2 teaspoons onion salt
1 teaspoon chili powder
1 teaspoon black pepper
1/2 teaspoon celery salt

1 1/2 cups Gold Medal™ all-purpose flour
1 tablespoon brown sugar
1 tablespoon kosher salt
1 whole chicken (2 breasts, 2 thighs, 2 drumsticks, 2 wings)
1 egg white
2 quarts neutral oil, for frying

Steps:

  • Preheat fryer to 350°F. Thoroughly mix together all spices.
  • Combine spices with flour, brown sugar and salt.
  • Dip chicken pieces in egg white to lightly coat them, then transfer to flour mixture. Turn a few times and make sure the flour mix is really stuck to the chicken. Repeat with all the chicken pieces.
  • Let chicken pieces rest for 5 minutes so crust has a chance to dry a bit.
  • Fry chicken in batches. Breasts and wings should take 12-14 minutes, and legs and thighs will need a few more minutes. Chicken pieces are done when a meat thermometer inserted into the thickest part reads 165°F.
  • Let chicken drain on a few paper towels when it comes out of the fryer. Serve hot.

Everyone loves Popeye's and their fried chicken. What if I tell you that you can make the exact Popeye's fried chicken at your home. In this post, I am going to show you how you can do it.

1 pound Whole Chicken
3 cups Whole Buttermilk
3 tablespoons Hot Sauce
⅓ cup Water
3 large Eggs
2 ½ tablespoons Kosher Salt
4 cups All-Purpose Flour
2 teaspoons Paprika
2 teaspoons Black Pepper
3 teaspoons Cayenne Pepper
1 ½ teaspoons Garlic Powder
2 tablespoons Peanut Oil (for frying)

Steps:

  • Take a large bowl. Stir buttermilk and 2 tablespoons of hot sauce (Tabasco) in the bowl.
  • Marinate chicken in buttermilk mixture. Cover and refrigerate it overnight.
  • Now, take a medium bowl and whisk together eggs, water and 1 tablespoon hot sauce.
  • Take another large bowl and stir together flour, salt, black pepper, cayenne pepper, paprika and garlic powder.
  • To fry the chicken, take a large Dutch oven and pour oil to a depth of 2 1/2 inches.
  • Heat the oil to 325°F and remove the chicken from buttermilk.
  • Dip those chicken pieces in the egg mixture and then dredge in the flour mixture.
  • Shake off the excess flour and repeat the above step 7 once again (dipping chicken in flour and dredging in flour mixture).
  • Fry 4 pieces at a time for 8 to 10 minutes or until golden brown.
  • Soak excess oil on paper towels.

1 teaspoon mixed herbs
1 tablespoon grated cheese ((optional))

Steps:

  • Peel tomato and chop. Set aside.
  • Add finely chopped onion to a frying pan and cook until clear.
  • Add butter and tomato to pan and cook well.
  • Beat egg and add to mixture along with herbs. Cook and stir in salt and pepper to taste.
  • Blend a little with a stick blender or chopper if desired to achieve a finer texture or serve as is.
  • Serve cool.

1 cup buttermilk
1 large egg
1 chicken (, cut into 10 pieces (2 wings, 2 legs, 2 thighs and 2 breasts each cut in half to make 4 breast pieces))
vegetable oil for frying

Steps:

  • Add the spices to a small food processor until they're all uniform in size and the thyme, basil and oregano aren't larger in size anymore.
  • Add the flour in a bowl with all the herbs and spices and mix with a whisk.
  • In a second larger bowl add the buttermilk and egg together and whisk until combined.
  • Add the chicken to the buttermilk mixture for 20-30 minutes.
  • Remove chicken from the buttermilk soak and let any excess buttermilk drip off.
  • Dredge the chicken pieces in the flour mixture on all sides, then shake off the excess coating.
  • Let it rest on a cookie sheet for 20-30 minutes.
  • Add oil to a deep fryer or a large pot that is at least 5 inches high so that the chicken can be fully submerged.
  • Heat the oil to 350 degrees and fry in small batches for 15-18 minutes.
  • Remove the chicken from the oil and add to a drying rack on top of a clean cookie sheet.
  • If you add it to a paper towel or newspaper the bottom of the chicken will steam from the heat and become soft.

