ball and press flat on waxed paper until about 1/8 inch thick.
- Brown faces of bun in a dry frying pan over medium heat. Remove bun and cook burger in the same pan for 2 min per side, salting each side lightly during cooking.
- On the top bun-half spread the ketchup, mustard, and onion, in the order, and top with the pickle slice.
- put the beef patty on the bottom bun and quickly slap the top and bottom together. Microwave the burger on high for 10-15 seconds. FOR CHEESEBURGERS: follow the above recipe, but add a slice of American cheese on top of the beef patty in the final assembly. Microwave for 15 seconds on high to help steam the bun and simulate being wrapped in paper.