6 c self rising flour
2 c cornstarch
6 Tbsp season salt
4 Tbsp paperika
2 tsp baking soda

2 pkg speghetti sauce mix
2 pkg italian salad dressing dry mix
6 c corn flakes(slightly crunched)

  • 1. mix together your eggs and water in a med glass mixing bowl. beat eggs and water well set aside.
  • 2. put your corn flakes into a second large mixing bowl set aside.
  • 3. put enough corn or conola oil in a large heavy skillet to cover bottom about 1inch. heat on med/high temp.
  • 4. prepare two large baking sheets. 9x12x2 by greasing lightly set aside pre heat oven to 350degrees. you will need enough tin foil to cover both pans tightly on three sides and loosly on oneside.(to allow steam to excape)
  • 5. in third large glass mixing bowl mix in the following, flour,cornstarch,season salt,paprika,baking soda,dressing,soup,sauce mixes and sugar. mix well with wire wisk after each addition.
  • 6. LETS GET TO DIPPING AND DREDGING: set up your bowls as follows: bowl one=flour mixture,bowl two=eggs/water,bowl three=corn flakes. dip each piece of chicken in the following order 1,2,3, then again in bowl one quickly but lightly as to not knock off the corn flakes.
  • 7. place each piece of chicken skin side down in frying pan. browning on both sides. remove to baking sheet, placing chicken skin side up at this point. cover with tin foil tightly on three sides and loosly on one to allow for steam to escape. bake for 35-45 minutes check to see for chicken tenderness.remove tin foil and allow to remain cooking for a additional 5 minuts to crisp up the coating.

  • Remove the chicken from the buttermilk mixture, letting the excess drip off. Roll the chicken in the seasoned flour until completely covered.
  • Add the lard to a Dutch oven or pressure fryer and heat to 365 F. Be sure to follow the manufacturer's directions if using a pressure fryer.
  • Using a utensil, lower 4 pieces of the chicken into the hot oil, and if using a pressure fryer, lock the lid in place. Be careful not to burn yourself with the hot oil.
  • Allow to fry for 8 to 10 minutes, until the chicken turns golden brown and thoroughly cooks.
  • If using a pressure fryer, release the pressure according to the manufacturer's directions. Then, remove the finished chicken to paper towels or a metal rack to drain.
  • Repeat with the remaining 2 pieces of chicken.
  • Serve and enjoy.

1/2 c low fat mayonnaise
2 c italian bread crumbs
3 Tbsp grated or shredded parmesan cheese
salt and garlic powder

Steps:

  • 1. Put salt and garlic powder on chicken breasts. Mix bread crumbs and parmesan cheese together in separate dish.
  • 2. Brush both sides of each chicken breast with mayonnaise. Dredge chicken breast in bread crumb/parmesan cheese mixture.
  • 3. Place chicken breast on broiler pan. Bake in 400 degree oven for 45 minutes to 1 hour until chicken is done.

Recipe video included. ***Nutrition info should be lower than noted as this currently represents using all ingredients, BUT not all fat from chicken and butter is eaten as it renders and butter "frys" chicken and remains on bottom of baking pan.

4-5 lbs chicken ((See Note 1))
1 cup buttermilk
1 cup all purpose flour
1 cup Panko breadcrumbs
4 tbsp butter (melted)
2 tsp white pepper
1 tsp celery salt
1 tsp Italian seasoning
1 tsp salt
1 tsp garlic powder
1 tsp black pepper
1 tsp dried mustard
1 tsp paprika
1 tsp ground ginger
1/2 tsp baking powder
1/4 tsp turmeric

Steps:

  • Place the chicken parts with the skin on in a plastic bag and pour the buttermilk in to coat. Squeeze the air out of the bag and seal. Massage the chicken and buttermilk with your hands to coat evenly and allow to marinate in the refrigerator for 30 minutes minimum up to several hours.
  • Preheat your oven to 425°F. In a medium sized bowl using a whisk, mix together the flour, Panko, baking powder and 11 herbs and spices. Set aside.
  • Place a 13x9" baking dish in the oven to get hot for at least 15 minutes (See Note 2). While pan is heating up remove the chicken from the buttermilk, shaking off excess, and dredge in the seasoned flour mixture (See Note 3), coating on all sides with one hand.
  • Add the melted butter to the heated baking dish and arrange the chicken pieces on top with plenty of room on each side so they "fry" not "steam".
  • Bake for 12 minutes, uncovered. Turn the chicken pieces over and bake another 12 minutes or until internal temperature reads 165°F depending on the size of your chicken. (See Note 4) Remove from oven and allow to rest 5 minutes and then serve.

My mother made these for us four girls. Money was tight and she couldn't afford steak very often. These use ground beef. I use a 80/20 lean to fat. You can use ground round but it tends to be a little too dry. This is great with mashed potatoes. Everyone I have ever made it for loved it. The first time my DH had it he never knew it was ground beef. He just commented on the tenderness of the steak!

1 lb ground beef
2 eggs, beaten
2 cups all-purpose flour
1/4 teaspoon seasoning salt
1/2 teaspoon black pepper
1/4 cup oil or 1/4 cup lard (for frying)
4 tablespoons of dredging flour
4 tablespoons cooking fat
1/4 teaspoon salt
1/2 teaspoon black pepper, depending on taste
3 cups milk

Steps:

  • Mix 2 cups flour with salt and pepper.
  • Shape ground beef into four thin patties.
  • Dip patties into flour, then beaten egg, then flour again.
  • Put shortening, oil or lard into a heavy skillet over medium high heat.
  • When a little flour sprinkled into skillet begins to sizzle, add patties.
  • Cook for about 5 minutes per side.
  • Remove and drain on paper towels.
  • To make gravy:.
  • Remove all but four tablespoons of fat from skillet.
  • Stir in 4 tablespoons of dredging flour and 1/4 teaspoon salt.
  • Stir, scraping up browned bits, for about one minute till light brown.
  • Whisk in milk gradually.
  • Whisk until thick and bubbly.
  • Remove from heat.
  • Add 1/2 teaspoon black pepper or to taste.
  • Stir well.

VEGAN FRIED "CHICKEN"



Vegan Fried

Vegan fried chicken, super crispy, super meaty - the best you'll taste!

1 400g can chickpeas, (including their water)
35 ml water
1 tbsp bouillon powder
1 tbsp white wine vinegar
2 tsp onion powder
1 tsp garlic powder
50 g silken tofu
200 g vital wheat gluten
4 tbsp gram flour
200 ml plant milk
1 tsp cider vinegar
1/2 tsp sriracha
300 g plain white flour
3 tbsp corn flour
2 tsp fine sea salt
2 tsp old bay seasoning, (If you can't get hold of old bay, here's how to make your own)
1/2 tsp ground black pepper
vegetable oil, (for frying)

Steps:

  • In the cup of a high speed blender, combine the chickpeas (including their soaking water), the water, bouillon powder, white wine vinegar, onion powder, garlic powder and silken tofu. Blend until very smooth.
  • In the bowl of a stand mixer, fitted with the dough hook, combine the vital wheat gluten and the blended liquid. Knead on medium speed with the dough hook for no less that 5 minutes. The seitan dough should be smooth and stretchy.
  • Cover the mixing bowl and leave to rest for ten minutes.
  • Once rested, remove the dough from the mixer and slice into three even sized pieces. Return two of the pieces to the covered bowl. Take the one piece of dough and slice it into six separate pieces (don't worry if they're all different sizes - just roughly the same is fine).
  • Lay out a piece of baking parchment and take one of the small pieces of dough. Place the dough on the left hand side of the baking parchment, then fold over to cover the dough. With a rolling pin, roll out the dough as thinly as you can. Unfold the parchment and peel off the thin piece of seitan. Stretch it out with your fingers and place it flat on a plate. Brush it very lightly with vegetable oil.
  • Repeat the process with the next piece of dough - roll it out very thinly then remove from the parchment. Stretch it out with your fingertips and place it in top of the first piece, pushing down lightly with the flat of your hand to remove any air bubbles between the two pieces of seitan. Brush the top piece lightly with oil then repeat the process with the remaining small pieces of dough.
  • Once all six small pieces of dough are layered, stretch the top piece of dough down and over the other layers to envelop them and tuck under the bottom layer. Place the layered piece of seitan on a new large piece of baking parchment and fold it up tightly. Wrap tightly with tin foil and set aside.
  • Repeat the process with the other two large pieces of dough.
  • Bring a steamer to the boil and place all three pieces of seitan in the steamer. Steam for a total of 90 minutes, flipping and moving the pieces around half way.
  • Once the seitan is steamed, carefully remove it from the steamer and allow it to cool to room temperature (20 minutes) before placing in the fridge for at least an hour. Do not unwrap.
  • Once cooled fully, unwrap the seitan and tear apart into whatever size shreds you'd like. (If you're planning to make fried chicken, I'd suggest keeping the shreds quite large. If you're using in a curry, I'd go a bit smaller).
  • Keep sealed in the fridge for up to a week or in the freezer for 2 months.
  • Take the pieces of shredded chicken out of the fridge.
  • In one medium bowl, combine the gram flour, plant milk, cider vinegar and sriracha. Whisk well to combine. This is your egg mixture.
  • In another medium bowl, combine all the spiced flour mixture ingredients. Mix to combine.
  • Place a medium, high sided frying pan over a medium heat or turn on a deep fat fryer. Bring the oil to 170c.
  • Assigning your left hand to the egg mix and your right hand to the spiced flour, dunk a piece of chicken in the flour and toss to coat. Then, with your right hand, place the floured chicken in the egg mixture. Use your left hand to coat the chicken and then pick it up and place back in the flour. Very carefully coat for a second time in the flour mixture then place carefully in the hot oil.
  • Fry the chicken piece for around 2-4 minutes or until completely golden brown. Using a spider or a slotted spoon, remove the chicken from the fryer and place on a few pieces of kitchen towel to drain. Repeat the process with the remaining chicken.
  • Serve while hot!
